How to make Oyster Cake recipe (炸蚝饼) | Singapore oyster cake | Or Luak UFO

  • Oyster cake is a Singaporean hawker dish also known as Or Luak or UFO due to its round
    shape. It is a crispy and savoury pancake stuffed with meat, bean sprouts, and of course-
    oysters! This dish is a delicious snack, especially for oyster lovers, that you can make
    anytime.

    Serves: 8 cakes | Preparation time: 40 minutes
    Ingredients:
    ● Knife 100% Pure Groundnut Oil
    ● 20 pieces frozen oysters, defrosted and soak it in some water (To keep it fresh, cling
    wrap and place it in the chiller)
    ● 10 fresh small grey prawns
    ● 1 cup roasted peanuts
    ● ⅓ cup silver fish (whitebait), rinsed
    Meat filling
    ● 150g minced pork / chicken
    ● 60g bean sprouts
    ● ½ tbsp cornflour
    ● ¼ tsp sugar
    ● 1 tsp chicken stock powder
    ● ½ tsp Knife Thai Fish Sauce
    ● 1 tsp pepper
    Batter:
    ● 2 cups HOMESOY Unsweetened Soya Milk
    ● 160g plain flour
    ● 25g rice flour
    ● 1 tsp baking powder
    ● 1 tsp salt
    ● 1 tsp pepper
    ● 2 stalks spring onion
    Cooking steps:
    1. Prepare the bean sprouts, spring onions, and prawns.
    2. Mix the meat filling ingredients together in a bowl. Cover and let it marinate for 20 minutes in the fridge.
    3. Pour the soya milk into a mixing bowl and sift in the flour, rice flour, baking powder, salt, and pepper. Add the spring onions and mix until smooth. Add some water if batter is too thick or 1 tbsp of flour at a time if it is too thin.
    4. Heat oil in a pot on high heat and let ladle sit in oil until hot. Keep some oil in ladle and scoop 2-3 tablespoons of batter into it. Add 1 tablespoon of filling, 2 oysters, 1 prawn, and cover with more batter. Top with sliver fish and peanuts then submerge the ladle into the oil for 2 minutes.
    5. Use a spoon to gently release the edges of the cake from the ladle and push it off. Place the cake back into the oil and fry for another 1 minute before removing. Repeat
    until batter or filling has finished.

    Nice but too complicated and chi chi. I like oyster cakes simpler.
