@dorothyhardy4656.Turkey necks low fat and healthy. I don’t do all that saturated fat and oil. If I did roux I’d probably just lighty toast the flour dry without oil. I’d cook my veggies in as little oil as possible and add the toasted flour into the cooking liquid.

You leveled those Gumbo Collard Greens ALL THE WAY UP!! Another easy way to de-stem greens is to hold the top of the stem, with your other hand, place it around where the green starts, make your fingers in the OK gesture👌🏾, grip tightly and just pull down. Easy-peasy!

So I had never heard of gumbo greens , and wasn't a fan of collards, but these greens looked amazingly good. Well I headed to the store and bought my ingredients. Following all of ABs instructions I made the most delicious dish of greens ever! My hubby ate 3 bowls....yea!!!. Thanks Chef for enhancing my cooking skills and getting me a big ole STAR with the hubby.

Made these for my husband. He asked if I was trying to get him to marry me again 😂 I cooked mine in the instant pot. I did shredded collards for 15 mins w/ quick release, then 10 min saute. Added the shrimp after it stopped bubbling. I would watch the sodium content of the broth. I used Better than bouillon low sodium, but used less than recommended. I also used more like 1/4 cup flour/oil for roux. If using the instant pot, you still need to boil the smoked turkey separately to shred and add to the pot. Use that water for as your liquid/broth. I used turkey necks, which worked out without pre-boil, but larger cuts (wings, drums) would need more cook time. Btw, my husband's family (mom's side) is from New Orleans 🎉 I did add a few pieces of okra and some file'

OK AB, I’ve been looking at your channel for awhile, love everything you do, and I bet you’re either from the South, particularly around Louisiana, or you’ve been to the South for real cooking. No one from LA who hasn’t been to Louisiana knows how to properly make a gumbo. And….Louisiana is the ONLY STATE that people visit, then leave, either with food, or when they get back home, call folks in Louisiana and request that they send some of that Louisiana food to them, because they realize that their food has no real taste, and no other State cooks food as good as Louisiana. Keep up the great Work!
