    Loved that you used smoked Paprika. I just made this with the original ingredients plus I added some smoked Paprika, taco seasoning and a lot more onions/red bell-pepper for my 5lbs of corn. I tasted the mix before I jarred it and it was good. Now, in they go to the canner.

    I have been wanting to get a Nesco pressure canner. Does it work like it’s supposed to? Are there any issues that I should know about before purchasing? Btw, I forgot to mention I have water bathed canned before but never pressure canned.

      I love it, and I think it works well. BTW, the Nesco and the Carey are the same canner, so I recommend getting whichever one is the best price at the time. Here are my Amazon links for each of them:

      Right now, the Carey is slightly cheaper.
      Pressure canning can seem scary at first, but it really isn't, as long as you follow the instructions. For instance, with the Nesco/Carey, there are two different pressure valves. The black one is for people who live at an elevation of 1000 feet or less, and the green one is for over 1,000 feet. So it's little things like that to pay attention to, but it's not hard.
      Pressure canning will open up a whole new world for you, so I think it's well worth it!
