      The old people's obsession with lard was because lard was pretty much the only fat (like oil or butter) that was reliably and readily available in all seasons pre modern refrigeration. When you get to the recipes that are in the early 1900s, you're getting recipes that reflect the reality of the time, and if that means butter or oil is unavailable or prohibitively expensive that means lard is probably going to show up.
      So their options where "skip the fat and lose like 70% of the flavour and likely ruin the dish, or use lard" whenever butter or oil would be used today, and their recipes reflect that reality.
      At least that's what my now very old grandmother told me when I questioned her use of bacon grease / lard in an apple pie.

      @@Mr.Sparks.173 another points are flavour and smoke. There are many dishes that would taste horrible or just different if you replace the fat with vegetables base oil (try stir fried cabbage with vegetables oil and lard) Also when smoked, vegetables oil tastes weird

      I wanted to get a pound to try in something, that bucket is the only lard my walmart had.
      My walmart sucks. But it's only 25 miles away.
      The next nearest ones are a lot better, but at 50, 75-80, and 100+ miles away, I'm going to hyvee if i drive that far.
      I did fry my first semi-successful fried chicken in lard yesterday.

      Monounsaturated fats are somewhat okay, polysaturated fats (most animal fats) are literally what we are designed to be made of.

    Old recipes frequently call for lard just because it was affordable. In many (perhaps most) cases you can substitute hydrogenated vegetable oil, without having any detrimental impact on the flavor or texture of the recipe.
    And in the cases where you do actually want pork fat specifically, you should probably be using bacon grease, rather than lard. It has better flavor.

      @@cindyknudson2715 Chemically speaking, lard is essentially _identical_ to hydrogenated vegetable oil. It has a different history, but the molecules don't know the history, and neither does your body.

      Their choices were lard, butter, or tallow (rendered beef fat). Lard was the cheapest. It really does make excellent pie crust.

      Hey. When money's tight, bacon grease is a fantastic way to fry stuff. Get it for free at butcheries too, just have to render it. Oil is super calories dense and perfect for surviving The Great Depression.

      Lard is actually a pretty healthy fat to cook with. Surprising I know, but remember that much of the nutritional education we are given is tainted by propaganda from the food industry. Lard has little to no trans fat, with less saturated fat than many people's "healthy" go to fat, coconut oil. Also, after olive oil it has one of the highest monounsaturated fatty acid content out of all the commonly used fats and oils. That's the type fatty acid that helps reduce blood cholesterol. It also has a fairly high vitamin D and choline content. If you aren't vegan or vegetarian, lard should be your go to fat for high heat uses.

      It's great for a lot of things, never heard of the tractor stuff so can't confirm if it's true or not, but can confirm that many foods taste a lot better if made in lard instead of something like sunflowerseed oil.

      Beef tallow is what made McDonald's fries so good. I remember when they were 'exposed', it was the beginning of the end.
      Oddly people didn't have auto immune problems back then and diabetics were rare. Obesity, strangely enough, wasn't normal either for the times.

    Dylan, so I was talking to an inlaw about 'egg of lard' and this is what it means. After sifting all the dry ingredients, you take an egg and use the egg to make an indent in the dry ingredients. You then use slightly above room temperature lard to fill in that indent, and that's an egg of lard.

    So I'm in my late 50's and I remember my grandma using lard oh so often. She would put in a cup of water then enough lard to have the water raise to 2 cups. She said that was 1 cup of lard. I've never tried it but I also saw her do this with peanut butter. Let me tell you she was one of the best bakers (next to my grandma on my dad's side) I have ever known. And the best pie crust ever.

    I know you like to hate on lard, but it is actually better than the alternative vegetable shortening such as crisco. When a recipe calls for lard, you can usually replace it with any solid fat of your choosing, butter(unsalted), ghee, tallow, schmaltz, coconut oil, and I've even seen avocados used as a replacement in certain baking recipes.
    Any of those fats are better for you than the shortening, but among them I would recommend the grass-fed beef tallow because it is high in omega 3 vs omega 6, and it is one of the more nutritius fats for you, with all the benefits you hear about from eating grass-fed beef being present in the tallow.
    If you going with vegetable oils, avoid most oils, they are incredibly bad for you especially canola, corn or soybean. The ones you should be cooking with are extra virgin olive oil or avocado oil. If you need a cheap oil, pick vegetable oil not canola. Still better to just use butter if your gonna do that.

      Yes yes yes!!! I was going to comment this. There is a reason we see more chronic illness and disease. Mostly from processed foods and sugar but also because of processed seed oils! These oils are not good for you! They f@ck up your cell membranes making your cells leaky. Read the book deep nutrition. Animal fats are good for us. People of antiquity knew what they were doing. Don't listen to the bull crap from the FDA and the American heart association. If their advice was working why has heart disease and stokes gone up not down! Animal fats are good. Humans have been eating them for over millions of years. And not just homo sapiens...I'm talking about all members of the genus homo.

      @@sirdeadlock you have that backward. first, fat from animals is not called oil. it's called fat. oil comes from plants. fat comes from animals. animal fats are superior in every way. then fruit oils would be second best, this only includes olive, coconut, and palm. but palm oil is destructive to the environment. and the oils made from flowers are essential oils. don't eat those. everything else is seed oils and should be avoided like the plague.
