    Absolutely divine. Many, many thanks for introducing me to this. I have kept one litre to share with friends, 1 litre for my husband, and i litre will wait for a year...... My husband and I have already drunk the rest (over 3 weeks, don't worry - we just enjoy a glass before our meal at night.

      Fruit Wine is better for our health when we consume it in moderate quantity. No worry if your wine is less alcoholic. But it's more than 8% drink maximum 120 ml. Wine is more hot in it's charector. It will heat-up your body. It's best for winter season, not good for summer.

    For yeast recipe, I have used apples along with raisins. Later on strengthened with half litre of white grape pulp. Now used it to prepare orange and apple mead batches. It's fermenting heavily even in this extreme cold climate. Now I have ditched bread yeast forever. I never liked the typical bakery smell in every wine I made earlier. 👍
    Made pineapple wine during lockdown last year and enjoyed it.

      Wild yeasts are better than bread yeasts.
      Bread yeast's alcohol tolerance is very low and primary fermentation stops very fast. Tastes also like cheese.
      Our one cup wine yeast strains can ferment 20 litres of fruit juice or must.
      From this Yeast Strains you can make wine from any fruit or any herb.

      @@FoodiesWok but I have heard from experts that wild yeast is unpredictable. The taste changes each time you make new batch of yeast.
      But I found bread yeast unpredictable too in the context of alcohol tolerance. Sometimes it gives me 14% ABV and other time it gives around 8%. The bready or cheesy taste remains more or less same.
      But found the above yeast promising.

      @@Dave_en Yes, it's absolutely correct because. Wild yeast's character changes as per climate and soil conditions. Commercial wine yeast makers inoculate Yeasts what they want and culture again to grow more Pure Wine Yeasts. That's why commercial wine's taste will remain same on every lot. But in wild yeast fermentation process you can't predict what will be the result. But you can culture your own yeast strain and grow them. As per my knowledge best wild yeast strains are from wine grapes and apples.

      @FoodiesWok not all wild yeasts are equal! I had better results with bread yeast. the wild yeast had very low alcohol tolerance. The wine with bread yeast tastes better after 6 months.

    I am on the 4th day of first fermentation, and I have a few questions after having scrolled through questions and your beautiful replies: how long will bottled wine keep for after second fermentation? Can it be kept outside the fridge? Should I burp it just in case? I have used two glass jars: one to taste after second fermentation and a bigger one (providing all my friends don't pester me for a taste) for further racking. How long can I keep it for this third racking?

      wine made with baking yeast get a cheesy or toddy taste and less ABV(7-8% is the maximum alcohol tolerance of baking yeast). you can use fresh pineapple juice (blended and strained) for wine making, leave enough space in fermentation container to hold the must or it will spill out.

      Siphon cleaning is very easy process,
      You can detach pipes from the blower.
      Clean all pipes immediately after transferring the wine or wine must.
      Simply hold under pressure water tap.
      There after wash with soap water and finally wash with boiled and cooled water. That's all

      Secondary fermentation - keep it until secondary fermentation stops. Fix a airlock system and check status.

      Sugar not contains in dry wine, sugar converting into alcohol in Wine making process, sugar contains in sweet wine.
      But, our recommendation is you don't use any type of alcoholic drink which worsen your sugar level, If you want to make fruit wine as a hobby then you can make and drink non-alcoholic wine. Make dry wine and remove the alcohol from the wine, for that after completing the wine process (ensure the sugar is completely fermented) then heat up the wine till boiling point (don't allow to boil the wine) and stir for 25 to 30 minutes to evaporate the alcohol. Cool down the wine and use tasty and healthy wine.

      Not made any video on this.
      It's simple.
      Top side stud which is connected to pipe is Cooker steam vent which is putting weight on that while cooking. Fix this steam vent on jar lid secure with rubber washer to get Air tight then fix a suitable pipe on that. Your homemade air-lock system ready. Enjoy your wine making. Feel free to ask any doubt regarding homemade wine brewing.

