This system of making family sized meals - healthy, wholesome meals that I know how to cook and like to eat - and then packing up into individual portions has been a real life saver for me. It sounds silly, but it has really been life changing. It's a relief to know that I have several weeks worth of meals packed away. Not just for a prepper situation, but for those times when I just don't want to cook. I think a book could be valuable to a lot of people.
I’ve been making my lasagna recipe in bread pans for several years now. The no cook lasagna noodles are just the right size to fit a bread pan. I line each bread pan with plastic wrap, layer sauce, noodles, cheese, and sauce just like I would for a large pan of pizza. I’ve learned not to overfill the pans! When I have them all made-usually four or five of them-I put them in the freezer until they are completely frozen. I then remove the entire plastic-wrapped lasagna and put it in a zipper bag and put them in the freezer. When my husband and I want lasagna, I just take one out of the freezer, immediately unwrap it, and place it into a bread pan to thaw. When thawed, I bake and serve it. One bread pan-sized lasagna is the perfect amount for my husband and I for a meal. I only make the lasagna mess once or twice a year and we have lasagna ready to go any time we want it! I agree with you that I want to prep meals once, package them in the appropriate size for the two of us, and then eat them multiple times. Makes life SO MUCH easier and we are still eating real food-not fast food junk.
As a single person, if I cook it tends to be an omelet. Making full sized meals and freezing portions is awesome.. I have a 14 qt stockpot, and make soup from scratch in big batches. I either freeze them in medium freezer bags (lying flat they stack nicely in the freezer) or if my big freezer has room, I freeze them in quart jars and store them in there. I buy veg in season and power cook soups. Lol. They usually last me all winter.
Great idea! Here’s a tip: after baking, flash freeze the little rolls on a baking sheet. Then place them in bags to freeze. That’s what I do for regular lasagna, but now I’ll give the rolls a try!
Pam funny you put up this recipe! We had this the other night at Denny’s. We liked it so much we decided to make it for meals at home. Another thing: when I used to make lasagna, I bought some of the small loaf pans at the Dollar store, and make it that way. The little pans are enough for two normal servings and I vacuum sealed the pans for the freezer.
That sounds so yummy. I've seen the same idea only they used cooked butternut squash instead of the broccoli. I think I like the idea of having a variety in the freezer.

As a solo person, this is a great idea! There are some recipes that just have to be made family sized and you are so right about being economical with energy usage. Lasagna is one of those dishes. I will have a big cooking day every once in a while. Muffins sweet & savoury, cake, scones, pikelets, stew, and more! Cool, and freeze in serving portions. Main meals and snacks. Now I can add lasagna roll ups too!
@@bethrichardson5998 It’s what we in Australia call a small, sweet pancake. It’s originally a word from Wales. Made from a batter of eggs, milk, sugar, self raising flour, vanilla extract. Spoonful is dropped on a hot flat lightly buttered surface then flipped. Like a pancake. Kept warm in a tea towel. Eat while warm. Spread with butter. Sometimes it’s butter & jam. Or it’s cream and jam like a Devonshire tea.
In England, you would call them crumpets. Easy to make delicious spongy good lots of holes for butter and honey. I make them for my British friend as a treat.
@@debbiebiggs3060 pikelets and crumpets are different. Originally the Welsh name pikelet was for a crumpet but it’s morphed over time. So here in Australia it means a small sweet pancake. It doesn’t have the holes but a smooth golden surface. We have crumpets here too.

My tip is for people who frequently use plastic containers for tomato-based foods. I hate the way a tomato-based sauce stains plastic containers. I've started putting an open zip lock bag in the container, fill it with the food, seal and freeze. To reheat, pop the frozen food into a microwave safe dish. No more stained plastic containers.
I use my stained containers as designated-tomato containers. Whether it's tomato sauce, chili, or soup with tomatoes in it, the food doesn't care about the stains.
Ok, like you I preserve and prepare tons of "red stuff". Here's my secret, after emptying container fill with cold tap water and about 4 drops of soap. Wash😅 as usual and tada!! Never put in hot water!!!
@@Foxysvacation You are so right! I use glass containers in the microwave. My mother's 60+ year-old Corning Ware baking dishes are still useful for baking, and also microwaving. An added benefit is a happy reminder of my childhood when I use them.

