That soup looks delicious! I stopped canning meats because they were tough and tasteless. If your par-cooked chicken method is flavorful and tender, I will try again. Great video.
Thanks for your kind words. I recommend trying this method with a small amount, to see if you like it before canning more. I definitely prefer canning chicken this way compared to the raw pack method, but everyone has different preferences.

Our Nesco canner has paid for itself with the food we were able to save and can just from leftovers and small batches like your 4 quart load or pint loads we often can up.
I haven't gotten into canning leftovers yet, but very frequently can small batches using ingredients that were on sale. I especially look for meat on sale, figure out what I want to can with that specific meat, and buy any additional ingredients I need. I figure if I manage to get the meat on sale, that's the biggest cost savings. I have also canned fruit, such as Cuties, when they are on sale.
Yes! Though you thicken it after you open the jar, when you're going to serve it. It has a lot of garlic in it. Create a roux, pour in broth, and stir and cook until it thickens. Then add the chicken and mushrooms and heat through. It's really tasty!

You could always freeze whatever is leftover in ice trays and then bag them after frozen. I believe one ice cube is a tbsp but not definitely sure.
