Never thought about canning lemonade of any kind.
Although I love the product and its great to have on the shelf it isn't cheap to make and you can often find it cheaper at the store but if you do happen to find everything on sale then this is a great option for a summer drink. Cheers, Colleen

Happy Anniversary Colleen! My granddaughters are going to love this being canned and on the shelf. They love going grocery shopping in my pantry. Our temperature in Sacramento, California today is 89 degrees. We are in the middle of a heat wave. What is really nice is that we have the Delta breeze that cools us down in the evening. I made this tonight, SO delicious! I bought 40 pounds of lemons today and I doubled this recipe which took almost 15 lbs. 🙃 Now to find a lemonade concentrate recipe🤓

I have been trying a new hack i saw you put your lemons in a big jar and cover with water.They are slicebale and juicable after 3 weeks in water next im going to try zesting. We like lemonade and i will probably try this. I am trying my hand at strawberries. I will be using sugar alternative also.

Happy Anniversary Colleen. Im wondering if the reason you didn’t get the yield of pints expect could have more to do with the amount of strawberry purée you had? You mentioned the recipe called for six cups of strawberries and I didn’t think you had that quantity once it was puréed? Im wondering if that could have been the reason rather then the sugar? I don’t understand why sweetener vs sugar would have had such a dramatic difference in the results? Just curious. Im going to try using Allulose and monkfruit as my sweeteners of choice and perhaps some liquid stevia. I don’t expect the flavour/sweetness will change after the canning process? My concern is with using sweetener in place of sugar which is necessary because my husband is diabetic that if the sweetener doesn’t bulk up the way sugar does then there is a lot more fruit in the mix which would result in possibly too much fruit in the end result? Also I’m wondering if you used the lemon peels after you extracted the juice? Im thinking some candied lemon peel might be nice just not sure if I can make that with sweetener instead of sugar? Have you tried that? Sorry for all the questions. 🥰🙏🏻❤️🇨🇦
Thank you for the well wishes. We really appreciate them. I think you are right that the puree strawberries should have equalled the 5 cups. I find that Splenda, which I use to replace sugar in certain things is way sweetner than sugar. The directions says to substitute it cup for cup but I just found that too sweet. I've never had any problem with taste difference using the Splenda but I have been using it for years and have become quite used to it. I hope that helps? Cheers, Colleen