Rolling the noodles is a great idea! I've always had to either eat lasagna for a couple days or pack it into the freezer. My little sister suggested I chill it in the fridge and if it was still loose, put it (cut) into the freezer until it was solid enough to wrap individually in plastic wrap then in foil, and put it in the freezer for storage. Been doing that with all the "loose" food ever since. Thanks for sharing the info and advice!

I’ve been living alone for many years, cook in bulk, freeze in single proportions, saves money, time, effort, don’t have the mess. I can have a really good meal in just a few minutes with no effort. I love this recipe and will be trying it soon.

Thanks, Pam and Jim. Way back in high school in Home Ec class in 1982 or 1983 we made these. They were fun to make and a twist on lasagna. Thanks for the reminder.
I NEVER turn on the oven for one thing. I do a big batch cooking afternoon, where there is a casserole, some baked goods, etc., all getting cooked. As far as lasagna goes, yes, I always have some in the freezer, except for right now (August) because I ate the last one during 'bean canning time'. Last year during 'tomato canning time', I had enough sauce, tomatoes, etc., canned, but still plenty of tomatoes, so I made a bunch of lasagna in 8x8 pans. That was well worth it, and I'm doing it again. Another thing I love to freeze is meatballs. I make up around 5-6 pounds of meatballs, put them in the freezer in portions for me, and then can take them out and put them in any kind of sauce.
I used to make roll-ups with lasagna noodles, but with alfredo sauce over them. They were filled with chopped hard boiled eggs, the cheese mix w/parsley like yours, 2 or 3 small spears of asparagus. Then roll, place seam side down, top w/alfredo, sprinkle some chopped hard boiled eggs and mozzarella on top, bake. Had these every Easter morning after church.
I always make a big pan of lasagna too and it's just 2 of us. I cool it down, put in fridge and after few hours I take out of fridge, slice , wrap tightly in clear wrap and into freezer.
I used to make lasagna rolls (and will make them again this fall). I used to roll them and freeze them unbaked. They will flatten a bit, but it doesn't matter. To cook i woukd take some out and pour a combination of a quick white sauce and tomato sauce over them. Baked fresh every time.

I found it very cute the way you’ve done it :) I live alone and I cook a lot! Separating everything in batches. Practical for me and for my 94 yo mom who lives by herself in her condo. Yup! I didn’t see the lasagna roll up recipe either. I haven’t watched all the way through. Maybe I’ll get enough out of the video I’ll be fine. My daughter’s favorite it spinach lasagna. The recipe I have freezes very well. I saw some other suggestions for other vegetables to include. I think that would be fun. I’ll try the recipe on here too. I just don’t eat much pasta. When I do eat it t, it seems that if there s is also meat in the dish it just feels heavy on my stomach. I love it, maybe I eat too much! Lol. There’s so many ways to try making it. I’m going back to the video now to see how you do it. I just wanted to mention that the video is not showing up on your list yet. We love what you do.
I’ve made these before with just cheese filling, then added sauce at serving time. I like your method better! I would also consider popping roll into a muffin pan to freeze so the sauce stays discreetly portioned for single servings later. Thanks for bringing this great idea back into my freezer rotation.
Any meal can b e made ahead and frozen into a home-made freezer meals for an individual. I do this on a regular basis. I make 2-3 of any given meal and freeze it into individual freezer meals. I am a mom of 3 energetic hungry teen aged girls. They prefer their lasagna rolled more than layered as well.
My family is grown and gone so I know live alone, yet I always cooks food in batches so I can put servings in my freezer. Here's a little tip; when I use freezer bags I fold the top down so they stay open better making them easier to fill and food doesn't get in the sealing grooves. It just makes life a litter easier.
I finely chop up broccoli, squash, black olives , artichokes, carrots,mushrooms etc & cook it into my meat sauce. I like it chunky with extra sauce anyway, great way to add vitamins and nutrients. It all tastes like the meat sauce anyway
I made these and they were so good. I added chopped broccoli, zucchini and some fresh spinach. I made 12. I will make them again. Thank you Pam!! And yes laying them down work much better. So good

