- This is just a really great, simple way to roast mushrooms in garlic butter. The lemon and thyme at the end is optional because they're so great straight out of the oven, plain. But it's a great way to add even more flavour!

Simply toss in butter, oil, garlic, salt and pepper. Spread on baking tray and bake for 25 minutes at 220°C/450°F (hot oven = better colour!). No turning or tossing - you get better colour by leaving the oven closed the whole time!

I'm guessing at about 20 mins at 200oC and drain the moister released from the mushrooms as they roast, two or three times depends on the variety and size of mushrroms. I carfully pat the moister away with the edge of folded kitchen roll

I have a very specific question about champignons fried in garlic if anyone can answer it? Ive been experimenting in the kitchen with asian food and especially asian sauces and marinades.
I made a heap of the garlic fried mushies a few days ago, and just now i thought maybe i can make them a bit better? So i got a piece out and tried a sauce which, based on the smell, should work really well with mushrooms. I debated opening a new tin so i could try with unflavored champignons, but laziness, fridge space, and the opinion that garlic always makes things better made me choose to use a garlic fried piece.
Bizarrely, the ponzu sauce (which is VERY strongly flavored and both savory and bitter) and the garlic and/or the mushrooms sortof cancelled each other out? A neutral, subtle and very meh flavor. Does anyone know why this happens???
