Slimming World vegan chocolate mousse recipe - 4½ Syns per serving

    4½ Syns per serving
    Serves 4
    400g can chickpeas
    ¼ level tsp cream of tartar (or lemon juice from an unwaxed lemon)
    2 vanilla pods
    3 level tbsp sweetener granules
    4 level tsp coconut oil, melted
    2 level tbsp cocoa powder
    1 banana, thinly sliced
    15g roasted chopped hazelnuts
    Fresh redcurrants (or other berries), to serve
    Drain the chickpeas over a bowl to catch the aquafaba from the can. Using an electric whisk, whip the aquafaba until it becomes foamy - around 5 minutes. Add the cream of tartar and carry on whisking on a high speed for 5 minutes or until you get stiff peaks.
    Split the vanilla pods and scrape the seeds into the aquafaba mixture. Slowly whisk in the sweetener in 3-4 batches, allowing enough time for the sweetener to dissolve.
    Mix the coconut oil with the cocoa powder until smooth, then fold it into the aquafaba mixture, taking care not to knock out the air.
    Slice the banana and divide between 4 glasses, spoon in the mousse and chill for 1 hour or until set.
    Sprinkle the hazelnuts over the mousses and top with the redcurrants to serve.

    I dont like coconut .does it need coconut .??
    What can i add instead .?

      Hi Levana, I've checked with the food team and they've suggested another oil, eg olive oil, sunflower oil, avocado oil - that would solidify when cold (so the mousse texture is not too sloppy) But they did stress that we haven't tested it using other oils, so you might need to be willing to experiment a bit! I've seen some vegan chocolate mousse recipes with blended tofu too - which might be another alternative to try. Let us know how you get on? Love Gemma Slimming World video team xxx

      Coconut oil doesn't actually taste of coconut if that helps.
