  • If you're looking for an easy cookie recipe that requires only a few wholesome ingredients, you'll love this simple and delicious peanut butter and coconut cookie recipe. These cookies are soft inside, crispy outside, and perfect to enjoy with your favorite tea, milk, or coffee. They are quick to make and are bound to become a staple in your kitchen.
    Instructions:
    In a mixing bowl, add pure peanut butter and maple syrup. Stir the peanut butter and maple syrup together until well combined.
    Use a coffee grinder or food processor to grind shredded coconut into a fine flour.
    Gradually add the coconut flour to the peanut butter and maple syrup mixture. Stir continuously as you add the flour to ensure it incorporates evenly.
    Once all the coconut flour is mixed in, you should have a soft dough.
    Place the dough in the refrigerator for about 30 minutes to allow it to thicken.
    If you prefer denser cookies, you can add an extra 1/4 cup of coconut flour to the dough before chilling.
    Line a baking tray with parchment paper.
    Use a biscuit cutter to shape the cookies from small quantities of dough, about 1 tablespoon each.
    Press gently on each cookie with the back of a spoon or an espresso coffee spoon to flatten.
    Brush the top of each cookie with a little maple syrup if desired and sprinkle with additional shredded coconut for a nice finish.
    In a preheated oven, bake at 350°F (175°C) for 10 to 12 minutes, or until the cookies are golden brown.
    Let the cookies cool completely before handling them. The cookies will be too soft and crumbly when hot but will harden as they cool.

    1/3 cup (85 g) pure peanut butter
    4 tbsp maple syrup
    1 cup (90 g) shredded coconut, ground into fine flour
    1/4 cup additional coconut flour for denser cookies (optional)
    1/2 tbsp maple syrup (extra for brushing, optional)
    1 tbsp shredded coconut (extra for topping, optional)
