    Tomato Jam
    This is my secret weapon for winter breakfasts. It’s like a grown-up version of ketchup that is equally welcomed by all on top of crispy hashbrowns or alongside eggs. It has a beautiful greasy-spoon/diner vibe about it’s flavor that I simply adore - and I’m sure you will too. The recipe can easily be halved or even quartered to fit your needs.
    10 pounds tomatoes
    1 ½ pounds onion
    2 tablespoons cumin
    1 teaspoon ground clove
    1 teaspoon red chili flakes
    1 cup apple cider vinegar
    4 cups honey
    1. Process the tomatoes and onion in a food processor or blender until they’ve been chopped up very fine. Add them to a large stockpot. You may need to do this in batches.
    2. To the stockpot, add in the cumin, clove, chili flakes, vinegar, and honey. Bring the mixture to a low-simmer, stirring as needed to combine.
    3. Allow the mixture to simmer, uncovered, for about 2 hours (or until it’s overall volume has been reduced by ⅓). If you’d like an even thicker jam, you can allow it to simmer for longer - this will also concentrate the flavors further.
    4. Carefully ladle the hot mixture into jam jars and put on a new, clean lid and band. Flip the jars of jam over on your counter and allow them to sit, undisturbed, for a day before flipping them over, removing the bands, and storing the jars away in your pantry. Alternatively, the hot jars of jam can be processed in a water canner for 20 minutes and allowed to seal accordingly.

    Re: the squash, i have the same issue with my family. This thanksgiving i had a ton of left over baked squash because no one was into it. I love it and didnt want to waste it so i converted a banana bread recipe and used the squash instead. I also added leftover cranberry sauce and some maple syrup. Put about 6 loaves in the freezer. It was AMAZING and all the loaves were gone within in a month. A new family breakfast favorite. Batter worked well as pancakes too! Another new family favorite:) Basically u can use squash anywhere you would use apple sauce, sweet potatoes, pumpkin or banana. There is also a huge difference in taste and texture between varieties. We dislike spaghetti squash, usually ate acorn, but it doesnt have much flavor, comparatively. Last 2 years we have discovered butternut and delicata and will never go back. What was left of that t-day squash was turned into a ginger vanilla pie on almond shortbread crust ...a delicious alternative to pumpkin pie, which we dont like. Problem solved!

      And you can also purée and put in brownies. Or when my grandkids were little I would dip chicken pieces in butternut purée and then bread for nuggets

      I use butternut to make pumpkin pies. But that won't work if people don't like pumpkin pies. My other suggestion is baking into a sweet bread idea like mentioned above.

      This sounds great! We love butternut squash, but I have also roasted and puréed and mixed into tomato feta pasta and it makes the sauce creamy.

    Hey there! A little tip on using up squash for those who don't like it. (Also applies to sweet potatoes or other root veggies). Roast them up and mash them into taco meat or beans with taco seasoning. The heat and strong flavors can mask the flavor of the squash but it also benefits from the sweetness. Load into a tortilla and top with fresh lettuce, cheese and salsa. Also works in enchiladas.

      @@meh5069 It does a bit, but not overwhelmingly so. Kind of like when you stick corn in chili? That would be my closest approximation. There is sweetness but it's also salty and spicy. I don't like sweet entrees normally, but I do like this. Sweet potato also works in this application and I normally can't eat those at all.

    Lol, we're in the same boat with the butternut squash! We only did one plant and still got 14 huge butternut squash! I discovered that if I spiralize them and freeze it, I can toss handfuls into pretty much anything and it turns out well! Our favorite is sausage and butternut egg casserole!

    Cube and roast the butternut squash with brown sugar, cinnamon and pecans. Use it as pie filling, in cookies, brownies, quick breads, and muffins like you would pumpkin, grate it and then freeze it in small portions and use it with sage and sausage in frittatas. Use the grated squash to make hash (bacon, ham, sausage), sprinkled in soups, mash it with potatoes, etc… endless possibilities and most of them contain prominent flavors that disguise the squash flavor.

