- Owner Ron Silver started Bubby's in 1990 by selling pies to other NY restaurants for Thanksgiving Day, and it has grown to become a comfort food brunch spot known not just for the simplistic yet delicious food, but also a key New York eatery to spot celebs. Bubby’s is famous for their brunch selections, including the sourdough pancakes, which uses a starter from 1890, and a more traditional stack topped with fried chicken (which is brined in-house for 24 hrs). Insider's Lisa Paradise traveled to Bubby’s original location to talk with the owner Ron Silver, and find out what makes Bubby’s pancakes unique.

I really appreciate how descriptive the host is, way better than other hosts who can only say "omg this is the best thing i've ever tasted" and not actually saying anything substantial

I agree, or "It looks so appetizing" like yeah no shit, I have eyes, anything else you can tell me? Or "It's very flavorful", um okayyy that could mean anything! It gets me mad that some people get paid to eat & review food, but can't even do that.

I just wanted to say that god send their massagenrs to us to teach faith in god.. so people dont have an excuse on judgment day

Odd that Bubby's is now known as a pancake house! In the 1990's, I worked nearby, so I frequently ate there for breakfast, lunch & dinner on weekdays. Never waited more than 5 minutes for a table & it was alot smaller then. No influencers back then & today's weren't even born!! I do not remember if they had chicken on pancakes back then, but that is something I would not order. Loved Bubby's lunch soup and sandwich combo. Their pies are also yummy. The tables were very close back then, so it was not unusual for the famous to be sitting elbow-to-elbow next to you! I met many back then, who spoke to me first (I always respected their privacy despite being so close). What memories!

I like how everyone's talking about how great the host is compared to other videos while ignoring the food immediately, really shows how important the presentation of the food is compared to how it actually tastes.

The pancakes themselves aren't necessarily sweet, but they often are served with maple syrup, fruit, and other sweet items.

I’ve been here quite a few times over the years. The sour cream makes these pancakes delicious. However, I honestly prefer a chicken and waffles from Melba’s in Harlem. Also, hate the lines here.

these are not crepes. thicker and have a leavening agent = not crepes.
These are not crepes. Crepes are way thinner and usually bigger as the batter is stretched across the surface to the max. These are the classic pancakes. Bigger and thinner than its American and Japanese counterparts but thicker and smaller than French crepes. Crepes are usually saltier and chewier in taste too as they have no fluff but become a bit more plastic like due to its thinness
