Hi Laura, what you can do with the kernel-less cobs is you can make a corn broth out of it. Just boil the heck out of it until the broth is reduced and sweetened. You can flavor it with a bit of salt. It turns into a lovely light and sweet broth if you are planning on making some kind of soup later. :)

I know this might be a southern thing and really fattening lol but a great tip is to go ahead and fry the bacon in the skillet, drain some of it off, and use the bacon grease instead of butter to continue frying the corn. It eliminates the need for extra butter and you dont have to use as much milk or cream. Great recipe though, Laura! :)
Your recipe is very close to the way my mom made it but without the bacon. She would add a couple of cut up tomatoes or even canned tomatoes to cut down on the sweetness.

I saw in your guacamole recipe with corn I believe it was you used a bowl inside of another bowl to cut your corn, and someone had left a comment saying how they used a bundt pan because it was safer, and I believe that's where you got the idea. And if it was, I think you should accredit the person who gave you the idea. It only seems like the nice thing to do. But I love your videos, I'm just saying it would be nice.
