- Witness The Bearded Butchers, Seth & Scott, break down half a bison and lay the individual meat cuts out on a diagram explaining where every cut of bison comes from on the carcass. The Bearded Butchers also review the different types of cuts, such as steaks, roasts, trimmings, bones, and fat that come from the animal.
The video starts with Seth and Scott splitting half a bison carcass into the front and hindquarter, followed by laying the intact quarters together on the diagram, making a visual guide of the bison before the cuts begin.
Once that is complete, Seth leads the audience through a step-by-step process of the breakdown of an entire half a bison. As The Bearded Butchers work, they explain the different cuts of the once-mighty beast.
Once the bison half has been completely broken down, they lay the individual meat cuts out on a diagram of the carcass. This allows the viewer to see exactly where each cut comes from and how it is related to the other cuts. I was a retail butcher for 11 years, however I was trained on hanging beef. I have been in sales for 24 years and have not been behind a block since then. Your channel has taken me back to the trade and brings back such a great feeling.

At the age of 16, in a small grocery store in NW Ohio, I worked in the meat dept where we got hanging beef every couple days. I really enjoyed busting those down and filling the case. Watching you guys brings back great memories. Wish I had half the skills you guys have probably lost over the years.

What an amazing experience, this video showed a level of skill and knowledge of bison and your other videos of beef, pig, and so on, I've learned alot and now want to try bison since I've only had deer meat which was amazingly good, done in a BBQ unlike any I've ever eaten. Maybe one day I'll get lucky enough to try bison, I just wonder how it tastes compared to beef, but from the looks of it I know it would be great! You guys are amazing with your talent, knife skills and knowledge..A question about knife steeling/sharpening, I was always taught to use a steel blade away from your hand, I guess it's how you are taught and what you get used to doing, I was also shown to hold the steel straight up, point down on the table and slide the blade in a downward motion.
You guys make me miss doing this stuff haha only got to work on a few bison but it was definitely interesting to do

Seth, as I watch your videos; when you are cutting the round primal, you talk about the top round, the bottom round, and the eye of round, but every once in awhile you will also mention the heel of round. Could you please elaborate on that cut.
