    I made this!! delicious!! i used premade curry paste and added 1 cup chicken broth to make it more brothy!

    Ok, Been cooking mussels a long time.
    Last week I had them in Coconut,Curry ,Mango sauce with fresh chunks of perfectly ripe mango's. It was soooooo good,I saved the left over sauce and made Coconut,curry,mango over a bed of Chicken,and egg noodles.
    ANYWAY,I have a question for Jeremy.
    Instead of Palm sugar,how about substituting that with Red Thai Chili Sauce ? You get the sweetness and the mild heat from it . What is special about palm sugar ? Never had it . I would like to see a similar dish but use both Black Mussels and New Zealand type , maybe throw in some little neck clams ?
    Daym, I am sooooooo hungry ! ! !

    Most popular thing here in Germany is to cook them with a mix of herbs in white wine. You cook your veggies in the wine, first. To give 'em time to share the aroma with the wine. Veggies are: leek, onions, (tomatoes, in my case) and carrots.
    To be served with baguette. Adding italian parsley. Maybe even chives, before serving.
    Heavy cream can also be added to this. Just when you add the mussels.

    My goodness, this looks good! Love my mussels and seafood, love Thai, so this is a perfect combo. What can we use if we can't get our hands on galangal Jeremy?

    hope I am spelling this right but. The Galangal in this recipe is Similar to Ginger but more mild Correct me if I am wrong I am self learning Asian Cuisine Ingredients Spices Herbs Veg and so forth especially Thai Cuisine Thanks for such a great Recipe gonna make it this week.

    It looks really good, too bad I can't make it. To my youngest daughter coriander tastes like soap. 😪 Any alternatives, or just all basil.

      It's a genetic thing. Fresh coriander tastes like soap to me, as well. I always substitute it with with italian parsley.

      You could try parsley, or just leave off the coriander. It's not essential to the flavour of the soup.
