5 medium red potatoes, diced with skin (f using baby potatoes, cut them into halves)
1 pc onion, medium, chopped
1 tbsp garlic powder
1 tbsp kosher salt
2 tsp chili powder
2 tsp smoked paprika
¼ cup extra virgin olive oil
1 cup cheddar cheese, optional, shredded
