Michigan guy here that grows collards in my garden. Pretty sure I have mentioned this before on one of your videos. I do my greens in a pressure cooker. 10 lbs. for about 20-25 minutes & I also chop up the stems & throw them in . Smoked neck bones,hocks chunks of ham, jowl bacon, it's all good. I also use apple cider vinegar but that probably does not matter. Happy new year & keep posting your videos. Lovin em !

That's a great idea ! I still have a few out in my garden. Even though we have had snow & freezing temps, they appear to still be growing. Gonna go pick some & throw em in the dehydrator today. Perfect timing,just finishing up a batch of venison jerky ! @@pamreneick464

And the seeds are hard to come by if you want to plant your own mustard crop. Now for my turnips, a few of the bottoms have to be diced up and thrown into the pot. Gives the pot a nice, mild raddish flavor. And never ever leave a hamhock outta the pot. A shot or two of tabasco or (vinegar) pepper sauce to top it off.

I mix turnip & mustard greens my faves...Collards my 2nd fave, but it's all good in the mix of them all 😊 I know lots like to get away from fats, but i do like using hocks, salt pork reg. & aged, jowl bacon, pig tails (reg & smoked), turkey tails, turkey legs...Change up is good too. In the south, traditionally, collards stand alone but most people mixed mustards and turnips.They even grow them together. I didn't have a green I didn't pick myself until I was in my twenties. Also, stems are chicken food.
Happy New Year! Yeah buddy, you're right about the pork.👍I use smoked ham shank instead of hocks, lots more meat and still has the marrow from the bone for the pot liquor. For collards, I always blanch and drain first, then cook in the stock, it takes the bitter out of it. I know BtB is all the rage for stock, I use it myself, but for greens I go to the local restaurant supply store and pick up a container of HAM base. Brings the funk WAAY up.

Do you pre cook the meat first? Or just throw it all into the pressure cooker?

I save and dry my collard, asparagus, broc all stems dry them out put them in small jars for seasoning !! Anything 👍
