Alfredo lasagna from scratch. Make ahead and freeze!

  • We have been making this for years and still love it. We have adjusted it over the years based on diet, taste and time we want to take to make it. It is easy to adjust to your taste.
    Vegetable lasagna
    Heat oven to 375 degrees.
    one box of lasagna noodles cooked according to box directions or one recipe of homemade pasta • Homemade pasta recipe ...
    You will need about 1 lb. of shredded mozzarella in total
    For the Ricotta Mixture:
    2 cups ricotta cheese • Easy and super creamy ...
    1/3 cup freshly grated Parmesan cheese
    3/4 cup shredded mozzarella cheese
    2 tablespoons sliced green onions
    2 teaspoons chopped fresh parsley
    1/2 teaspoon salt
    1/8 teaspoon freshly ground black pepper
    1/4 teaspoon dried basil
    1/4 teaspoon dried oregano
    Stir everything together in a medium bowl and set aside
    For the Vegetables:
    2 cups sliced mushrooms
    2 chopped carrots
    1 cup chopped onion
    2 cups chopped bell peppers
    1 sliced zucchini
    2 cups broccoli florets
    1 cup frozen or fresh spinach
    cook in a little olive oil until soft about 10 minutes
    Alfredo sauce (double for a wetter lasagna, we prefer it doubled)
    1 1/2 cups of milk
    3 Tablespoons butter or low fat margarine
    3 Tablespoons flour
    1/4 cup parmesan cheese
    3/4 teaspoon garlic powder
    1/4 teaspoon pepper
    1/8 teaspoon nutmeg
    warm milk, butter and spices in a pan, once warm add flour and stir, add cheese and stir until thick. Remove from the heat and set aside.
    Pour about 1/2 cup alfredo in the bottom of a 9 x 13 baking dish. Lay out lasagna strips to cover the entire bottom of the baking pan. Spread or clump 1 cups of the ricotta mixture over the strips. Top with half of the vegetable mixture and spread out evenly. Cover the vegetable layer with alfredo sauce and then a handful of mozzarella cheese. Repeat this layering until you run out of toppings (about 3 layers). Top the final layer of lasagna noodles with remaining alfredo and another handful or mozzarella.
    Bake the lasagna for about 45 minutes. It will sometimes overflow so we place it on a cookie sheet. Remove from the oven and let stand for 5 minutes, covered, before cutting to allow it to firm up.

    Combine equal parts butter and flour, form it into a round log or square/rectangle, and freeze it partially. Then score lines to create squares or slices, then fully freeze it. When you need to make a quick pan sauce, just remove one or two pieces from the freezer. There is a fancy French name for this, but I do not remember it.

    Going to make a couple of these in a foil loaf pan lined with parchment and freeze them. My daughter doesn't like veggie lasagna, but hubby and I do.

      Ha ha! I read my verse of the day on my phone before my feet hit the ground to say I started in the word. I go back later each day once I’m awake to read and do my devotional. If I did it before other things the lord would stop me and tell me to have coffee first since he loves me 😂
