I log in an app and in a log book. The only dives I haven’t logged were the exercises and test dives from my Rescue Diver cert course. Mostly because a bunch of little dives for like 10 minutes, up and down to maybe 20 or 25 ft really didn’t feel like dives, even if the course counts as 5 dives for PADI. I use an iOS app called Dive Log that’s really good and connects to any Bluetooth enabled dive computer.
Here in Quebec province, you need to do at least 10 dives in 3 years to keep your FQAS certification card up to date and to allow you to dive in Quebec diving spots. We are the only province that ask for this sadly. And the logbook is obligatory to show proof of your last 10 dives. But personally, I use a custom logbook I made in Photoshop, and I always log them every time and write a long story on the second page in which I describe what went wrong or what we saw and what's to improve and so on. I might use that later to write a Mémoire of a Diver book. Who knows hehe
It's personal preference! I like watch style but I prefer that only when it's air integrated so I can have 1 less hose: Shearwater Teric or Garmin. Those are bougie options though. Otherwise I prefer a computer and pressure gauge combo like the Aqualung i550c

How does that book react to stamps? I would imagine those bleed all over
Probably would bleed. They will send test paper if you request it so you can try different inks

Do you sell that log book at the shop or does it have to be purchased online? My orig logbook is a bit of a mess
Only online but the dive shop does sell log books as well! Just not custom or waterproof ones.

What is considered a log dive? Depth/time? Environment?
The general rule of thumb is 20ft for at least 20 minutes in open water