Wonderful idea. It's just me and my husband these meals are great portioned out. Sometimes I work long days and this is a great way for my husband to put in the oven and it's ready for when I get home.

Kudos for you being able to work with tomato sauce in a white blouse and not get any on you. Your recipe looks amazing. I try to do low carb and I have seen recipes where they do something similar using cabbage leaves instead of pasta noodles.

Hi, Pam & Jim! I can relate to the person who is asking for recipes for one or two. Yes, leftovers can be frozen but a single freezer can fill up fast. Since learning to can, specifically pressure can, I have been canning soups, chili, spaghetti sauce, burrito fillings, etc. I like that I am able to can multiple jars that are the perfect portion for two. It is then easy to grab a jar to heat up and cook the accompanying pasta, rice, or grains, if needed. It is great not to be as dependent on the freezer. We will be getting lots of flooding & wind from hurricane Debby over the next couple days. I have lost a whole fridge and freezer of meats & frozen meals multiple times from past extended power outages from hurricanes. Murphy’s Law - of course this was always after the fridge freezer were packed! I enjoy the recipes that you share & demo. You don’t need to change anything. Viewers can pick and choose which recipes will work for their needs. Thank you again for all that you both do to share this wonderful information! 😊
I love this recipe . I make for a large family . Then freeze it in servings for one . I have several dishes in my freezer an never eat the same thing twice in a row . An I cook once a week . 🌺
I wondered why you didn't lay them down because the cheese will only be on the end, but I figured you wanted to do a lot (for efficiency!).❤ standing them up allows you to fit more in the pan, so it works either way, depending on what you need. You are not losing it, you gave us options! You should just say, "I meant to do that!"

i've been watching a ton of your videos while i make apple pie today. not only does it make lovely background noise, i learn something! it also reminds me of my Great-Grandma; she made amazing meals. i'll have to try these one day.
I'm a party of 1, so when I turn on the stove I'm cooking enough to last a couple, or more, days. If I'm not going to eat it all, it gets frozen. I'll often have a cake or something, a meat & potatoes/veggys in the oven at one time to save energy..
A suggestion for you to reduce the mess. Flash freeze your food before trying to put them in bags. Just put the pan into the freezer for an hour (no lid or other cover), then pull it out. Your food will be partially frozen and will stick together better which makes it far easier to get it into the pan. You can slightly separate the food in the pan first for how you will package it to avoid any problems if you forget to pull it from the freezer at the one hour mark, but this trick really works extremely well. This also works well on limes & lemons which I freeze to put into my drinks later. I just cut them into slices, lay them on a parchment or wax paper lined pan, and freeze them for about an hour. Then I can easily get them vacuum sealed without the juices creating a mess.
I am very happy with the frozen meals series you are doing. I live in a very small community in southern Utah. We were completely cut off from the rest of the world due to a flood in 2005. I had my 18 month old Granddaughter here at the time. ( you don't know when a catastrophe might happen) we didn't have water, electricity, or phones, for days. It is astonishing how long it takes to get very simple things done. For example It took me three buckets of water to flush the toilet once. My husband has some mobility issues, so he could not do those things. We could not flip a switch, turn on the tap, run the dishwasher, and many other things. We were prepared, BUT it was very time-consuming. I have things on my shelf and in my freezer because I have experienced how difficult it is. I might add we do have a way to keep our freezer going when the power goes off.
Our utility company just warned its customers that we should be prepared for blackouts! Good thing I've started taking Pam's advice about preparedness.
Many years ago when we had a young family, I'd make enough lasagna for that meal and two meals in the freezer. Now that we are senior citizens and don't eat as much as we used to, this is a perfect solution. I love your videos. You have a sense of humor even when you make a mistake. It just proved that everyone is not perfect. Thank you for ALL your recipes!
Pam: I usually partially freeze my lasagna before cutting into squares. This helps hold the squares together. Then I freeze them hard and vacuum sealing for later use. They can then be microwaved or placed in a pot of water that is simmering to reheat. I agree with the wasted energy comment. After 56 years of preparing meals, I too could use a break from the kitchen and enjoy any helpful shortcuts for pre-prepared meals. A Dutch oven or a deep casserole dish with a lid might work better. A spritz of vegetable pan spray (Pam no pun intended) will keep the foil from pulling off your cheese. I also use it in the cooking vessel to help make clean-up easier. Your honesty is priceless and I truly enjoy your videos.
We are also empty nesters. I make, bake and freeze my lasagna in disposable small loaf pans-the mini loaf pans would probably be great for single servings. The advantage is not having to preboil the noodles.

