  • Based on years of my experience, watch video to obtain right texture, shine and taste when you make the popular 7 Cup Burfi. Step-by-step instructions in Kannada with English subtitles.
    I have been making 7 Cup Burfi from college days, prepared it at least 25-30 times and have experimented a lot with it. Follow the instructions in the video carefully. Otherwise, if you are inexperienced, Burfi can turn out to be hard, powdery or too soft, Halwa like.
    Ingredients:
    Bengal Gram Flour or Besan - 1 Cup
    Milk - 1 Cup
    Ghee/Clarified Butter - 1 Cup
    Grated fresh Coconut - 1 Cup
    Sugar - 2 and 1/4 Cup
    Cardamom Powder - 1 tsp
    Method:
    1. To a bowl, incrementally add 1 Cup of Besan or Bengal Gram Flour and 1 Cup Milk in batches and mix well with the help of a whisk.
    2. To a big thick bottom pan, add 1 Cup Ghee/Clarified Butter. Do not use a non-stick pan.
    3. Add 2 and 1/4 Cup Sugar.
    4. Add 1 Cup fresh grated Coconut.
    5. Now add the prepared Besan/Gram Flour-Milk mixture to it.
    6. Mix everything once and switch on the flame.
    7. Mix everything in medium flame till the Sugar dissolves.
    8. Mix continuously without breaks.
    9. The mixture will slowly start to thicken after about 10 minutes.
    10. Scrape the sides from the spatula and move them to the center and continuously mix everything.
    11. Try to mix in low flame, else the bottom may get burnt.
    12. It takes a minimum of 30-35 minutes to prepare this Burfi.
    13. Now add 1 tsp Cardamom powder and mix well.
    14. To know if you have the right consistency, scrape the sides of the pan. The scraped sides should be thick and of regular Burfi consistency that you see at the end of the preparation. Also, the mixture in the center of the vessel will become one big lump.
    15. Now pour this mixture immediately into Ghee greased tray. Shake the tray to set the mixture to an even height across the tray.
    16. Leave the mixture to cool at least for 30 minutes and then cut with a knife to the desired shape.
    17. Once it has cooled completely, separate each 7 Cup Burfi.
    Now 7 Cup Burfi is ready to serve. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.

    This is the perfect real recipe.Unlike everyone telling like this is very easy cook for 20 to 30 mins it will be ready...It's not at all possible ..U have given honest and correct explanation!!! Loved ur video.Today I tried it , as u said 1st it came like halwa, so I again stirred in heat ,it became harder... Finally after ur video its 100% true that next time or another time I will get perfect soft consistency as Ur recipe !! And sugar quantity perfect I used 2 cups only!!!

Non stick use madidre tuppa bidatte hage soft agatte. 1 Cup Kadle hittige 25-30 minutes mix madabekagatte.       @@CookWithHemaAdiga ಹೌದು. ಸೇಮ್ ಅಳತೆ. ಮೊದಲು ಚಿರೋಟಿ ರವೆ,ಸಕ್ಕರೆ ಮಿಕ್ಸ್ ಮಾಡಿಕೊಳ್ಳಬೇಕು. ಅದಕ್ಕೆ ಕಾಯಿತುರಿ, ಹಾಲು, ತುಪ್ಪ ಹಾಕಿ ಮಿಕ್ಸ್ ಮಾಡಿ ಸ್ಟವ್ ಮೇಲಿಟ್ಟು ಕೈ ಬಿಡದೆ ಸಣ್ಣ ಉರಿಯಲ್ಲಿ ಆಡಿಸುತ್ತಿರಬೇಕು. ಅದು ಹದಕ್ಕೆ ಬರಲು 25 ರಿಂದ 30 ನಿಮಿಷ ಬೇಕಾಗುತ್ತೆ. ಮೈಸೂರ್ ಪಾಕ್ ಥರ ಗಟ್ಟಿ ಆಗೋದಕ್ಕೆ ಬಿಡಬಾರದು. ಸೌಟಿನಿಂದ ಕೆಳಗೆ ಬಿಟ್ಟರೆ ಸ್ವಲ್ಪ ಗಟ್ಟಿ ಆಗುತ್ತಿದ್ದಾಗ ತುಪ್ಪ ಸವರಿದ ತಟ್ಟೆಗೆ ಹಾಕಬೇಕು. ಅದೇ ಸೆಟ್ ಆಗುತ್ತೆ. ಆಮೇಲೆ ಬೇಕಾದ ಆಕಾರಕ್ಕೆ ಕತ್ತರಿಸಬೇಕು.

      I also purchased the same brand small Kadai in Amazon. Even that is good. You can purchase it online. Also many other brands are available like Stahl, Mayer, Bergner. Mayer is expensive. I hope this information helps 🙏.

    Can we add powdered cashew instead of coconut since coconut might spoil after few days?

      I heard that they use both coconut and powdered cashews. But I never tried. You can keep this 7 cup burfi using coconut outside for 15 days without refrigeration. I think you can try adding powdered cashews instead of coconut.

    Did it many a times .....came out well,bt sometimes gone wrong,it became sticky even after mixing it for 45 mnts,hv added extra ghee....still it had came out as halwa.What may be the reason

      Don't add more ghee. It is just the consistency that you have to reach at the end that has to leave the sides of the kadai. Also the time depends on how many cups you used. For example, if you use 1 Cup of Gram flour and adding other ingredients as mentioned, it will take minimum 30-45 minutes. If your measurement is more than this then time will also increase.       Swlpa bega tegidra anisutte. Matte try madi, starting nalli hedrikondu bega tagedu bidthivi so adikke Halwa tara agutte. pan sides nalli burfi hada barabeku. Mixture pan swlpa bidtha baratte. Matte pan ge haki maguchidre burfi madabahudu, adre shining baralla asthe. 2-3 sala try madidre burfi hada correct agi gottagutte.
