Hi Nicole! I just made 2 test batches of chocolate macarons yesterday. One I used Cacao Barry Extra Brute cocoa powder and the other I used Ghirardelli Majestic premium cocoa powder. Both were great, but the Cacao Barry resulted in a fuller shell and richer flavor. I just made a batch of croissants! I was afraid if I didn’t I would lose everything I learned in our amazing class. Thank you for all your support and knowledge! I’ve learned so much from you ❤
Wonderful! This is awesome! Croissants are definitely like riding a bike. Once you get it, it may take a time or two, but the muscle memory will come back!🙌🏼💗

Hey Nicole. Enjoyed your video. I have a question: After you piped your macaron and tapped them, you out them right into the oven. I thought you had to leave them out to allow a slight skin to form. It’s this not the case? Is it still okay to let them form a skin? Thanks

Hi! So with my little convection oven I can bake these right away. With my large gas oven I do need to rest until the skin has formed
Why resting macaron in wheatear rain/night😅 in Indonesia very difficult😂