For years I would cook meals as if the kids were home and then repackage to smaller meals for the two of us to have later in the week or month. It works out quite well and we know we have healthy meals to eat.
Oh I agree 100%. I used to cook for 7 now it’s 3 but I still batch cook. If I am making meals I don’t want to cook all week so I usually cook one day a week as big batch cooking and making several meals at a time. Then when I cook during the week if I cook I double or triple it so I can put a meal or two back for days I don’t feel like cooking. I just package it in smaller portions than I did when cooking for 7.

I totally agree with you. I always cook with left overs in mind. It is so nice to have them when I put in a day of sewing and am too tired to make a meal. I love to cook like that. I also make up a rub instead of buying ready made. My rub has gotten raving and my family loves getting some…to use themselves.

Oh my goodness... I love lasagna... and my husband loves lasagna. I just don't make it because it is so darned time consuming with all the layers and the for me trying to figure out how to package leftovers. I've seen lasagna roll ups in a few places around the interwebs and thought they seemed like more work. It never occurred to me how much easier they'd be to portion out, so thank you! I'm trying to get more 'tv dinner' type microwaveable meals in the freezer for my Dad for days that I'm away or unwell!
This might be easier just making regular lasagna, cool in fridge and freezing individual portions. As a single person I'm with you as I would rather heat up the kitchen once and do large batches then I have plenty for later. I did see someone who had made pancake batter fill up silicone squares, put fruit on top, freeze, pop them out and put in ziplock bags. When they wanted pancakes the square was put in the skillet.
I got the glass storage containers with the tight lids from Costco and I just store them in the freezer in those. That way I can either oven or microwave in the same dish. If you don’t put the sauce inside the roll up and put it over top in the glass container it works better IMO. Top with cheese and freeze.

