- You’re vegan or you’re just looking to try healthier food recipes, the rich and creamy texture of this vegan chocolate flan will blow your mind and please your taste buds! A low calories, guilt-free delight that is flour-free, egg-free, dairy-free, gelatine-free and starch-free!
Instructions:
Start by soaking a half cup dried chickpeas overnight (better to keep in the fridge). Rinse thoroughly and strain the soaked chickpeas to avoid excess water.
Start by blending EXACTLY 1 cup of soaked chickpeas with 3 cups of water and a pinch of salt until it reaches a silky-smooth consistency. Strain the mixture to extract the chickpea milk, setting the stage for a creamy, plant-based foundation.
To the chickpea milk, add maple syrup, avocado oil, and cocoa powder for that irresistible chocolatey flavor. Heat this mixture over low to medium heat until it starts to simmer, keep cooking and stirring constantly for another 10 minutes to let the mixture thicken into a perfect, béchamel-like texture. Carefully pour the preparation into your chosen mold or recipient. Let it rest and set in the fridge for at least 3 hours, allowing it to thicken more into a flan-texture.
Just before serving, give it the finishing touch by drizzling a dusting of cocoa powder on top. To enhance the sweetness and presentation, add a delicate drizzle of maple syrup over your amazing flan slice.
Ingredients:
EXACTLY 1 cup of soaked chickpeas (~1/2 cup dried chickpeas soaked overnight in the fridge)
3 cups of water
A pinch of salt (optional)
1/4 cup of maple syrup (or any sweetener of your choice)
2 tbsp of creamy avocado oil (or other neutral oil of your choice)
3 tbsp of high-quality cocoa powder
An extra drizzle of maple syrup for garnish (optional)

Will cooked chickpeas work the ones that come in a can?
The secret to having this flan like texture is the starch in the chickpea milk we extracted! I’m not sure if canned chickpea has enough of such a starch to give the same result you see here. If you try canned chickpea, let me know how it goes (I try to always use wholesome ingredients myself but will be interested to know the outcome for my audience, if you try it) 🙏
