@Ehealey121 yep, I agree. Lots of germs running around but everyone wants to call it C. Who cares, take care of yourself, stay home and dont spread germs ( we have been doing that for YEARS) and go out when you are well and symptom free. I am so over 'naming' these germs. It is what it is. On with video....haha

Our comfort food when sick is Khichidi made with rice, lentils, veges and mild spices in clarified butter. Can put it in the slow cooker and it’s ready for supper.
Im chronically ill and have a congenital heart condition. Despite my limitations, I still have passions and dreams and expect a lot of myself. I appreciate you sharing and acknowledging the times of illness and recognising that you are forced to slow down and that it's good to do so (despite my serious diagnosis I sometimes beat myself up for not doing as much). I love cooking great meals for others even though it is challenging for me physically. I always make lots extra- it's a great tool for limited energy!

Crispy fried shallots, crumbled sausage, green onions, a soft cooked egg, soy sauce or spicy chili paste. I make it for my girls now and it’s their favorite too!
Just discovered your channel a couple of weeks ago - loving your videos! Imagine my amazement when I realized we are "almost" neighbors, lol. In the opening shot I can just catch a glimpse of our field on the distant left (formerly an orchard) with our house in the middle. Hope you are felling better soon. Warmer weather is headed our way in a few days, and hopefully the snow will melt.

Great video!!!!!! Retired Executive Chef 27 years and I always gravitate to simple comfort foods that after a long day working on the homestead makes you feel happy. Sure I cooked fine dining throughout my career, but that was to make $$. Real food to our family is good old fashioned meals. Here in central Texas lot's of times is slow smoked BBQ and wild game. We defined comfort food quite differently when I grew up. It was actually pretty much the same foods but there were no differing ingredients. Mom’s meatloaf always tasted the same and THAT was part of the comfort.
Be well soon! When I was a 👧 child, my mother made tortellini soup. The pasta was always homemade in our family as was the broth. Oh to be a child again. I am 71. I still go to chicken noodle soup for comfort. When I can, I make homemade broth but bought tortellini are good if you get the good ones. Ours were chicken and pork stuffed. Our other go to noodles were homemade egg noodles or linguini.

I always have some meals pre made in the freezer to cover me for when I get sick, that way I know even when I don’t have the strength to cook from scratch then there is still something healthy in the freezer to heat up. Currently there is a chicken and veg pasta bake, a cottage pie and a bean casserole.
Me too. Tested negative twice but I was on my back for three weeks. Certainly it was Covid. Two months out and I'm just fatigued and exhausted. Even 15 minutes of chores, or my beloved gardening kicks my butt. It's scary to think thus might be here with me.

Love shepherds pie. it's an old English favourite that I remember my mum cooked often. She used to use mince beef but traditionally it's made with lamb (hence shepherds, onions, carrots, peas, herbs, Worcestershire sauce, tomato paste, lamb or beef stock and of course buttery/creamy mash potatoes. I think it's the best thing since sliced bread when made with mince lamb; comforting indeed. 😋
Oh Shay, you have inspired me to make shepherds pie and a fruit crumble today! When I checked I had everything on hand to make my version of it using up the last of the leeks and potatoes I grew in the summer and meat from the freezer, and I am currently waiting for the potatoes to boil. It is a cold and very windy and rainy day here in the north of England and I am looking forward to having a lovely comforting supper (my dog is looking forward to it as well she keeps sniffing the air🐕🐕🐕😍!). I made some slamming beef stew for hubby and I when he was sick with covid and I was ...just sick. So good! rich broth with hearty veggies. Too bad our oven is dead otherwise, I'd made some quick biscuits too. All vaccinated/boosted but oh well... :p

I hope you are all healing up! I've had a tough run with various health things lately...I've been having to adopt the "better fed than hungry" mindset. Buttered rice, kraut, sausage, and raw red peppers for supper tonight. Shepherd's pie and berry cobbler sounds like an amazing dinner!
Literally just finished being sick here as well, my husband and I mostly, but my 5 kids are out of school and quarantined and so this was very timely for me. Also that "bottle of wine we didn't finish" -- my soul feels that. I miss my normal routine and wine, haha! The dessert you made is considered a fruit crisp! Many people use “crumble” “crisp” and “cobbler” interchangeably when they’re actually different things! Crumble and crisp toppings are pretty similar where a cobbler topping is completely different. A crisp, like what you made is oats, flour, sugar, and butter and sometimes nuts and it is loosely put on top of the fruit. A crumble is flour, sugar and butter and is usually packed more densely by squeezing the mixture in your hand and dropping it onto the fruit in clumps. (Think coffee cake) Then cobbler consists of a wet batter or biscuit dough that’s dolloped over the fruit filling. Then there is even a betty and a buckle haha So many things!