I liked your idea of making and freezing lasagna rollups but I tweaked it a bit to fit my two-person home and our tastes. First, I used only half of a noodle and a 1/4 cup filling since we didn't want so much noodle. Then I froze the roll-ups before cooking then put 3 or 4 into a vacuum bag and vacuum sealed them in meal portions for us. Like you we have our own canned sauce to use. I can then defrost a package when we want a meal and cook it in the oven, slow cooker or on the stove. If I am doing anything unhealthy, please let me know. Love your show!! My granddaughters also enjoyed the show, we made baking powder after watching your show explaining it. They liked the science of it.
Actually most I’ve seen and when I make I stand up. I use aluminum loaf pans and put enough for a meal for two. Also the meals for storage I don’t cook, just put in freezer. Try it. You have a fresher taste if you don’t cook before hand.
I bought glass dishes with snap-on lids,I put film wrap on then the lid.Doesn't need to defrosted, 5 to 6 min in microwave, after lid off,poking holes in wrap.If doing in oven,You would probably want to defrost.So freeze,bake,and eat out of same dish.I'm 77 yrs old,and make full dinners and put in freezer.Everything is already cooked,delicious full meals at anytime. Cook it first,meat potatoes, vegetables ect.Bake cakes individually in these dishes,cobblers ect.I love to eat,but being ill alot,I do this all the time,as a single mom of 6,I have done this for a long time. I make grilled cheese,breakfast dishes and alot.
Thank you for teaching us how to rotate our long and short term food storage, by using it in recipes that are not only edible, but enjoyable as well. Food is too expensive to just store away & go bad before we get to it, or not know how to use when we do.
What you are doing is pure common sense. When I make lasagna I make 4 9x13 pans. Then I cut once cooled into meals. Cook once eat 12 times just add side or salad. Good job girl! My only suggestion would be put ingredients in zip locks clip corner and shoot down the middle then roll might work might make a mess?
When I make lasagna, I make the equivalent of 3-4 9x13 pans. I now put it in small containers of 3-4 servings. It is as much work to make and clean up after 1 smallpan pan as several large pans.

Making meal prep meals like the lasagna or casseroles, like you and Jim, it's just my husband and I. I use the tin foil loaf pans whether the regular or small it makes the perfect amount for a meal for us. Been wanting to try the roll up version, it will go on my to do list for this fall to get ready for winter.
I found this technique a year or so ago from another UA-camr. I tried it but it was so time consuming and messy that I haven’t attempted it again. It could be that I’ve gotten lazy in the kitchen 😜😂. I baked mine in a metal loaf pan but as a few other commenters have stated using the aluminum foil pans is a better option. Tales From An Empty Nest (just found her channel a week or 2 ago) posted a meal prep video several months ago in which she made layered lasagna using the foil mini loaf pans. I have the mini loaf and the small meal prep pans so may give the roll-ups another try. I am so jealous of the way you can cook in your nice clothes and not get food all over you!

I usually make 8 x8 pan for Lasagna, I serving that day and 3 for freezer! Also use toaster oven to save heating up the big oven.

Exactly what i do! I am a single person hh so the mini loaf pans actually make 2 meals for me. I am totally ok with lasagna, 2 nights in a row!

There are some recipes that just have to be made family sized and you are so right about being economical with energy usage.
Lasagna is one of those dishes. I will have a big cooking day every once in a while. Muffins sweet & savoury, cake, scones, pikelets, stew, and more! Cool, and freeze in serving portions. Main meals and snacks.
Now I can add lasagna roll ups too!

Made from a batter of eggs, milk, sugar, self raising flour, vanilla extract. Spoonful is dropped on a hot flat lightly buttered surface then flipped. Like a pancake. Kept warm in a tea towel.
Eat while warm. Spread with butter. Sometimes it’s butter & jam. Or it’s cream and jam like a Devonshire tea.
In England, you would call them crumpets. Easy to make delicious spongy good lots of holes for butter and honey. I make them for my British friend as a treat.

Originally the Welsh name pikelet was for a crumpet but it’s morphed over time. So here in Australia it means a small sweet pancake. It doesn’t have the holes but a smooth golden surface. We have crumpets here too.

My tip is for people who frequently use plastic containers for tomato-based foods. I hate the way a tomato-based sauce stains plastic containers. I've started putting an open zip lock bag in the container, fill it with the food, seal and freeze. To reheat, pop the frozen food into a microwave safe dish. No more stained plastic containers.
I use my stained containers as designated-tomato containers. Whether it's tomato sauce, chili, or soup with tomatoes in it, the food doesn't care about the stains.
Ok, like you I preserve and prepare tons of "red stuff". Here's my secret, after emptying container fill with cold tap water and about 4 drops of soap. Wash😅 as usual and tada!! Never put in hot water!!!
I spray/rub my containers with oil before adding the tomato dish. It provides a protective layer and prevents stains.
Take care with microwave plastic - the current data shows it still puts microplastic into the food

I use glass containers in the microwave. My mother's 60+ year-old Corning Ware baking dishes are still useful for baking, and also microwaving. An added benefit is a happy reminder of my childhood when I use them.

