    the comment you guys made about the work being too shiny it's because the wok is nicely seasoned like a cast-iron skillet. The one that I use was my gramps and it's over 30 years old and extremely well seasoned and glows when I use it. there's just a style to Asian style cooking that you have to see in action to appreciate.

    • @haiway85
      @haiway85 2 роки тому

      sorry for the late comment. yeah, we like to put thin oil around it after wash to preserve it.

    • @thenarrator1921
      @thenarrator1921 2 роки тому

      Additional info: metallic pores open up when heated up, when woks are seasoned with oil, the oil is trapped within those pores and cannot be removed unless the wok is heated up again. Some of it will be 'released' on the next cooking session but over time the wok will accrue layers of oil in its pores and will eventually shine, creating a permanent non-stick layer- it's also why it's important to coat it with a neutral oil. Wok Hay's slight taste that it imparts to food will also be changing with time and non-neutral oils for seasoning just becomes rancid.
      Oils like olive oil might be okay for cast iron skillets because you season it after every wash, not before cooking and doesn't accumulate that much as with woks.

    Fried rice properly done, each grain is separated from all the others, so a fork is a little impractical. Fresh steamed rice, you could eat with a fork with little trouble.

    So, I can definitely vouch for the chicken rice. I never cook rice with plain water, only chicken stock. Makes a world of difference regarding flavor.
    Only thing I do slightly different with my fried rice is season the rice before adding the soy sauce and I also cook the eggs last because I like 'em soft and fluffy.
    Anyway, another awesome reaction, you guys! Next, you should react to the Aussie egg fried rice video Uncle Roger reacts to.

    The fork did not come from the European, the earliest known use of the fork is from Ancient Persia. Before the invasion of the Moors the Europeans would eat meat with their hands or by spearing it with a knife. Totally true, research it.

    11:17 Measurements are to keep dishes consistent.
    You go to a restaurant. You order a dish. You love it. The next day, you go there again and order the same thing. You notice that it's different. You're extremely disappointed. "When is the dish that I love coming back?"
    If you're at home, measurements are useful as well. I don't know how strong MSG is so I don't know how much to add. Or, if someone has never made or eaten egg fried rice before, how does that person know how much egg to add? 1 egg for 5 portions? 2 eggs? 15 eggs? A measurement will say.
    If you're at home and are comfortable with the dish you're making, that's when you should be able to just use feeling. But measurements are certainly useful

  • @jennybasa5817
    @jennybasa5817 2 роки тому +1

    Actually, MSG has a really bad rep but they may be consumed by you unknowingly because there is MSG that is naturally found in certain food like tomatoes, meat, fish, cheese... It could even be safer than salt because of its high sodium content. You should be fine as it would only become detrimental to your health if taken in LARGE quantities.... then again, salt and sugar are very bad for the health in large quantities as is the case with most things.