    I add squash to strongly flavored foods like chili and curry to use it up, the same way zucchini is often used to bulk up canned tomato sauce or canned soup recipes.

    We do not eat squash here at my house, but I know a few people that make squash bars and squash as a pumpkin substitute for pumpkin pie.

    We call butternut squash butternut pumpkin here, and my kids that don't like it, will eat pumpkin scones made from them by the dozen! Because butternut is kind of sweet, it makes really yummy drop scones and we eat them hot with butter.

    I totally agree about the peeling tiny cloves of garlic. Big cloves are so much better!

      Agreed! The best way to use the soft neck is slice the top off and roast it then you can just squeeze out the soft cloves all at once.

    My cousin made up a butternut squash recipe, and it’s amazing! Cube a squash into about 1-1.5 inch pieces and put them in a casserole dish or something like it. Add a bunch of butter (he never measures anything), cayenne powder, chili powder, chopped walnuts, and brown sugar. Mix it all up and bake it til the squash has a nice texture. This is as close to a recipe as I’ve gotten from him, but it’s so good! I call it Jason’s sweet and spicy squash. I eat it with dinner, then sometimes with ice cream afterwards.
    Edit: I don’t know if he peels the squash, or just cuts off the outside 🤷🏻‍♀️

    Try making porridge with the squash, squash bread, pancakes, squash French toast, ice cream, milkshakes puree them and put them into anything

    Very inspiring video ! Living in a tiny appartement in Paris area, I'm not able to cultivate a lot of food in my tiny balcony, but I do my best to enhance my skills regarding gardening and preserving year after year. And your cottage garden is a true motivation for me.
    I'm in love with butternut squash, but my husband don't like it. So I used butternutt purée in two recepies where he can barely recognise it :
    -butternut risotto with white wine and "infusion" of parmesan crust + parmesan
    -butternut linguine with oat cream, roasted garlic and fried sage + parmesan
    I planted zucchini last year, and harvest almost nothing due to my poor sun exposition (east), but my goal was not to harvest the fruits. In fact, I planted zucchini for the delicious but expensive flowers. I made a ton of zucchini flower beignet during Spring and Summer So I plan to do the same this year.

      Hi. I don't know the details of your balcony but have you seen this ua-cam.com/video/wL9C0i5_z5g/v-deo.html. I think her balcony was south facing, and you may already be growing some similar produce, but I thought there may be some ideas there to help you grow more.

    With winter squash I cook it in roaster and can it. It's good in cake pie custard and bread. Even make keto pumpkin donuts!

      To my palette, carrots, pumpkin and squash have the same moisture content and texture. Squash can be used in carrot cake instead of carrots, in pie instead of pumpkin, in breads instead of pumpkin or zuchini. Muffins, scones or sweet breads!

    butternut squash pancakes, fritters, soup, curries, and mac and cheese is how i like to have them! I also like to use it for my pumpkin pie. Squash is just so nutrient-dense and last so long that it is a must to grow for me since it grows so well where I live. I usually gift to friends and neighbors during harvest season and rarely do folks feel like it's a burden since it stores long and saves them a heavy grocery trip! I also like to toss diced butternut squash in a warm kale salad in the winter with some cranberries. We grow enough to get us through February. After that we like to have sweet potatoes, honey nut squash, acorn squash from our winter farmers market. We've learned to eat more seasonally and to preserve summer treats when we get bored to mix it up.

    Tip for the butternut squash, you may have tried this , my stepmom is a chef and taught me to dice it up cook it in a pan with butter and add brown sugar or maple syrup and Italian seasoning. Absolutely delicious like that

    Squash-recipe-tip: Risotto! Cut the squash in small pieces, bake in the oven until caramelised, blend and mix into a ready risotto. Toasted almondslices on top and it’s sooooo delicious:)))

    No one but me likes it either. We are urban so ours comes from the store. I have 1 squash left, an acorn and I have 2 sad cabbages I bought to make sauerkraut. Now, I get to have sauteed sausage and onions.