Rolling the noodles is a great idea!
I've always had to either eat lasagna for a couple days or pack it into the freezer.
My little sister suggested I chill it in the fridge and if it was still loose, put it (cut) into the freezer until it was solid enough to wrap individually in plastic wrap then in foil, and put it in the freezer for storage. Been doing that with all the "loose" food ever since.

I’ve been living alone for many years, cook in bulk, freeze in single proportions, saves money, time, effort, don’t have the mess. I can have a really good meal in just a few minutes with no effort. I love this recipe and will be trying it soon.
I love your videos. You’re my go to for saving food. I’m one person family. I use all your recipes I just freeze in smaller bags. I pressure cook in pint jars.
I’ve been making my lasagna recipe in bread pans for several years now. The no cook lasagna noodles are just the right size to fit a bread pan. I line each bread pan with plastic wrap, layer sauce, noodles, cheese, and sauce just like I would for a large pan of pizza. I’ve learned not to overfill the pans! When I have them all made-usually four or five of them-I put them in the freezer until they are completely frozen. I then remove the entire plastic-wrapped lasagna and put it in a zipper bag and put them in the freezer. When my husband and I want lasagna, I just take one out of the freezer, immediately unwrap it, and place it into a bread pan to thaw. When thawed, I bake and serve it. One bread pan-sized lasagna is the perfect amount for my husband and I for a meal. I only make the lasagna mess once or twice a year and we have lasagna ready to go any time we want it! I agree with you that I want to prep meals once, package them in the appropriate size for the two of us, and then eat them multiple times. Makes life SO MUCH easier and we are still eating real food-not fast food junk.

I NEVER turn on the oven for one thing. I do a big batch cooking afternoon, where there is a casserole, some baked goods, etc., all getting cooked. As far as lasagna goes, yes, I always have some in the freezer, except for right now (August) because I ate the last one during 'bean canning time'. Last year during 'tomato canning time', I had enough sauce, tomatoes, etc., canned, but still plenty of tomatoes, so I made a bunch of lasagna in 8x8 pans. That was well worth it, and I'm doing it again. Another thing I love to freeze is meatballs. I make up around 5-6 pounds of meatballs, put them in the freezer in portions for me, and then can take them out and put them in any kind of sauce.
I used to make roll-ups with lasagna noodles, but with alfredo sauce over them. They were filled with chopped hard boiled eggs, the cheese mix w/parsley like yours, 2 or 3 small spears of asparagus. Then roll, place seam side down, top w/alfredo, sprinkle some chopped hard boiled eggs and mozzarella on top, bake. Had these every Easter morning after church.

I always make a big pan of lasagna too and it's just 2 of us. I cool it down, put in fridge and after few hours I take out of fridge, slice , wrap tightly in clear wrap and into freezer.
Also, to make more and freeze is what makes sense for me.
I used to make lasagna rolls (and will make them again this fall). I used to roll them and freeze them unbaked. They will flatten a bit, but it doesn't matter. To cook i woukd take some out and pour a combination of a quick white sauce and tomato sauce over them. Baked fresh every time.

I found it very cute the way you’ve done it :) I live alone and I cook a lot! Separating everything in batches. Practical for me and for my 94 yo mom who lives by herself in her condo. Yup! My daughter’s favorite it spinach lasagna. The recipe I have freezes very well. I saw some other suggestions for other vegetables to include. I think that would be fun. I’ll try the recipe on here too.
I just don’t eat much pasta. When I do eat it t, it seems that if there s is also meat in the dish it just feels heavy on my stomach. I love it, maybe I eat too much! Lol.

