    Those out there, I prepared the pork skin ahead of time( like yesterday or early before frying the chili because t it take a lot of time to chop that fine. They will stick together, before you need to use it just resoak it and drain.) and I like to added cook shrimp paste to if you like it a little stronger.

    1lb pork skin
    5lbs shallots
    2 cups galangal
    5lbs garlic
    2 bags of 12oz chili de arbol
    20 kaffir lime leaves
    1/2 cup peppercorn ?
    1 cup sugar
    1/2 cup MSG
    1/2 cup Salt
    1/2 cup fish sauce
    Is this correct? I’m not too sure about the measurements with the galangal and I’m not sure if what you’re using is peppercorn? Does this solidify? Thanks.

    Try carmelized the sugar you'll taste the difference. I also used palm sugar.

    i think i recognize almost everything. garlic, shallots, galanga, kaffir lime leaves? what's in the baggie? pork skin, dried chili, sugar (or palm sugar?), msg, fish sauce, salt.
    can anyone please tell me what's in the baggie?? is it peppercorns? and is she frying the chili in oil?

      8. Sugar

      11. Fish sauce
      And yes, she is frying the chili in with half cup oil 😊

      @@sahmommamang thank you lovely! also, does she by any chance say how long to boil the pork skin?? i'm going to be trying to make a combination of this recipe and another tomorrow and i don't want to mess up the skin. also, do you know if i can freeze the boiled pork skin, cut it up and save it for later? thank you so much!

      Angelica Just boil until tender! But she didn’t mention anything about freezing and use it for later, but I don’t see why not. It’s cooked already, so just throw it in the freezer and when needed, just thaw and you have cooked pork skin for using 😊

      5 lb peeled garlic
      5 lb shallots
      1 stick fresh young galangal
      Curry leaves
      2 tablespoon Sichuan peppercorn
      Pork skin
      340 gram Chile de arbol entero x2
      Sugar
      Msg
      Fish sauce
      Salt
      Boil pork skin until soft, slice thinly
      Slice shallot and galangal thinly and dry roast with garlic
      Half cup oil and slowly roast pepper
      Dry roast curry leaves and txiv siav
      Combine all ingredients in blender except pork skin
      Mixing:
      Add pork skin
      Add 1/2 cup fish sauce
      1 cup sugar
      1/2 cup msg
      1/2 cup salt
