You have to think of it like this, Katowice is not tourist city. When you go out in UK for the meal what do you find? Italian, Chinese, Indian, Thai, pizza, burger ect, not English food. And for traditional food 270 meters further was "Zurownia" which is really traditional place ("Zur" is a soup you probably already know ;-)). As it comes to Wiejska Chata lady did not seem unpolite to be honest she was sad to say that that day they were fully booked. She said to be exact "dzisiaj nie mam nic wolnego już" answering to "jak długo?" which means "how long I need to wait". but she did it in polish unfortunately thinking you know polish well I guess. Unfortunately you can't even compare any Polish city with a huge western city, like London for example, where even in boroughs outside of Greater London you have much more restaurants, one after another. Not mentioning restaurants in central London, where there is just so much of them, so much to choose from. Then again we do not have such eating out culture like in the UK. Yes, it has been gradually changing here for the past 10-20 years but still many people do eat at home, either due to the cost of eating out or just our culture, if you just look at the past. I worked at Nando's @ Ealing Common for couple of years, and many people used to come for either lunch or in the evening, few times a week. Some used to come to eat every weekend, and there was one particular guy, who visited us EVERY single day for lunch, ordering the same dish. It was really nice, as you got to know those customers more, and it was great to see them coming back again. In Katowice you need to know where you want to go. In London you just go out and then decide for the food you want when you're at the place :) I've eaten oriental food here in Poland in different places, but it doesn't taste anything close to what I've eaten for years in London, and Soho was the best place to try out a Chinese cuisine.