I’ve made these before with just cheese filling, then added sauce at serving time. I like your method better! I would also consider popping roll into a muffin pan to freeze so the sauce stays discreetly portioned for single servings later. Thanks for bringing this great idea back into my freezer rotation.
I’ve been doing this for years…I cut the noodles in half and just roll up with the cheese then top it with the meat sauce and freeze😊
I totally agree! Make as much as you can in one fell swoop. Then it’s so easy to pull and thaw.
Any meal can b e made ahead and frozen into a home-made freezer meals for an individual. I do this on a regular basis. I make 2-3 of any given meal and freeze it into individual freezer meals. I am a mom of 3 energetic hungry teen aged girls. They prefer their lasagna rolled more than layered as well.
My family is grown and gone so I know live alone, yet I always cooks food in batches so I can put servings in my freezer. Here's a little tip; when I use freezer bags I fold the top down so they stay open better making them easier to fill and food doesn't get in the sealing grooves. It just makes life a litter easier.
I finely chop up broccoli, squash, black olives , artichokes, carrots,mushrooms etc & cook it into my meat sauce. I like it chunky with extra sauce anyway, great way to add vitamins and nutrients. It all tastes like the meat sauce anyway
I use thrive life freeze dried veggies to thicken my tomato sauces!

I made these and they were so good. I added chopped broccoli, zucchini and some fresh spinach. I made 12. I will make them again. Thank you Pam!! And yes laying them down work much better. So good

Kudos for you being able to work with tomato sauce in a white blouse and not get any on you. Your recipe looks amazing. I try to do low carb and I have seen recipes where they do something similar using cabbage leaves instead of pasta noodles.

Hi, Pam & Jim! I can relate to the person who is asking for recipes for one or two. Yes, leftovers can be frozen but a single freezer can fill up fast. Since learning to can, specifically pressure can, I have been canning soups, chili, spaghetti sauce, burrito fillings, etc. I like that I am able to can multiple jars that are the perfect portion for two. It is then easy to grab a jar to heat up and cook the accompanying pasta, rice, or grains, if needed. It is great not to be as dependent on the freezer. We will be getting lots of flooding & wind from hurricane Debby over the next couple days. I have lost a whole fridge and freezer of meats & frozen meals multiple times from past extended power outages from hurricanes. Murphy’s Law - of course this was always after the fridge freezer were packed! I enjoy the recipes that you share & demo. You don’t need to change anything. Viewers can pick and choose which recipes will work for their needs. Thank you again for all that you both do to share this wonderful information! 😊
I love this recipe . I make for a large family . Then freeze it in servings for one . I have several dishes in my freezer an never eat the same thing twice in a row . An I cook once a week . 🌺

I wondered why you didn't lay them down because the cheese will only be on the end, but I figured you wanted to do a lot (for efficiency!).❤ standing them up allows you to fit more in the pan, so it works either way, depending on what you need. You are not losing it, you gave us options! You should just say, "I meant to do that!"

i've been watching a ton of your videos while i make apple pie today. not only does it make lovely background noise, i learn something! it also reminds me of my Great-Grandma; she made amazing meals. i'll have to try these one day.
I'm a party of 1, so when I turn on the stove I'm cooking enough to last a couple, or more, days. If I'm not going to eat it all, it gets frozen. I'll often have a cake or something, a meat & potatoes/veggys in the oven at one time to save energy..
A suggestion for you to reduce the mess. Flash freeze your food before trying to put them in bags. Just put the pan into the freezer for an hour (no lid or other cover), then pull it out. Your food will be partially frozen and will stick together better which makes it far easier to get it into the pan. You can slightly separate the food in the pan first for how you will package it to avoid any problems if you forget to pull it from the freezer at the one hour mark, but this trick really works extremely well.
This also works well on limes & lemons which I freeze to put into my drinks later. I just cut them into slices, lay them on a parchment or wax paper lined pan, and freeze them for about an hour. Then I can easily get them vacuum sealed without the juices creating a mess.
When you started putting the rolls in the pan, my first thought was that I would lay them on the side.

