There is a wild plant common in many parts of the US known as "lambs quarter" in English and "quelites" (I think that's a correct spelling) in Spanish. Not sure if it's exactly the same botanically as the "shepherds' purse" Mandy refers to, but I'm betting it's close enough to be an excellent substitute. Similar to spinach in many ways, but more strongly flavored. Sauteed with bacon bits and seasonings it's delicious and a very popular side dish in many homes, especially Hispanic homes. I use it a lot, especially in the spring when it's prolific here in parts of the high desert west.

when it comes to the fried onions from the rice, take them and spread them out on a paper towel lined sheetpan, pat them dry of some exess pil, salt them and let them cool, moving themaround with a couple forks or chopsticks to release the extera steam so they crisp up when they cool, then you can serve these fried onions with/on top of the rice
