The owner of SM is Filipino but the family's ethnicity is Chinese which makes them Filipino -Chinese, the owners of Ayala Malls are Filipino but the ethnicity is Spanish wc makes them Filipino -Spanish, the owners of Vista Malls are full bred Filipinos. Irregardless of their ethnicity we are all Filipinos by heart that is why the Philippines is so diversified. Even the way we look. We all look different depending on our background . What is important is that we are all proud ro be Filipinos.
4:48 leche flan came from the Spanish. During the colonial period, egg whites were used to put together coral stones and other rocky building materials. Nuns in convents thought of using the yolks for different dishes and desserts, like leche flan or the tocino del cielo from Pampanga. Champorado is one of those things that were brought in during the Manila-Acapulco trade while the Philippines was administered from México. The Filipino word "halaya" comes "jalea". It is not wrong to assume that if the food has a Spanish sounding name, it might be an influence from Spain or México. I think more traditional Filipino (Asian) desserts would be rice cakes or "kakanin", like suman, puto, or kalamay.
It's actually so amazing to see how the different cultures,gastronomy,language,etc...in the world due to the history and things that happened before are now kind of "mixed" if we could express it like that, or it just has any influence. Unfortunately, history textbooks tend to write more on the not so good happenings during the Spanish colonial and less about nicer people to people interactions.