I looked that up and two of my favorite ingredients butter and heavy cream. Yum! I feel this time getting sick has made us slow down and take in life. Before you know it busy times will be here.

I relate to all of this. Something that I have learned through 46 yrs of homesteading is canning soups, chilies, stews of all sorts when I am so tired, or not feeling well with my auto immune disease. Homesteading is hard work, and it's nice to put on a pan of noodles, open a can of sauce, and some bread for dinner. Or open some stew and have crackers, or chili with a quick warmed tortillas on the side.
When we had covid a couple of weeks ago I was literally exhausted by giving something a quick stir on the stove so I went back to bed. I don’t even remember what we ate when I was the sickest; it was culinary survival mode. Thankfully we are all well now. Hope you are too.
Beautifully nostalgic. I love a roast chicken as comfort food, or as a simple pleasures. Its one of the dishes my Mum still makes truly well. As a note, a shepherds pie would of course be traditionally be lamb/ mutton. Obviously all versions are welcome :)

Ahhhh, you and I have been sick the exact same time and with what may be a similar illness. I live alone with six cats and three dogs. They never grew up enough to help out!😄 It is cold and snowy here in New Mexico and it has been a long difficult two weeks. I am glad we are both on the mend!
I hope you are feeling better. I got a very bad sinus infection just a couple of days after Christmas. Just got over that and contracted Covid. I was sick the entire month of January. I totally understand being too sick to cook or clean. I am finally well trying to catch up on housework and enjoying making real good meals.

I feel your pain! I was sick with the flu all last week and I an still not recovered. My two oldest were at school but my younger two were with me while my husband worked and the struggle was real! I cringe at what lunch and dinner were last week 🥴
I’m hitting 3 weeks past my illness and still feel so tired. Come home from work and just go straight to bed. I fully understand about the dishes, I just washed mine today. Meals are whatever and that’s ok too. Praying for you and your family 🙏🏼

I’m 30 days post sickness and fatigue is still an issue for me. Listen to your body and rest when you can. Glad you are on the mend!

Buttered rice with kraut and some raw veg actually is so good to me too. It's the simple things.

the whole family of mine is now just feeling a bit better too. Those two weeks...ugh..still a sneeze time to time and a runny nose. gotta love shepherd's pie. I have never made it, and creme fraiche? I looked that up and two of my favorite ingredients butter and heavy cream. Yum! I feel this time getting sick has made us slow down and take in life. Before you know it busy times will be here.

I relate to all of this. Something that I have learned through 46 yrs of homesteading is canning soups, chilies, stews of all sorts when I am so tired, or not feeling well with my auto immune disease. Homesteading is hard work, and it's nice to put on a pan of noodles, open a can of sauce, and some bread for dinner. Or open some stew and have crackers, or chili with a quick warmed tortillas on the side.
When we had covid a couple of weeks ago I was literally exhausted by giving something a quick stir on the stove so I went back to bed. I don’t even remember what we ate when I was the sickest; it was culinary survival mode. Thankfully we are all well now. Hope you are too.
Beautifully nostalgic. I love a roast chicken as comfort food, or as a simple pleasures. Its one of the dishes my Mum still makes truly well. As a note, a shepherds pie would of course be traditionally be lamb/ mutton. Obviously all versions are welcome :)

Ahhhh, you and I have been sick the exact same time and with what may be a similar illness. I live alone with six cats and three dogs. They never grew up enough to help out!😄 It is cold and snowy here in New Mexico and it has been a long difficult two weeks. I am glad we are both on the mend!
I hope you are feeling better. I got a very bad sinus infection just a couple of days after Christmas. Just got over that and contracted Covid. I was sick the entire month of January. I totally understand being too sick to cook or clean. I am finally well trying to catch up on housework and enjoying making real good meals.

I feel your pain! I was sick with the flu all last week and I an still not recovered. My two oldest were at school but my younger two were with me while my husband worked and the struggle was real! I cringe at what lunch and dinner were last week 🥴
I’m hitting 3 weeks past my illness and still feel so tired. Come home from work and just go straight to bed. I fully understand about the dishes, I just washed mine today. Meals are whatever and that’s ok too. Praying for you and your family 🙏🏼
