Ok, but what is the blanket for?
The blanket is to help the bread rise. @ 1:26 the dough is covered to keep it warm so the dough rises, First fermentation and first rising, once the dough rises they cut it up in equal weight pieces and make the dough balls. @ 2:32 they cover the dough again, dough continues to ferment and second rising then they bake it

Mixing the salt and the yeast together like that, the salt kills the effectiveness of the yeast unless that it is what you want it to do.
