    After you take your eggs off the stove put a couple of tablespoons of baking soda in the water and sit for 10 min. Peels come off easier. Deviled eggs remind me of my mom. She always made the best. Also a platter of them to take for a picnic or a gathering. Thank you John

    Another way to cook your eggs is in an air fryer. No waiting on boiling water and then setting timer. 6 eggs in air fryer...set temperature to 300 degrees...10 minutes on timer. Put in ice bath. Love your recipes. Your enthusiasm is infectious and i can't wait to try every recipe...and do.😋

    Evil Deggs are my absolute favorite treat! I love to add fresh minced onion, salt, pepper and paprika to my yolk mash.. Smoked paprika is my favorite on my deviled eggs. A thin slice of salmon is amazing on top as well... Cooks pleasure, i eat about half of them as I make them 😂 lol

    In my later 20’s I had an middle aged woman teach me the hypertonic water trick for boiling eggs and the ice bath. She also taught me to crack all the shells well shortly after being put in the ice bath. The shells slide right off!! That was 30 years ago and I’ve never done it any other way since. It really tickled me to see you using this method. I enjoy a tiny bit of horseradish in my filling from time to time. Thank you, you made my day ❤

    I'll have to try this recipe! My grandmother makes deviled eggs around Easter and New Year's Eve, and she makes a light sauce with mayo, sour cream and buttermilk to serve with them. So good!

    I use the same procedure used here for making deviled egg filling to make the dressing for potato or macaroni salad, though there I mix in some dill pickle juice.

    How my family does it in New Orleans: mix eggs with Deviled Ham (the good stuff!) mustard, mayo, seasoning of choice but usually salt isn’t needed. Stuff eggs. Fix boiled, peeled, medium to small shrimp on a toothpick and stick that into an end of the egg white. Maybe some Louisiana Hot Sauce? Dust with paprika. Nest in a sea of romaine/endive. Voila’! SHRIMPBOATS! Play the old song 🎵 Shrimpboats are comin’ their sails are in sight. SHRIMPBOATS are comin’ there’s dancing tonite! 🎶

    My mother's recipe for Deviled Eggs Recipe consists of Hellman's Mayonnaise, Sweet Relish, Spanish/ Manzanilla Olive Brine, French's Yellow Mustard, each egg half gets topped with a sliver of a pimento stuffed green olive, and a sprinkling of Paprika.
    She'd usually serve Deviled Eggs with Crispy Fried Chicken, BBQ Ribs, Burgers, or Herb-Roasted Chicken Dinner. The simple idea of Deviled Eggs takes me back to childhood and dinner parties held with family/friends.

    I was taught to do the same thing with the salt while the eggs are boiling, it makes peeling them so easy, my 3 year old boy peeled them perfectly!!

      Putting salt into the boiling water (before it boils) is important for a certain reason: what happens if the egg cracks in the water is that it leaks into the water--But the salt keeps the egg firm and mostly inside the egg even if the shell is cracked so that’s important👌😇

    Please consider Miracle Whip. It’s the perfect sweet/vinegar. If you start with mayo, then you have to alter it further. Also, where’s your sweet pickle relish.
    You make me want some deviled eggs!! Pro tip. Boil and cool potatoes too for potato salad and the put deviled egg ingredients in it for the most delish side dish. Works for macaroni salad too. Baked beans and some bbq. Yum!

    The secret to easy to peel eggs - boil the water first, add the eggs to the boiling water, cook at a low boil (simmer) for 10 minutes, then pull out eggs and put them immediately into an ice bath. Shells peel off like butter

      @Jraw309 yeah tell my employer where I've been working at a hotel for 21 years with cooking credentials. Everybody knows if you put a cold egg in boiling water it's going to crack. If you don't know that by now which is actually a very basic thing to know, and even a simple Google search will tell you that. Obviously you don't know much about cooking

    So we have freash from the chicken eggs and have found that stemming is the best for a clean peel but if you have to boil wait until the water is at a full rolling boil

    Steam your eggs instead of boiling them. It’s an absolute game changer. You can use fresh or old eggs. Doesn’t matter. The shells will slide right off.

    I just recently learned you can add cold new eggs to a rolling boil pot, then turn the burner to medium. Boil for 10 minutes. Super easy to peel. I also mash the yolks before adding any mayo and the rest, to help with lumpyness. I'm going to try your method with the strainer. Your recipes are always freaking amazing. Edit, ok using the sieve is far superior. Ultra creamy!

    I use a cheese wire slicer thingy to cut my eggs in half. Very clean cuts! Delicious (and pretty) with chive flowers for garnish.

    I make mine almost identically to yours, except I add about a teaspoon of raw honey to my devilled eggs to add a bit more sweetness - and for extra "seasoning" my family recipe includes either a tablespoon of ranch or dried ranch powder. It adds extra "zest" and it's amazing. I'm a big fan of devilled eggs and I'm the person in our family who makes them every year for the holidays.

