    Maori call Bolofua Poroporo. We eat the purple berries and sometimes if your lucky you may find greeny yellowy berries on the plant. We never use poroporo if the stem or leaves are purple. We mainly use it in a boil up, but you have now given me the most luscious of recipes and I'm off to forage for weeds...Umu are THE BEST!

    So good to see the Pacific style of cooking alive and well in the city. In Papua New Guinea our earth oven is called "Mumu". Also we call our bolofua plant "karakap" and can also use aibika for the same dish. Wan Nesia ;)

      Try it, don't use ripe paw paw use semi ripe, the flesh should be crunch when you bite into the paw paw. Its our traditional stable food. Goes with any protein.

      Volcanic rocks are highly recommended, can take up to 3-5 hours depending on how big your Umu is 👍

      yes remove the berries......only use the bolofua leaves.....its very bitter.....but for the Niueans,its very yummy......cook it with chicken,the chicken fat juices adds flavor to the bolofua making it less bitter.......try bolofua and cornbeef with coconut cream mmmmm....yummy.......

      They think its poison but its not, when you eat it its more of a sour taste then anything, we love it.

      Yea the taro is usually peeled after it’s cooked, if it is peeled it’s wrapped with foil first then put in the umu
