The Ultimate DIY Deer Roast Guide: Craft Your Own Perfect Venison Deli Meat At Home!

  • Get ready to witness a carnivorous transformation! In this episode, the Bearded Butchers take two whitetail deer hindquarter roasts and turn them into succulent, sliced masterpieces fit for any deli counter. We're talking deep brining, slow roasting, and paper-thin perfection.
    It starts with Scott taking his son Boston's first deer and removing the two hind quarters. He then butchers the hind quarters in to boneless roasts, trusses them up with butcher twine, and mixes a brine to inject and soak them in. Once brined, the roasts are then slow smoked on the Yoder YS640 smoker until the reach an internal 145F degrees. The roasts are then moved to the cooler to chill overnight. Once chilled, the roasts are then sliced paper thin. Scott and Boston use the deli roast beast first on sandwiches, then make an amazing steak alfredo pizza that they share with the entire team!

    2 Large Venison Roasts (or any 4-5 lb. roasts)
    2 Gallons Chilled Water
    2 Pounds Sea Salt
    2.5 Ounces Celery Juice Powder
    1 Ounce Cherry Juice Powder
    *Ranch Seasoning to taste
    *Hickory Smoked Powder to taste
    *Optional

    I'll tell you what made me proud was when your son heard you say it was time to put the soaking meat bucket into the cooler around 19:00 and he went and automatically opened the door for you without another word needing to be said. Good manners and pays attention to dad? Must be good parenting and that's almost unheard of anymore. Makes me feel way better about our future. Good job all around, gentlemen (younger and older)!

    I would like to thank everyone who took time to produce this video. I have asked for this one a couple of times and they finally did it. Thank you so very much.
    I kept a round roast out of one venison hind just to try to make this.
    One question I have is after the smoke/cook process can I dry age it? The wife gave me some dry age steak wraps for dry aging meat in your fridge. I want to try it to dry age it before I slice it. Again thank you White feather meats and the Bearded Butchers for everything. Keep up the great content!

      I don’t claim to be a pro at dry age but I don’t think dry aging after cooking would turn out well. It is intended for pre cooked raw meat. It will build a pellicle (hard rind) that is not very appetizing and would just add a massive loss to your end product. Not to mention any possible food safety issues that may arise after all the curing and smoking. I would research first before losing a large chunk of meat. I also would stick to large beef cuts for dry aging so you have more usable meat after the dry time. Good luck man.

      That stick is a honing rod or honing steel, not really a sharpener, it just puts a finer edge on your already sharpened blade. Hope this helps.