    As a professional mom, (foster parent) I have been an expert at training children to like certain foods. I recommend u continue a less abundant amount of the squash and just sautee it up or make an occassional dish where it is the star. With no expectations, put it on their plate. They say u have to put a less liked food on a plate about 100 times before a child will turn to it (learn to like it). It's a lot of work and I certainly would understand if you are like "no way" but the gift of giving a child a broad taste for food, because they become an adult with a broad palate, is invaluable.

    I tried a different squash that taste 10x's better than butternut squash, it's the buttercup squash and before you give up give this one a try. I think it is great on it's own, soup, or in pasta.

      Buttercups ARE tasty! But, they are by-Thanksgiving squash. They don't store well due to their little buttons underneath. Butternuts store into the next summer and only get sweeter as they go. 🙂

    With butternut Shaye, I cut them up with sweet potatoes and bake then really well,,,I mean until they start to caramelise because they get really sweet. I also use cumin on them with harissa for a bit of a kick in a Moroccan Lamb Stew. Add in a few preserved salted lemon pieces, couscous with charred peppers and zucchini, throw in a mint & yoghurt dip with flat breads,,,, and that's nearly an authentic dish.     My mother-in-law made "squash pudding" that was delicious. Do not have the recipe, was a lot like pumpkin pie filling but a bit softer, made with butternut squash, eggs, brown sugar and lots of cream. Topped with whipped cream. You might try it.

    Use the squash in place of pumpkin, also I would freeze dry it after cooking and mashing and use it when you need it in your recipes. Squash pancakes in place of pumpkin. Squash bread in place of pumpkin. So many ways to use it and they will never know !!

    Re:squash, my 4 kids didn't love but I kept growing it, mostly because it does well here, plus I like it. Fast forward a few years, my oldest is married and gone and the remaining 3 are 20, 18 and 16years old. The 18 year old now loves buttercup/turning squash, straight up or made into soups. So I harvest them small enough that she and I can enjoy a smaller squash. Don't give up, you are training lifelong healthy eaters!

    I just used up a butternut squash from last year by making gnocchi. Used it in place of the traditionally used potato. Super easy and tastes no different!

    For jalapenos, remove the seeds and stuff with boursin cheese and top with some shredded parm to crisp the top. They are amazing!! You can grow the mild ones too.

    I grow a small amount of butternut style squash, harvest them, cure them, then immediately roast, puree, and freeze them. Ravioli stuffing, spaghetti sauce, and soup are the only things we like from the squash.

    The only way my family enjoys butternut squash is oven roasted with savory seasonings. I add it to a bed of wild rice, sautéed spinach, roasted cod filet and topped with nasturtium pesto. Yum!!

    Two years ago I got almost 40 butternut squash off of a single pot a bought at Tractor Supply! They stored well, and I had them for over a year. A few went out to the chickens. My family wasn’t that keen either, so I ended up blanching and dehydrating it. Now I can use smaller amounts in recipes without having to use a whole squash.

    Try baking with squash. My mom makes butternut squash rolls that are delicious. Ive seen people make squash pie. I'm assuming you could create or find recipes for a squash bread (like zucchini or banana bread), pancakes/waffles, cake, etc.

    You can bake and purée your squash like pumpkin and sub it in your recipes for pumpkin bread and muffins. My kids don’t know the difference!

    Curried squash soup is one of our favorite breakfasts. Actually it's my 4yo's favorite food period. A winter squash of any kind except spaghetti, onion, apples and sweet potatoes if you have them, garlic, ginger, yummy broth- simmered until cooked and then add red lentils if you want a little more substance. Blend up with immersion blender after lentils cook, adding coconut aminos, nutritional yeast and a bunch of butter. Spices you add to taste are lots of curry powder and cumin.
    THEN: serve with an over-easy egg and kraut (a purple kraut or a curtido are great here!) and it's an amazingly filling breakfast that doesn't take long to heat up in the morning. I also add sprouts if I have any. Or crumble some sweet potato chips on top with sunflower seeds for a nice dinner.
    Thanks for the video!! What do you use all your storage cabbages for? I make a ton of krauts and kimchis but we don't tend to use the cabbage in meals so would love advice.

