    I've only made vegan kimchi by using pineapple to help the fermentation. I don't think most Koreans would think it was authentic...but I bet they'd think it was delicious also. I also like to cook some in a pan when it gets too spicy, or aged. It's a totally different experience. Please try it, I bet you'd like it. For a treat I then add it to toasted buttered (vegan butter) sourdough bread with avocado. So yummy!! 😸👏

    MommyTang makes good vegan kimchi too! You should watch her tutorial she is Korean and knows how to make different kinds of vegan kimchi (like the nappa cabbage, cucumber, scallions, dicon). She also eats Mother-In-Law's Vegan Kimchi that she buys from her local Asian store, check that out. Mommy Tang said that it's more delicious when you use the real pepper so you should also try gochukaru (I don't know if I spelled it correctly) but it is a powered Korean red hot peppers, you can plant some and make your own powdered peppers and drying them and then put it on a blender o food processor.

    If you like it with a kick you should grow some Korean dark green peppers. My wife uses the ones I grow for her Kimchi, awesome spicy pepper!!

    Fermented foods are excellent nourishment , something to keep in mind is that the vinegar produced gets more acidic with time and can cause your your teeth to decay . Ferment food are fascinating as a way. To keep food edible without a refrigerator . Peppers nota bien :)

    Awesome !!! Been making all my own kimchee for over a year, but never with the umboshi plum vinegar. Can't wait to try it. My favorite meal is Korean radish (mu) kimchee, rice and some seaweed snacks. So good. Also, try topping a vegan hotdog with kimchee ......omg its good!

    hey!it is fun you guys trying to make it kim chee,but should know really good recipes from original Korean grand mother from,usally kimchee no use soy source,best is fish source

    I love vegan kimchi! I have only had it store bought- would love to try to make my own. I've been intimidated ever since messing up making my own sauerkraut twice now, lol! (Once too much salt, the second time I got mold.) I think it's almost time to try again though.😊 Great video as always, Jake!👍🏻💕

    Man I love kimchi. I just started making it a few months ago and I have kombucha fermenting as well.

      zach olson can you mix both? I put little kombucha inside kimchi veggie ferments lol will see how it goes

      Human First I've never tried lol. But be careful and watch out for mold on top of the kimchi.

    I always wash the cabbage after it soften up, no reason to keep that much salt in it. Besides, soy sauce will keep it salty enough.
    Every kimchi is different I quess :) ...anyway, looks tasty !

    I used to sort mail on the midnight shift and one night a huge parcel from Korea came in and seriously smelled like a dead body. When the letter carriers arrived in the morning they thought I was responsible for the smell. I had to put up a sign that said "it's not me" and an arrow pointing to the box. I still think it was a body disposal from the Korean mob. I even told my supervisor to call the cops and he said it was Kim chi !!

    minor suggestion... on the last few videos with time lapses, the background music is much louder than your speaking voice. So the volume is turned up to hear the dialogue, then BAM!!! HAVE SOME BACKGROUND MUSIC!!!!! Maybe turn the music down a few decibels before exporting? That would be much appreciated.

    try search gado gado or lontong balap or pecel madiun or other its indonesia food. indonesia is the biggest muslim countries with a lot of vegan food or semi vegan

    If you want to save seeds you schould use a minimum of 10 better would be 20 plants your seeds will deteriate over the years with such small amounts .
    Nice vid but its just fermented veg and the amagination is what matters

    Good video as usual ....Vegan can be so confusing sometimes and that's a shame . For instance DR Robert Morse who I do really like and I'm not raw just a regular vegan claims kimchi is not good for us at all along with other products you would think are fine like rice and beans etc..

      well where i live we only have 1 brand of kimchi i can buy in store and it is vegan as well as a lot of other brands on the market, but there are lots of different kinds of kimchi and not all is vegan. A lot use fish sauce, anchovy etc.. it doesn't hurt to let people know that not all are and that it can be made this way. :)

    Please make sure your commercials are no louder than your voice. I had to stop what I was doing and turn my volume down. The music was way to loud as well as your music. That is one reason I stopped watching television. I love your videos and yes I would love to see your wife cooking those wonderful meals.

    I started watching your video until the annoyance got to me, I am sorry but everything seems to be your favourite and it's annoying in a sense that I can't really believe anything that you say..your favourite fruit, your favourite veg your favourite plant.. and it all changes in the next set of videos. you seem to be doing pretty well .. but please stick to being real !
