I have found that restarting the game by either going to main menu or closing the application fully can reset the ai kind of, sometimes they get stuck. Or something..
Usually when having a lot of AI in a game they all join either a federation or galactic community. Sometimes if there is a crisis at the right time all AI will join together to fight it. To address the Grey contingency, it's only colored that way if another empire is already that color or a new update with the Overlord expansion.
It's my understanding certain factors do contribute. For example, more empires researching the Sentient AI or whatever it's called increases the likelihood of Contingency, while Jump Drives increase the Unbidden spawn chance. I'm not sure if these are the exact things, but it is possible to influence the crisis.

I feel like I never see any end-game events other than the bloody unbidden! Is there a way to make it more likely to get a different crisis?

Unbidden is designed to be most likely, and sometimes the code breaks making it too likely
