Thanks for the details. The point about the anvil is well made, you don't want sharp edges on any kind of impact tool for a whole host of reasons. I think likely there would be blowback from the maker/fans due to those edges being scrapers - however, the first one if sharp really compromises high grips and second sharp edges on that anvil are a bit of an issue. Plus sharp scraping edges should actually be just that, actual sharp 90 degree corners. You don't want to run your fingers down the edge of a freshly cut cabinet scraper - and frankly for a heavy use knife I question sharp edges on the spine, you can always scrape with the main edge anyway, just don't do a full 90 as it would be too aggressive and tend to skip.
Can’t wait to see your testing. Also the reason that WC knives have a true 90 degree spine is because it’s easier to remove it and make smooth that to put it on .
Always thought how the heck one would sharpen and thin this blade on a normal stone. No give me either a flat edge then a belly and a point or a gentle curve from choil to tip. Curves that goes in and not out does that make sense? Makes me crazy as the edge doesnt make contact with my stones hehe
