Here's a helpful tip about cracking eggs that I've learned by trial and error over the years...if you never ever want to have shell in your eggs again, do this....crack the egg...doesn't matter if it's on a flat surface, edge of a bowl, whatever...what does matter is how you open the cracked egg...hold the cracked part facing UP...pull it apart and let the egg fall out of the shell as you pull it apart...always keep the cracked shell facing up when you pull the egg apart and you will never have shell in your eggs again.
Do like Martha: crack eggs into a little bowl FIRST. Then if you screw up and get shell bits in it, you can easily scoop them out FIRST before you put them into the pan. Simple. Logical. Saves frustration.

Zero acidity or tang, or well, anything that makes us love actual mayo. It honestly should be sold under a different name then mayo, it's that far off. Not bad, but not mayo.
Kewpie is a little different than American mayo, because it's made with only egg yolks-not whole eggs-and with rice or apple vinegar and no added salt or sugar.
Sam, Love making these with fresh NYC everything bagels. One thing that was awesome to try make was making an avacodo spread with finally chopped bits of habanero peppers for a nice little kick Or maybe poblano peppers since I see you use those a lot.

My kid and I visited NYC a couple months ago and basically, the first morning was literally commuting around trying bacon egg and cheese sandwiches lmao. Daily Provisions, Isadora's Cafe, Eggs Travaganza and Andy's Deli. We really spent $30 in subway fare bacon egg and cheese hunting. And it was worth every second and penny spent. Nothing beats the bodega though...the winner was Andy's Deli. Can't beat the bodega.
I make something similar to this all the time, this really gives me some inspiration to change it up and add some extra layers of flavor. I like to add some salsa on top of the bacon. It's a messy food but oh so delicious.
You should cook a whole pound of that bacon and just have them popping out of a jar on the counter like breadsticks. When someone comes over they'd be like WTF😯

The trick with shallots and onion covering is to slide the knife from where you made your first horizontal cut just deep enough to cut through that first flesh layer. Then just take off those layers by pulling at the top corner of that cut that is nearest to your first cut.

For me, you can’t beat folded omelette version, as much as I love yolky eggs, they just run out and you lose it all onto the plate, also I love baby spinach with my breakfast, especially when having bacon, eggs, fried tomatoes and mushrooms in a sandwich or roll.

I live in NY, and that looks like the worst bagel I've ever seen in my life, looks like one of those warm soggy one you get in a bag at supermarket, looks more like a kaiser roll... also the sandwich is way too complex... that's a "bagel breakfast sandwich, that's not BEC... Bacon, egg, and cheese, is just that.. Bacon, egg, and american cheese on a roll, or bagel... and choice of salt, pepper, ketchup. That's like adding tomatos, and avacado, and sauteed onions to a homemade big mac, and calling it a big mac... a big mac is made a certain way.. Just like a BEC
Hey man I was just thinking about New York. I went to NYU in the '90s... I probably ate a thousand bacon egg and cheeses with coffee (light and sweet) served in that blue Greek coffee cup. For me bacon egg and cheese is always on a kaiser roll lightly buttered, wrapped in plastic and then you eat it on some steps while watching people walk by. You can't make a true bacon, egg, and cheese on a real bagel because you'd be pulling on it with your teeth, and shit would fly everywhere. The egg mishap is an eggcellent reason you should pre crack and mix the eggs prior to putting in the pan, and can whip a bit of air into it making it a bit fluffy n I add a cpl bits of butter in the egg mixture as well. That is a very huge shallot, probably nobody was in the fields cuz of cv and they grew way to much.. guess be thankful for what we have

No, if you do it your way you get ordinary scrambled eggs. Get the whites started before breaking the yolk and scrambling. A totally different taste.
