    The oil looks no different than what's use mid-week at the fast food joint you people frequent daily. Next time you folks order fries, ask to inspect the grease first ;)

    I don't think the oil is black. That is the pan you are seeing.

      Exactly, if the oil were dirty the food wouldn't be a golden brown, but instead have specks of black all over

    They cook them with some kind of black oil that I never saw before. And that portion is pretty plenty

    Not to judge or anything but all I can think of is "Oh greasy. Everything is swimming in oil!" I don't think I can eat something like that, no matter how good it tastes. 😱😱😱

    These is fried on hot fat to be not baking so they usually call these that " fried Shell".

    No wonder people get heart disease and cancer!!! It's horrendous how people in the food industry actually handle food, from preparation, cooking to serving them at the table. Half the time, customers are paying for toxic and unclean food!

    Forget the whole oil issue, think about those oysters that have been sitting out there in the open, no refrigeration, blooming with bacteria food poisoning....

    Same oil heated at high temperature for so long, not healthy. Should use a proper frying wok. Use wok with good quality metal.

    Do not eat too much, the oil is a health issue, it will spike bad cholesterol, especially triglyceride.

    That oil needs to be changed as it is blackened, the place needs to be sanitized. Honestly, it looks completely unappetizing. Those omelets are overcooked.

    This is 漳州 潮州 Style 蚝仔煎 very delicious is better than Taiwanese 蚝仔煎 is popular in Thailand cambodia Singapore 印度尼西亚 马来西亚 the fry oil is not dirty oil is fried pain dark color that's why it looks so dirty the lady look like two busy she's supposed to make one by one not a cut half

    I thought I knew every decent oyster cake stall in Hong Kong, especially stall produce in such a hugh among, but I can not tell where this stall is, they use vegetable oil, which will turns dark under high heat for long and its no goid, they should change it but they only replenish instead, they should use duck eggs but seems like chicken eggs instead, they speak cantonese but I am not sure where in Hong Kong who use regular pan for this, strange

      I think its plain flour and we can add some black paper and egg.

      They should use potato flour and duck egg, and should not use that much oil. we use round pan and very little oil