      Yes, for secondary fermentation it's compulsory to fix a airlock system because if oxygen get into your wine container will convert wine into vinegar.
      You should keep your container on dark cool place.
      Fixing a airlock system to protecting your wine contacts with oxygen. Airlock system omitting Carbon dioxide and not allowed oxygen get into your wine container.
      This airlock system is homemade, you get readymade airlock system on Amazon online store.

      Distilling alcohol is illegal activity if you don't have brewing license. Even wine making at home also is a illegal activity in some countries.

      You can avoid sugar if you get very sweet pineapple. You can also use raw honey instead of sugar.
      Still we recommend sugar, because Yeasts can easily consume sugar and complete the process very soon. Otherwise reduce sugar quantity.

      You can make a homemade Air-lock system as shown in our video. It's a pressure cooker valve fixed on the lid and rubber or plastic tube outlet to boiled and cooled water.
      Air-lock system is must for Wine making.
      ( You can make wine without Air-lock system also. But it's a risk of converting wine to vinegar gradually)
      You can monitor your fermentation status on Air-lock system. If Air-lock system is stopped bubbling, then also. Your wine will be safe.

      @@e.t6716 Transfer the wine into another jar and keep for some months called wine racking. It helps to clearing the wine.
      Wine clearing / filtering equipment available in the market.
      Do proper study before you start. Because wine making is easy as well as complicated. A small mistake can spoil entire batch. Do proper study first.
      Our method is a traditional one and taste can be change in each batch you produce. But there is demand for organic wine. If you done properly.👍

      It's my pleasure to answer your doubts.
      Primary fermentation maximum 7 days, then strain your wine as shown in our video, fix a airlock system for secondary fermentation (airlock is must, don't keep open for secondary fermentation, from here your WINE MUST gradually converting into wine) this period is almost 14 days or till the fermentation stops. Keep an eye on airlock system. Inbetween these days don't open the jar.
      After this period rack your wine into sterilised glass bottles and cork it
      Don't shake your jar when bottling. You want more clearer Wine can rack into fresh glass jar also. Keep your wine on a cool and clean place. Maximum temperature 25°C

I have studied your video closely (many times), have already prepared my airlocked container, ordered my pump siphon (arriving tomorrow), got percarbonate and citric acid for sterilisation, bought my carboys, so please rest assured that I am sticking to your instructions very closely!😀 All I wanted to know is how can I rack the wine a second time for clearer wine? Can I just keep it for months and months? Or weeks? Or days? And when finally, AFTER racking, bottling: should I open the caps once in a while just in case for some reason or another, there is another spout of yeast activity? Should I keep the bottle outdoors? Or in the fridge? @@FoodiesWok

      @@dyezbemol Our suggestion is once wine got cleared and fermentation stopped then rack into glass bottles and cork it. Please be assured there's no fermentation remaining. And keep your bottles in cool environment, away from any direct light. This way you can keep your wine for years. We have our Red Wine still with us without any taste change. If you making in small batch then you can keep in refrigerator. You just keep your wine for one year and taste it. It will be very fruity and smooth feeling while you drink it.
      If you making wine using chemicals like Potassium Metabisulfite and Potassium Sorbate can be allergic or trigger heavy Migraine. If you have any alergy or prone to Migraine please try to avoid it.

    2kg too much sugar results in overly sweet wine! Try 1.3 kg for a perfectly balanced sweetness.

      For Pineapple adding sugar is not that much complicated because of the acidity.
      In our Wine, we have used wild Yeasts strains are very strong and they can ferment till ABV 18%. Yes, as per your suggestion if we have used normal dry yeast 2 kg sugar is too much for 2 kg Pineapple.

      @@abdelkhalak73 ok Good, my suggestion is you must try our wine Yeasts cultivation process and make wine from that Yeasts and check how much ABV you got. You can cultivate strong wine Yeasts grapes and apples.

      @@FoodiesWok thank you for replying to my comments soon. High alcohol doesn't interest me. My main purpose is create balances delicious wines that feel so welcome on the palate, but I'm always willing to learn new things. So I'd be very pleased to learn about your wild cultivation method.

They had not only made the wine but they had developed the process of preserving it for years.
