Today, I show you how to make a delicious Korean Pork belly Recipe - Suyuk. We will not use any liquid - rather steam and cook the pork belly in its own juices. Slice it thin and serve with some fresh kimchi. Can you say delicious?!! Absolutely one of my favorite Korean meat dishes.

Funny! In cantonese a similar version is called siu yuk and it means roast meat but it’s specifically pork belly with that super crispy skin
Suyuk’s etymology is Suk yuk (熟肉). Cantonese Siu Yuk (燒肉) in Korean would be Soyuk/So yuk). Korean pronunciation of hanja (Chinese characters) is similar to Cantonese, Teo Cheow and Hokkien.
There are so many dishes and words that are similar between Cantonese and Korean, it's wild
Dan-yul! I'm not going to lie , I was nervous making this because most other recipes call for boiling the pork belly. But, I've trusted other recipes of yours so I followed your instructions. My friend, this is a home run. Not only is it delicious, but so easy to make!! I'm fortunate to live near a Korean grocery here in Seattle (H Mart), so I could get the proper ingredients. I watched a lot of cooking videos in youtube, but never followed any exact instruction in the past. I just made this yesterday and I was blown away by how tender the pork is. You deserve my compliment Daniel! (I hardly comment on any youtube video FYI, but you definitely deserve it!)
Thank you for the recipe. I followed your instructions to make half recipe, but had to substitute some ingredients that I don't have on hand (miso for doenjang and local bay leaf for the Korean ones), cooking time was also 1 hour. It smelled nice and was good, to me especially when dipped into its sauce which I made from straining the apple+garlic+onion and whatever liquid was in the steaming pot/pan.
I watched this video for the first time yesterday and made this today. Oh my gosh! This dish is amazing! I even ate the apples while I was letting the meat rest after it cooked. It went so well with the kimchi I had just made. Thank you so much for a wonderful recipe and perfect instructions. It's the best!

I made this. I did not have the Korean soy paste so I used some white miso and a Chinese soy bean paste. I was frankly amazed that there was enough liquid from the onions and apple to cook the pork belly slices. I will definitely make this again.

I am not good at cooking so I am grateful that you explained every details.
I made my first suyuk Monday night and found most of the flavor was gone from the apple slices, but the onions still had flavor and aroma left so, after removing the pork and letting it rest for slicing, I poured off the broth and returned the onions to the pan, added a teaspoon of soup soy sauce and carmelized the onions into a loose paste in the remaining pork fat from the broth (about 15 minutes on low heat, uncovered). Part of the broth became a light soup to start my day this morning.
I opened the suyuk tonight, put a little of the congealed broth and fat in a pan, grilled the Suyuk and plated with some fresh green onions and a dab of apple ssamjang, warmed some of the onions as a side dish along with some cold buchu-kimchi and some hot brown rice for dinner. The suyuk is outstanding when fresh, but is even better the second time around and the naturally sweet, slightly salty onions are a perfect pairing over the rice (I think I could have eaten the onions and rice alone and been very happy!). Thank you both for another outstanding recipe that is amazingly easy too!

I believe many pork cuts would work in a pinch. I've tried this with some loin... delicious. Had some european fermented cabbage so a layer of that went in under the apple, served it on a bed of smooth mashed potato. So yummy. It was a Korean dish with a european twist from my aussie kitchen 😄
I love bossam! I was first exposed to this dish when I watched a BTS show where they were making kimchi and Suga made this to serve with the kimchi they made. It’s a down-to-earth type of food, but very satisfying and delicious! Your way of cooking is a first for me to see, and will try it out. I’m sure it’ll be delicious! 😊❤