    We love squash.
    One way we do it is to cut them in half, clean the seeds and bake it. Few minutes before we take it from the oven I put some sugar and bake it some more to caramelize the sugar.
    The left over, I scoup it out and mix some sugar (if needed) and bake it in any king pastry dough or make a pie with some nutmeg and cinnamon

    On the Simply Living Alaska channel I could have sworn they made a pie out of butternut squash. Not sure how it would taste, but it does sound good. My favorite is butternut and sausage soup, but I'm not picky;) Can't wait to see what you come up with.

      There are recipes for butternut squash pie.
      Tastes pretty close to pumpkin pie.😊
      I had volunteer butternut squash that took over my backyard garden.
      I harvested a huge amount and canned it in chunks.
      When I want to make pumpkin bread or pie,I open up a jar,drain and mash and it's delicious.

    My husband is also not a squash lover. I use winter squash in baked oatmeal and he likes it. 1 cup squash purée, 1/2 cup brown sugar or maple syrup, 1 cup milk (of any kind), 2 eggs, 3 cups old-fashioned rolled oats, 1 teaspoon ground cinnamon, 2 teaspoons baking powder, 2 teaspoons vanilla extract, and one cup mix in of any kind (I like chocolate chips and walnuts). Mix it all together and bake in a 9x13 inch baking dish for 30 mins.

    Take the butternut squash and roast them in the oven like you would pumpkin. Then puree it and put 2 c. In freezer bags and freeze them. Make pies, muffins etc with them as you would pumpkin puree. Problem solved.

    Butternut squash can be baked and pureed then mix a bit in with Mac n cheese. Or I peel, chunk. And roast with potatoes and other veggies.

    Thank you for sharing. You’ve done an awesome job. I too go through the potatoes this time a year. I save the ones which have sprouted in brown paper bags being careful not to over fill the bags. When it’s time to plant the potatoes i use the ones that sprouted first. Over the years I’ve found that these potatoes grow faster so we can enjoy an earlier crop.

    What kids don’t like roast pumpkin or pumkin soup?
    My aunt use to use pumpkin and cottage cheese in her lasagnes and it was delicious.
    Some time she used egg plants.
    She had three boys and two girls and making them eat veggies without knowing it was super important.
    I use pumpkin and peppers in frittatas makes it fantastic!

    same thing about squash here too. however, on our property, winter squash is one thing we can grow that could be used to supplement chicken feed. so we've considered that purpose. Some of us DO like spaghetti squash better than others.

    For the squash/pumpkin, we love to use them for scouse, I will make bonebroth regularly and to bulk the broth i will add meats like bacon and dark red meats, chanterelles or other edible mushrooms, onion and garlic, and squash/pumpkin. Letting it simmer until the squash/pumpkin is puré and the meat is tender, served beside a meal or as a meal alene served with pickles beets and ryebread and butter is really good! My daughter will eat a lot when we make this, try it!

    Butternut squash can be best utilized in baked goods as a puree. You can add the puree to any dough and in cookies, muffins pies etc. It's really good to add to dinner roll dough, I add rosemary, thyme, garlic. Makes the best bread rolls

    A very good video. About the squash? Just my own idea but I'm not fond of it either .....let's say we grow some anyway since they store so well. If times ever got really lean in the future months you could make something delicious from them. I always think like this because we aren't picky when it's all we have to keep from starving. We would be happy to have grown some for just this reason.

