Moist Lemon Yogurt Cake (French Grandmother's Cake)

- Light, Tender, Moist with a lovely lemon flavor is the best way to describe this lemon yogurt cake made just like the French grandmothers make! It is the perfect size to feed 2-4 people.

Ingredients:
▢3/4 cups all purpose flour
▢1 tsp baking powder
▢1/4 tsp salt
▢1/2 cup granulated sugar
▢1 tsp lemon zest or zest of one lemon
▢1/3 cup whole milk plan Greek Yogurt
▢1/4 cup canola oil
▢1 egg large
▢1/2 tsp vanilla extract
Lemon Glaze
1/2 cup powdered sugar
dash of vanilla
enough lemon juice to make a runny glaze
Directions:
Preheat oven to 350 degrees F.
Spray a 3 cup bundt pan, 6 inch cake pan or a 7.x 3 inch loaf pan that holds 3 cups of liquid with non stick baking spray. Line the bottom of pan with wax paper or parchment paper..
In another bowl combine sugar and lemon zest. Stir to combine the two or use your fingers to rub it together.
Add yogurt, oil, egg and vanilla to sugar mixture.
Add in dry ingredients - flour, baking powder and salt.
Gently mix in the dry ingredients into the wet ingredients, stir just until flower is absorbed. Don't over mix.
Mix up glaze while cake is baking.
Pour batter into prepared pan and bake for 30-40 minutes or until a toothpick comes out clean.
Let cake cool in the pan for just a couple minutes and then put onto a wire cooling rack.
Brush cake with glaze until it soaks into cake, both the top and the sides.
Dust with powdered sugar if desired.

I made this yesterday because I like anything lemony, and anything French…and easy for two! It was delicious warm but cold just out of the refrigerator …OMG ! (especially at midnight!

Very easy to make but very sweet for my family although i already reduced the icing by half. Maybe i will only dust the top lightly next time without the icing and using lemon yogurt for the cake for extra kick

I have just made it to take to some co-workers this evening. In your video, why didn’t you flip the cake over? It looks a bit lop sided. Plus, don’t you put it on a pretty plate instead of on the rack? Just sayin’.
I rather like my vintage cooling rack but a pretty plate works too. Serve it with which ever side you prefer facing up. Enjoy!
