Your macarons look so professional, Aimee! You should totally open a bakery because I hear macarons are finicky and the fact you've mastered them means you are all that and a bag of chips. LOL! If I remember correctly, the sign of a great macaron is the feet and it looks like you got that right. Volume is still low for me, BTW.
Whip the butter until light and fluffy. Then add the sugar. Continue to whip it till all the sugars dissolved and it doesn’t feel and taste grainy. Then add a little bit of vanilla. Now one final whip until everything is mixed and done. 😉
Thanks Aimee for your detailed video. I must have watched it more than 10 times, Unfortunately mine came out cracked a little bit and have no feet. May be I didnt beat the egg white long enough. Appreciate your expertise advise ! I will certainly try again. It’s very challenging and fun!
This recipe is not too sweet. If you have tried my sweets recipes before you will know I tend to make them less sweet. You can also add a filling that’s less sweet to balance it out. The strawberry jam I used has some sourness to it so it works perfect together.
Hi Aimee. I used gel color but the color look faded most of the time. I tried 295 for 15 minutes. I tried to lower the temperature or the baking time, the color came out nicer but they come out a bit under baked (sticking base even thought let cool). Could never achieve the vibrant color that you have with your Macarons.
You have to double or even triple the amount of food gel. The color of the batter will look like a lot but no worries, some will fade when baked. So again, you need to add a lot more.

I don't bake, but I'm pretty good at passing recipes onto my niece who likes to bake. That way she can make me these as well as almond croissants. LOL!

Yes, it’s fine. Just have to know when to stop whipping.
I tried making macaron but it didn't turn out with feet. Taste was good but couldn't get it to look like "macarons".
Give it a another try. As long as you whip a thick meringue and let the shells dry. There will be feet 😉

How was the consistency of the batter? Sounds like maybe it needed to be a little drier before baking.
Did you try again? If so did you get feet? What did you do? Mine didn't have high feet...

Help, the shells look perfect but the feet is not so tall?
Taller feet tends to be hollow, but if you like, you can adjust the temp up some 🙂
