A Visual Guide to the Cuts of Bison: Where Every Cut of Buffalo Comes From | By The Bearded Butchers

  • Witness The Bearded Butchers, Seth & Scott, break down half a bison and lay the individual meat cuts out on a diagram explaining where every cut of bison comes from on the carcass. The Bearded Butchers also review the different types of cuts, such as steaks, roasts, trimmings, bones, and fat that come from the animal.
    The video starts with Seth and Scott splitting half a bison carcass into the front and hindquarter, followed by laying the intact quarters together on the diagram, making a visual guide of the bison before the cuts begin.
    Once that is complete, Seth leads the audience through a step-by-step process of the breakdown of an entire half a bison. As The Bearded Butchers work, they explain the different cuts of the once-mighty beast.
    Once the bison half has been completely broken down, they lay the individual meat cuts out on a diagram of the carcass. This allows the viewer to see exactly where each cut comes from and how it is related to the other cuts. The video also shows the total yield of meat from the carcass, which can vary depending on the size of the animal and the quality of the meat.

    I am 71 years old born and raised on a farm in Missouri we butchered our own meat. But I have enjoyed your videos and LEARNED SO MUCH!!!! Who said you can't teach old dogs something new? Well this old dog got a great education watching the two of you. So keep up the videos and I wish you the best in years to come.for me your the best think on the internet hands down.     I was a retail butcher for 11 years, however I was trained on hanging beef. I have been in sales for 24 years and have not been behind a block since then. Your channel has taken me back to the trade and brings back such a great feeling.

    At the age of 16, in a small grocery store in NW Ohio, I worked in the meat dept where we got hanging beef every couple days. I really enjoyed busting those down and filling the case. Watching you guys brings back great memories. Wish I had half the skills you guys have probably lost over the years.

    That yellow cord for us as kids which I'm 58 years old was called the chewing rubber and we used to fight over because you could chew it on for hours and had flavor in it!

    I've been watching all your videos for a few years now and I have to say that I have so much respect for you guys and what you do. You guys work you butts off every day and shows with all the success you've had. I've learned so much from watching and many times rewatching your videos. My local Ace Hardware finally has you seasonings and I can't wait to try them out. I hope to get to Whitefeather Meats at some point and maybe meet you guys but it's a bit of a drive from central IL.     What an amazing experience, this video showed a level of skill and knowledge of bison and your other videos of beef, pig, and so on, I've learned alot and now want to try bison since I've only had deer meat which was amazingly good, done in a BBQ unlike any I've ever eaten. Maybe one day I'll get lucky enough to try bison, I just wonder how it tastes compared to beef, but from the looks of it I know it would be great! Thank you for your amazing work and for taking the time to show everyone how it's done from start to finish, I'm excited to see the next one. ❤❤😊

    I’ve been doing my own cutting on deer for years, never often enough to get good.
    Watching your videos made it fast, easy and good.
    While watching the videos my 3 year old daughter started watching.
    She now loves Bearded Butchers and we watch almost every night before bed.
    Keep up the good work. I heard mention you butchered an ostrich in the past.
    Would love to see a video of something unusual.

    You guys are amazing with your talent, knife skills and knowledge..A question about knife steeling/sharpening, I was always taught to use a steel blade away from your hand, I guess it's how you are taught and what you get used to doing, I was also shown to hold the steel straight up, point down on the table and slide the blade in a downward motion.

    We set our pork hind legs in the freezer to firm up before cutting hamsteaks. Keeps nice neat cuts through the bandsaw.

    Seth, as I watch your videos; when you are cutting the round primal, you talk about the top round, the bottom round, and the eye of round, but every once in awhile you will also mention the heel of round. Could you please elaborate on that cut.
