Holy Moly. Amazing. I had no idea we're allowed to eat Twix and Turtle Candy for Halloween without straying from the KETO path. Yum. I thought I was going to sit this one out - i.e., Halloween.
Probably either my buttermilk biscuits, first bread loaf or the coconut flour chewy chocolate chip cookie so far. But if I ever figure out pasta, pizza crust or french macaroons those would be the hardest. I'm upwards of 15 or more tests on each of them. Thank you, you're very welcome!

I’m amazed at the plethora of keto recipes out there: Pinterest, UA-cam, Google….wow! Your channel is one of my absolute favorites. The one thing I would love to be able to have on keto is pasta. You made them look so realistic as real turtles and real twice bites I also think we should have done the cookie more like a butterscotch flavor instead of caramel flavor to make butterfingers. You got the right consistency to make it taste like the real thing oh yeah you killed it. Those both sound great, Alycia! Since butter and cream both introduce water into the caramel, I wonder if boiling it longer after their addition would help with the caramel staying more solid (although it would also reduce the final product)... or maybe adding some xanthan gum or konjac powder? Recipe development is endless testing, isn't it!
Maybe. I tried the xanthan gum, that didn't work at least at the amount I did it. It is endless testing which I guess is a good thing because that means I can do this for a long time, haha.

@@a-trainsandroid6731 yeah I would still use alittle. Our chocolate is so thick at 88 degrees, it's hard to coat chocolate fast enough. Either way the caramel would start melting out of the fridge after a few minutes.

I made that caramel, and put it in the middle of muffins. Unlike the Keto Lemon Curd, from Indigo Nili, it didn't stay in the middle, because it melted to the bottom, which I thought it would, but they were so good! Anything with this caramel has to be amazing. My only concern... my will power, as in lack there of 🤣
LOL What you do is keep them in the freezer and only put a few in the fridge at a time. The ones in the freezer will be hard as rocks so you can't eat them, lol.😆

I hear you always talk about Net Carbs… for people who are pre diabetic or insulin resistant and are trying to lose weight, it is best to count total carbs. Also no snacking between meals. You will get what is called Carb creep and very easy to put on weight in Keto if eating too many calories in treat type foods. Also many people find even sugar substitutes trigger their sweet tooth and they end up eating too many calories and carbs. I love watching your interesting videos but know all of these sweet things are treats for once in a while only. ❤
Oh wanted to mention since being Keto/LC I splurge on Werther's mixed candies @ Christmas. Then I end up feeling crappy & guilty, knowing the junk they are made from.
I don't usually splurge on sweets much because if I eat sugar I'll just keep wanting it and usually upsets my stomach. But I splurged once for Thanksgiving and felt hungover for 2 days after, it was horrible. Told myself never again, lol.

Hey 👋 try mixing some Locust bean gum into your caramel and see what happens. I want to try it but frankly, you're much better at this than I am and if you can't do it, I know I can't. I got the idea because tara gum can make stuff supper firm and locust bean gum is an even better product.
If you are talking about honey comb or sponge candy, believe me I've tried. It works but it deflates after the never hardens so I gotta keep working on it.

Sponge/honeycomb toffee covered in Cadbury chocolate. I miss those! They're fairly compact so maybe doesn't need to be too inflated. But the caramel is super soft out of the refrigerator anyways, so either way they need to be kept in the fridge. The tempering is more so the chocolate doesn't look bloomed (white coating) after a few days.

Yes allulose holds moisture and keeps things soft (often too soft) and makes things burn really quick. If you want to listen to something interesting, serious ketos interview with Chip Munk baking, they talk about using allulose for cookies and how much of a disaster it was. I'm gonna do a sweetener video eventually.

@@christophermeats4826 cocoa butter would be good because it melts at a high temperature. Bit I would melt it separately and add it in otherwise you will overheat the chocolate.

Do you think gelatin would help with the caramel mind problem? I had the same issue when making the snickers. I just kept them in the freezer which was fine I used gelatin to give a little stability to my keto pecan pie. Might work?

My taste buds HATE darkened allulose, to me it becomes very bitter. So, does it HAVE to be taken to the cooking point of being that dark? Will it change the texture?

Def gonna try the Twix bites, they're my fave. Do u think the sugar free chocolate chips are capable of tempering? I've been trying to temper the bake believe chocolate chips for a while in different desserts and they always end up melting/not staying hard at room temp. Are u running into that problem too?
Yeah tempering only makes it so you don't get the white film as fast on the outside. I made hot cocoa bombs though and they stayed fine at room temp, I used all Lily's. So maybe it is the bake believe chips. Didn't think about that.
Counting net carbs is cheating yourself into thinking, that you are doing well. That way you can easily eat well over 50 grams of total carbs, witch is waaaaay over the 20 grams (total) of basic keto... They look delicious, though 😉
Everyone is different. I ate all my stuff, stayed below 20 g net carbs and lost 70 lbs and got to my goal weight. If you are in ketosis which I was that is doing keto basic or not.

Maybe using a rolling pin and parchment paper over your silicone mold will help to even out the crust with less labor?

Haven't seen any, I try not to watch too much keto baking so I don't accidentally get ideas subconsciously. But maybe I'll look into that.
If you use a blend of allulose and xylotol or erythritol it will help your caramel to firm up.
But it always crystalizes on me. I hate the texture of them when they cool.

If I had a solution I would definitely share it. The chocolate just gets melty in warm hands. The caramel melts at room temp.

I have not but it's mostly allulose which is why it would behave same as sugar but it will probably have the same downfalls that allulose does.

What is the difference between egg white powder & whey powder, plz?
Egg white powder is made from just dehydrated egg whites, whey is milk.

Awesome!! You can totally do that, I suggest powdered sweetener, a little liquid stevia and some coconut oil because bakers chocolate is really hard.

@@christophermeats4826 cocoa butter would be good because it melts at a high temperature. Bit I would melt it separately and add it in otherwise you will overheat the chocolate.

Maybe, have to do more experimenting just don't have much time to work on things that are already delicious, the experimenting never really ends, lol.

Do you think gelatin would help with the caramel mind problem? I had the same issue when making the snickers. I just kept them in the freezer which was fine I used gelatin to give a little stability to my keto pecan pie. Might work?

My taste buds HATE darkened allulose, to me it becomes very bitter. So, does it HAVE to be taken to the cooking point of being that dark? Will it change the texture?
You can do it less but it will definitely be more soft, maybe add a little less butter to keep it a little more stiff?

Def gonna try the Twix bites, they're my fave. Do u think the sugar free chocolate chips are capable of tempering? I've been trying to temper the bake believe chocolate chips for a while in different desserts and they always end up melting/not staying hard at room temp. Are u running into that problem too?
Yeah tempering only makes it so you don't get the white film as fast on the outside. I made hot cocoa bombs though and they stayed fine at room temp, I used all Lily's. So maybe it is the bake believe chips. Didn't think about that.
Counting net carbs is cheating yourself into thinking, that you are doing well. That way you can easily eat well over 50 grams of total carbs, witch is waaaaay over the 20 grams (total) of basic keto... They look delicious, though 😉
Everyone is different. I ate all my stuff, stayed below 20 g net carbs and lost 70 lbs and got to my goal weight. If you are in ketosis which I was that is doing keto basic or not.