    I just received your lovely book Preppy Kitchen over here in Oz - I'm so happy I ordered it. I love your videos and your recipes, all the info you give and the work you put in to making the recipes clear and fabulous. I have to say, as an Aussie, I shuddered at your scone recipe (I'm sorry, and I'm sure they're better than the things America seems to think scones are but they're still wrong! :D ) but I fully agree re: the pavlova. How is it not more popular in a country that combines sweet potato with marshmallow?!!
    Srsly though, my comment possibly sounds too critical, Aussies sound like that, but I already love the book and am looking forward to cooking more of your recipes. Including this one for devilled eggs! A nostalgic fave :) x

    Yes older eggs do peel easier even without salt and vinegar in the water. My eggs are always very fresh because I have 10 chickens so I steam them for about 12 minutes. I then chill in cold water. I also tap a few crackes in them as they cool. They peel quite well. I tried it John's way but the eggs were so torn they were only good for egg salad. Another good add in is horseradish to taste.

    I like using Dijon mustard and some ranch dressing along with the mayo. Sometimes I add honey mustard for a change. I never use a piping bad because I find them wastefull. I use and egg spoon and a teaspoon to fill the whites.

    An easy hack to peel many eggs at a time, regardless of age. After the ice-water bath, place 4 to 6 eggs in a container (preferably glass). Fill container with cold water, half-way up the height of the eggs. Put a water-tight lid on the container. Shake vigorously side-to-side, and back-and-forth, for about 20 seconds. Most eggs will already be out of their shells. The rest will peel easily.
    sidebar: I steam my eggs for 15 minutes instead of boiling. then, into the ice-water bath.

    Great tips on the deviled eggs:) An allergy associated with mayo would likely be due to a significant allergy to mold. Ingredients in foods especially vinegar, buttermilk, cheese, some nuts, etc can cause breathing problems with mold allergy, it's not the amount, but rather just the exposure to trip the reaction. My sister has to avoid foods with trigger ingredients, or she will experience significant (need for inhaler) problems in a very short time. Vinegar is hidden everywhere in many food ingredient lists. She has to watch it closely.

    When cooling, I put ice on top of the boiled eggs so they peel perfectly..
    I also add to the mashed yolks, hot dog relish that has mustard and dill pickles in it. I add a little mustard, too, salt & pepper..smoked paprika on top..
    Family and friends always ask for my deviled eggs.
    I also use the hot dog relish to my potatoe salad along with red onion, boiled eggs, chopped celery, mayo, mustard, and black olives..this potatoe salad is my most requested dish. Every bit of it gets eated at parties and BBQs..❤

    Tap the eggs on the counter after the water bath all around the egg until the entire shell is cracked. The shells will stick to that membrane and slide right off super easily in one piece.

    Adding the eggs to the water after it is boiling and then setting a timer gives more consistent results for hard boiled eggs. The time it takes the water to boil can vary, but once it's boiling it maintains the same temperature 😊

    I was brought up with the MOST delish of all ..mom used APPLE CIDER VINEGAR...with mayo ...you will LOVE it and never go back ..mayo first ..mix well ..then apple cider vinegar little bits at a time till you love it...sprinkle paprika on TOP after you're done
    In a pinch if cider not avail then I will use sweet pickle juice

    A sure way to get easy-peel eggs is to gently crack the broad end of the egg before cooking. I discovered this trick about a year ago and it’s never failed me yet.

    Hi John, Have you tried using a teaspoon to slide up under the shell and peel them that way? I have found that it actually works! Doesn’t do so much, if any, damage to the shells either. It’s got to be worth a try 🐣. Happy Easter

    I pass the yolks through the sieve dry. I find it easier, and less messy. I also don't boil the eggs. Bring them to a boil, shut off the heat, time 15 minutes, then ice bath.

    I use mayo, some dry mustard, and dill pickle juice. I rope w paprika and a slice of a green olive with pimento!

    OOOO I LOVE deviled eggs aka stuffed eggs at our house. How do you get your stuffing in the piping bag? I HATE trying to get anything in a piping bag. Great tips on the eggs btw. Definitely trying the vinegar n salt in the water the eggs are boiled in. Thank you

    OMG! Looks sooo yummy. Tell me but do these keep crunchy for long. I've found air-frying is good and quick but they don't keep well after they get cold. Is there something I'm not doing right?

    STEAMING eggs is the biggest game changer for no grey ring, easy peel eggs. Just steam for 10-12mins. Run under cold water when peeling. Also, if you like paprika, try taijin instead 👌

    Deviled crab is still fairly popular too, but I've never heard of anything else being deviled. When I make the eggs, I mix in crumbled bacon with the yolks when I mash them. I could eat an entire dozen of those and still want more.

    I use my 10+ yr old egg cooker. Poke a pin hole in the larger (my cooker has a pin hole) in the larger end of the egg. Done in 10-12 minutes, cool in ice water, tap the pierced end and peel z
    comes off slick as a whistle.

    If you're buying eggs from the store, it should be fine to use them whenever. Not using fresh eggs for hard boiled really only applies if you get them super fresh from a farm or directly from your own backyard.
    Also, adding the eggs to already boiling water makes it easier to peel the eggs. Cooking them in cold water allows the shell to stick to the membrane, making it harder to peel. Starting them in already boiling water prevents that.

      @@jacruick it doesn’t make a difference cold vs room temp. Personally, in my tests, I’ve found cracking might occur slightly more often if they are cold.
