Stephanie Jaworski of Joyofbaking.com demonstrates how to make Bourbon Balls. The decorative look of Bourbon Balls makes them a festive addition to any Christmas tray. Bourbon Balls are a sweet and chewy, no-bake confection made from a combination of finely crushed cookies (traditionally vanilla wafers), confectioners sugar, unsweetened cocoa powder, chopped pecans or walnuts, held together with a little corn syrup and bourbon. It's easy to like Bourbon Balls since they taste great, they are quick and easy to make, and they only improve with age.

Yes, you can absolutely use honey. I've made Stephanie's rum ball recipe (same as bourbon balls except with rum) many times and I always use honey instead of syrup. I also use extra rum :)

Stephanie-great video, as usual. I have a tip to share...I recently made pumpernickel bread and found that if I measure the cocoa powder first then measure the molasses in the same container, in this case its a tablespoon, the molasses will not stick to the measuring spoon at all! It come out in one "plop"...very handy.

If you didn't want to use corn syrup or the like I've always made my rum balls with condensed milk and weet bix. If you use condensed milk there is no need to add extra sugars into the mix. I'm not sure what weet bix are called elsewhere but they are a shredded wheat breakfast cereal and very easy to crush up.
I have Black walnut trees on my property, and no, I don't give any to my friends. It is a lot of hard work to de-husk and clean Black walnuts. I do about 6 x 5 gallon buckets which takes 50 hours to remove the husk and clean the husk remnants off the shell. I never give anyone my de-husked black walnuts but I will give black walnuts to friends to de-husk and clean for themselves!

Shahana Aamir You could use another type of alcohol. If you're asking for a replacement for alcohol, then you could use a fruit juice or another liquid, although the flavor won't be quite the same.
Can you make these without nuts? If so, would you increase the amount of wafer cookie or leave it as-is? Thank you!
+Jasmine Terwilliger You could leave out the nuts. You will probably have to reduce the amount of liquid used because you won't have as much batter.

Chocolate truffles are made primarily with dark chocolate and cream. While Bourbon Balls contain nuts, cookie crumbs, cocoa powder, sugar and bourbon.

The only brand of food processor that I've ever used is Cuisinart. I have the 14 cup and I like it a lot.
Great truffle videos, as with all your videos. I would love it if you would speak a bit about storing chocolate. I live in the Caribbean where it is hot and humid. I just took out some chocolate to try tempering it. Completely spoilt. It is just a sticky grainy mess in the bowl.
I really don’t know of a good solution. I have the same problem as it is hot and humid here too. It’s fine if I have the air conditioning on but if I go away and turn the air off the chocolate will spoil. Plus you shouldn’t store chocolate in the fridge either. It’s why I don’t typically make chocolate desserts in the summer.

Seeing as the recipe was posted 4 years ago unlikely I'll get a response, but hopefully someone can chime in. First time making these so not sure how firm they should be. Mine came together in a nice ball in the processor but very soft, even after refrigerating for 1/2 hr; definitely not chewy. Tasted great, but can't imagine mailing them as a gift as I hoped. Followed the recipe exactly. Any suggestions as to how to firm them up?
As I said in the video, when you first make the batter it is quite soft. So you do need to chill the batter until firm. Normally I chill the batter for a few hours, sometimes even overnight. Probably 1/2 hour isn't long enough.

If you're using fruit juice, they won't last as long as when you add alcohol. I've never actually made these Bourbon Balls with fruit juice, so I'm not sure how well they store.
