Hello! I have a recipe that I love and it’s called CARROT CAKE GRANOLA. It has lots of delicious things in it but like you I add to it . Carrot cake granola INGREDIENTS * 2 cups old-fashioned oats (use certified gluten-free oats if making this GF) * 1 cup grated or shredded carrots * 1 cup pecans * 1 cup walnuts * (optional) 1/2 cup shaved or shredded coconut * 1/4 cup maple syrup * 1/4 cup melted coconut oil * 1 teaspoon ground cinnamon * 1/2 teaspoon salt * 1/4 teaspoon ground ginger * 1/8 teaspoon ground nutmeg * pinch of cloves (optional) * 1/2 cup raisins * Heat oven to 350 degrees. * Add the oats, carrots, pecans, walnuts, coconut (if using), maple syrup, coconut oil, cinnamon, salt, ginger, nutmeg, and cloves together in a large mixing bowl. Toss well until combined. * Spread the mixture out evenly on a baking sheet and bake for 25 minutes, pulling the mixture out at the halfway point and giving it a good stir before the final round of baking. Remove and let cool until the granola reaches room temperature. Then add raisins and toss to combine. * Enjoy immediately, or store in a sealed container for up to 2 weeks.
I don’t really use a recipe for these but they are my favorite. I smash up 3-4 really ripe bananas until liquid. Add in oats, nuts, seeds, chocolate, dried fruit, spices, etc. whatever sounds good to make a cookie dough consistency. Let sit for 5ish minutes. Spoon onto a silpat/baking paper and shape a bit into cookie shapes. Bake at 375 for 10 minutes or until set and to desired moistness. They stay together well and are really tasty. My favorite at the moment is a banana bread flavor profile.
Next time you make them try putting your almond butter in a small zip lock baggie and cut the corner and use it like you would a cake decorating tip and squeeze the almond butter into the dates. I have done things like this before and it makes it soooo much easier. I love you channel. Your always so interesting and knowledgeable.
I have a much smaller family but I’m a business owner and so is my husband. We struggle to cook 6 days a week. I’ve found that getting my meats out on Sunday, prompt me to cook them. We get a few meals and then leftovers which has helped us stop eating out so much. My menu for a week isn’t made in one day but knowing I have a plan come 4pm, brings me a lot of relief. I also try to prep cut veg for my sides on the same day. However you do it, make it work for you. Best of luck to eating fresh and best!

I too am an avid tea drinker. I mix my own herbs. My perfect amount of tea is 14 oz. I drink three of these a day everyday. Morning green with peppermint and star anise, afternoon white peony with ginger, tumeric, thyme and cinnamon evening chammy with honey. I've tried large cups small cups and have finally settled on 14 oz. 14 oz mugs are not easy to find. I was able to find a travel stainless steel by Contigo. But I definitely would like a 14 oz ceramic mug. I love your videos and thank you so much for sharing your time and your energy with all of us. I have been successful with freezing and vacuum sealing butter I accidentally lost a package in my freezer from 2021. I used it in butter cookies at Christmas and it was perfect. Don’t forget canning your ghee to preserve for later

The different angle of the sun results in much reduced glare. We get a much clearer veiw of the background, and the overall light levels are much more even. I like it. Edit. The effect of the light gradually fading in the background was beautiful.

Hi Chelsea , I’ve made the date goodies before , I’ve found a less time consuming way. In a baking pan lined with parchment paper, cut in half, lay flat cut side up, lay dates side by side as many as you’d like -drizzle warmed up almond butter then drizzle warmed up chocolate ( as much or as little as you’d like) sprinkle chopped nuts of choice, cool then they snap apart like single dates your making. Still as yummy but faster 😁
I love dates with a pecan half inside and then rolled in granulated sugar. My grandparents had dates and pecans on their ranch in California so it was such a treat
I think the large one is so awesome!! As a Canadian, I envision having my soup in this mug!!!! The small one would be also handy for tea. I love hot tea, and I think for me, the tea would cool off too fast in the large mug. You have mentioned your love of Earl Grey tea. I'm with you on that! I love Rishi brand of loose leaf Earl Grey Supreme. It's all I ask for for my birthdays and Christmas etc. It is expensive, but once you have experienced the true taste in the loose leaf, there is no going back. Love your videos Chelsea!

Oh my gosh!!!! And everything looks so yummy. I had to mid way go get a bowl of cut up banana, maple syrup, brazil nut, cashew and coconut butter and....I topped it with some whipping cream. It helped a bit...hugs

My favorite mugs are 26 ones. The kerig makes 12 ounces and if I ever have coffee I like it half and half with milk and warmed in the microwave so maybe 24 ounces would be good. I also make 2 teabags with added ginger, cinnamon , cloves and honey or lemon and honey and ginger. I like a large mug. My husband prefers the 16 or 18 ounce ones.
Big mug, both both will work. Big mug is great for soups and stews. Small mug also works for the same thing, plus beverages. If you use the small mug, you just get second servings or add bread and/or additional items (aka 1/2 sandwich). As for your dates, I have used a Giada recipe for stuffed dates for years. I am not a sweet follower, but like sweets. I am more a savory person. For her recipe I added a spread of peach butter. It takes it to the next level. I will definately try your recipe. I am always looking for yummy snacks. Thanks for the video. So many possibilities.

I am a good company as I too am very quirky about my coffee mug. I like a broader bottom tapering into a smaller top. I do not like mugs than have a tiny bottom and quite a larger top. My reasons are they can be toppled over more easily. I like the narrower top because my coffee stays hot longer so if you have a wider top, well the coffee is never hot enough. Next is thickness but I will spare you any more details but you can see, I am very quirky! Since I am in England doubt if I will get the mug but I would vote for the 16oz. I love the colour, it is joyful and a constant reminder that spring will come. Yay! A fellow date lover. No one I know even like dates let alone love them. I only buy Medjoul dates, not those awful sugary ones in the oval box. Great show so many thanks.

My son likes to have a protein bar or something similar to take with him ti work (he drives a truck at night for a large food company), that way he doesn’t eat a large meal that makes him sleepy. I make protein balls using unsweetened coconut flakes rather than oats. I am sensitive to all grains. I love protein bites and yours look yumny!

I add chia seeds to mine because they are packed with protein. With dates or raisins you can reduce the sugar.
My boys got me a large mug a few years ago and I use it for coffee and tea all the time
