Love the idea. Good job!
I would only remove the dining set extend the kitchen a little bit more and have a peninsula with chairs instead.
•And extend the laundry a little bit onto the washroom wall, and do some cabinet to hide it and have more storage room
That’ll give you more countertops space as well.