    You mentioned your dried tomatoes. We dehydrate some not to the completly hard stage still a little soft then cold smoke them and put them in olive oil the flavor is great especially put on cream cheese on toast square. try this for a real treat

    Re squash: there's a great recipe in one of the Moosewood cookbooks called "Winter Veggie Stew" that can have various root veggies pinch hitting for others. It has a peanut butter-tahini based sause and you can use firm tofu or other type of protein. Perfect for this time of year!! Yours in Gratitude

    OMG!!! THE SQUASH!!! Bake it... l put in my mixer& it smoothes it out& the paddle hangs onto the tough fiber. Just freeze or can it in 2 cup measures. Pie, Bread, Bars, Muffins, Waffles... anything you would use pumpkin for you can do with squash!!!💕

    Re: squash. I’m Hispanic and we eat a lot of rice and beans. I add it to the bean’s cubed up. It gives it a sweetness. Squash or pumpkins. Also pumpkin chili always disappears.

    You can use the squash much like pumpkin puree. We love pumpkin chocolate chip muffins with scrambled eggs for a filling school morning breakfast.

    Great video! I would love to see an entire video dedicated to produce going bad and knowing what needs to be tossed in the compost bin and what is salvageable. Sometimes I'm left wondering if it's okay to pick off the icky parts or if it's going to make me sick and I should cut my losses.

    Throw squash into a chili, pureed. You get the great vitamins that way. Or turn it into a dessert. No need to treat potatoes. Once a month, de-sprout them by hand. Doesn't take long. When it's time to plant, use your own sprouted potatoes.

    We don't eat squash here. either. I worked hard one year, baking it, cutting it up and freezing it in air lock bags, and it went all to my sister's family, who loved it! At least it wasn't wasted.

    For the butternut squash I have to ways I like to use it that my family and friends love. Cooking it is the same way for both. I simply sautee cubes of squash with salt, pepper, some paprika and cayenne (or just salt and peppper) in a bit of olive oil until the edges are nice and crispy. Then I either toss it in a salad or in what I call a cooked salad. Like a stir fried greens dish with onions and garlic. The flavor of the squash becomes so appetizing.

    You can use the butternut squash as you would pumpkin in pies, muffins, custards etc... We like it roasted with potatoes and carrots and a little garlic and Rosemary. I also sprinkle a little brown sugar and cinnamon or maple syrup on it after cutting it up and roasting it in a baking dish.

    Jalapeños are a staple for us. One way i store them is to make "cowboy candy". Love to chop up the "CC" and add to other dishes for that sweet but zingy finish. One favorite dish is black beans with chopped sauted onions and chopped cowboy candy. I often add cubed roasted butternut squash to this black bean dish. ADDICTING.

    I get what you're saying about the squash. My son LOVES it. But I'm not as much of a fan. It's really great when I eat it but it's never what I reach for. Two of the ways I do really enjoy it are in soup. I make a squash and red bell pepper pureed soup that's fantastic. And I also like to use it in place of pumpkin in a pie. I actually prefer squash pie to pumpkin. Hope that helps you get just a bit more squash in. Honestly, I pick up about 10 to 20 squash from the local Amish stand at the end of the season and call it good. It's all I need.

    The only way I can get my 4 kids to eat butternut squash is souffle or pie. It's a vegetable for dessert. Can't beat that.

    I love to cut squash into tiny pieces, roast them with potatoes, with oil garlic and herbs. and once cooked, I put soft boiled egg on it, so the creamy texture of the eggs cover the sqaush. it makes the squash warm and creamy. try that!

    You should freeze dry chopped and sliced onions because they’ll be ready to use and will last ages. You can also can potatoes or freeze dry those. Make cubed or mashed and they’ll just chill on the shelf.

    Love this video Shaye! For what it's worth, you feed your family very well with healthy foods. If they don't like them, don't force it. Grow a few plants for yourself. My suggestions on how to handle the ones you have left is to dehydrate them and turn them into a powder. Add a scoop to your pancake recipe and I doubt they will know the difference ;) You are such an inspiration!

    Cut the squash in half, seed it, fill with ground beef or hamburger substitute, plop some squares of butter and top with brown sugar, bake for 30-45” at 400.

