    Jeremy, are you using a seasoned carbon steel wok in this video? Is it ok to cook vinegar in a carbon steel wok? will it give off a metallic taste to the food? Please advise. Thanks!

    Great recipe, so easy to make :) My top tip: substitute the tomato puree for chipotle pepper paste for a smokey bbq taste sensation!

    Good vid. Would be great if you started with what to do when boiling...spices, cold or hot water, belly cold or room temp.

    Great recipes for pork belly! I just bought a primal at costco. With Ruby's Vindaloo I'll be set. The other half I plan on making American bacon. So yeah that's my favorite use for pork belly.

    Great dish! I made it yesterday and it was fantastic. Did at some onion to the dish at add some more color. There is one downside. I made it for myself, but everyone loved it so much, now I have to prepare it for the whole family. I think I need a bigger wok!

    If you’re going to use thin slice pork belly, what are your thoughts on thick-cut North American bacon? Does the processing change it too much?

      The bacon would be much saltier, use a bit less light soy to compensate

    Can this sauce recipe be used for pork trotters or hocks? I might even try it with some country ham that I have available, but I'll have to pre-cook it enough to remove most of the saltiness. This dish looks amazing so I'll be trying it in a few days. Thanks for sharing. Now I must eat. Lol.