    To make butternut squash delicious you should roast it! The most decadent version would be roasting it without the skin until it's got golden almost crisp caramelised edges
    It makes it SO sweet
    In my family we will even roast it before putting it in soup to get that extra delicious flavour

    With butternut squash and my family, sometimes instead of potatoes I’ll cube them and make a hash out of them. Since I live in NM I add green chile. You can try that with your little red peppers. You can make a wonderful butternut squash soup with bacon and try a different spice with it, maybe curry. You can really jazz up your butternut squash. I really like the ravioli. Thank you for showing your last part of the crops. You all really work hard.💕❤️

    I would love a video on how to use fermented foods. I didn’t grow up eating fermented food, other then some yogurt and pickles here and there. I want to add to my family’s diet but I really just don’t know how/what to eat and how to serve it. An entire video dedicated to some real world examples from your own kitchen would be so great!

    Growing up we cracked open the walnut by putting it in a hinge of a door. Fun activity. We have to careful so it just cracks and then just de-shell it.

    Here in the PNW potatoes flourish but I haven’t been successful with sweet potatoes yet. Weather plays so much on our successes and failures in the garden. Blessings.

    Another way to use butternut squash is to make a Mac and cheese sauce!! You just steam carrots and squash, purée smooth and then add some cream cheese with salt then put over pasta!! It’s soooo incredible.
    That’s the only way we eat Mac and cheese these days!

    My kids hated squash and so I would cut it in half, make slits in it and put in butter, and honey and sprinkle with cinnamon and bake it.You can also bake them with a little maple syrup and butter. Maybe the sweetness will inspire them to eat it.

    I have got loads of butternut squash left too, I bake it whole then add to pasta with a bit of oil and seasoning, maybe some ricotta, it melts down and makes a nice and easy pasta coating. Might fool the children.

    Our favorite way to eat butternut squash is to cut it up with onions, bell peppers, etc., sprinkle with soy sauce and garlic, then roast it in the oven .... we can't get enough of it.

    Some tips for your excess butternut squash: Puree and add to Cornbread, Biscuits, Flatbread, Focaccia, Homemade Pasta or Crackers. My husband and I are not big fans of this veggie either but would frequently receive it in our harvest subscription. These are the ways I would use it up so that it would not go to waste and we could tolerate it hehe

    Re butternut squash, you can use it to make 'pumpkin' pie. I've used that here in the UK instead of the regular pumpkins since those are usually out of stock in the stores here when US Thanksgiving comes around.

    Spicy corn and cheese squash casserole. Roast squash, purée, add frozen corn and spicy peppers of choice, mix with shredded cheese. Bake. Greens might go well there.

    I just made cinnamon and cayenne squash with candied bacon. I also make a squash cheesecake and squash and apple butter. It may not be favorites for your family but maybe you can get them to finish up what you have? Roasted squash with parsnips, beets, brussel sprouts and bacon is a favorite of mine.

    My husband does not like the jalapeños because they’re too hot for him but at Baker Creek seeds I found a no heat jalapeño so you get the good flavor for poppers and I can make a salsa for him out of that and then it’s not too hot and I can use it in other foods to get that really good jalapeño flavor without the heat I just thought I would share. I have gardened in the past but this is my first year I’m starting my seedlings so I’m excited I’m excited for the garden to be able to be planted and to see what I can get to harvest from me and my husband and to share with my family and my church family the one thing I don’t need to make this year is any jams jellies are butters because I still have so much and I don’t know what to do with it all

    My kids will only eat butternut squash roasted. I cube it up after its peeled and put it in a baking dish with olive oil, salt, pepper, and italian seasoning. I hand toss it in the dish with the oil and seasoning to make sure everything gets coated then roast until soft. Our family of 5 can eat 2 good size squash at a time like that. I have also heard you can mix it in with pumpkin and do a mix for pumpkin pie puree

    Squash recipe! Looks like you’ll have quite a few. I do a breakfast hash with bacon pieces, sage, broth and oil/butter. Just cube the butternut and cook like potatoes, getting a little browning on them. Other ingredients to your liking. ❤️

    Potatoes : Vitelotte potatoes, try a small row of these beauties If you can get them. They are a late variety that are blue, tasty and used to the southern french climate which is also dry and hot. Maybe you'll have some sucess with them.