I am very happy with the frozen meals series you are doing. I live in a very small community in southern Utah. We were completely cut off from the rest of the world due to a flood in 2005. I had my 18 month old Granddaughter here at the time. ( you don't know when a catastrophe might happen) we didn't have water, electricity, or phones, for days. It is astonishing how long it takes to get very simple things done. For example It took me three buckets of water to flush the toilet once. My husband has some mobility issues, so he could not do those things. We could not flip a switch, turn on the tap, run the dishwasher, and many other things. We were prepared, BUT it was very time-consuming. I have things on my shelf and in my freezer because I have experienced how difficult it is. I might add we do have a way to keep our freezer going when the power goes off.
Our utility company just warned its customers that we should be prepared for blackouts! Good thing I've started taking Pam's advice about preparedness.
Many years ago when we had a young family, I'd make enough lasagna for that meal and two meals in the freezer. Now that we are senior citizens and don't eat as much as we used to, this is a perfect solution. I love your videos. You have a sense of humor even when you make a mistake. It just proved that everyone is not perfect. Thank you for ALL your recipes!
Pam: I usually partially freeze my lasagna before cutting into squares. This helps hold the squares together. Then I freeze them hard and vacuum sealing for later use. They can then be microwaved or placed in a pot of water that is simmering to reheat. I agree with the wasted energy comment. After 56 years of preparing meals, I too could use a break from the kitchen and enjoy any helpful shortcuts for pre-prepared meals. A Dutch oven or a deep casserole dish with a lid might work better. A spritz of vegetable pan spray (Pam no pun intended) will keep the foil from pulling off your cheese. I also use it in the cooking vessel to help make clean-up easier. Your honesty is priceless and I truly enjoy your videos.
I've made these and also stand them up, they are just fine and I think they look pretty.
I would try freezing the rolls individually before baking
I usually put three laying down in a smaller foil bread pan, put sauce and cheese on top, wrap in foil and freeze before baking.
We are also empty nesters. I make, bake and freeze my lasagna in disposable small loaf pans-the mini loaf pans would probably be great for single servings. The advantage is not having to preboil the noodles.

For years I would cook meals as if the kids were home and then repackage to smaller meals for the two of us to have later in the week or month. It works out quite well and we know we have healthy meals to eat.
Oh I agree 100%. I used to cook for 7 now it’s 3 but I still batch cook. If I am making meals I don’t want to cook all week so I usually cook one day a week as big batch cooking and making several meals at a time. Then when I cook during the week if I cook I double or triple it so I can put a meal or two back for days I don’t feel like cooking. I just package it in smaller portions than I did when cooking for 7.

I totally agree with you. I always cook with left overs in mind. It is so nice to have them when I put in a day of sewing and am too tired to make a meal. I love to cook like that. I also make up a rub instead of buying ready made. My rub has gotten raving and my family loves getting some…to use themselves.

Oh my goodness... I love lasagna... and my husband loves lasagna. I just don't make it because it is so darned time consuming with all the layers and the for me trying to figure out how to package leftovers. I've seen lasagna roll ups in a few places around the interwebs and thought they seemed like more work. It never occurred to me how much easier they'd be to portion out, so thank you! I'm trying to get more 'tv dinner' type microwaveable meals in the freezer for my Dad for days that I'm away or unwell!

I did see someone who had made pancake batter fill up silicone squares, put fruit on top, freeze, pop them out and put in ziplock bags. When they wanted pancakes the square was put in the skillet.
This is how my favorite Italian restaurant makes their lasagna. Covered with a nice, light, tomatoey sauce. Best lasagna I’ve ever eaten.
These were really good and so much more convenient than a whole dish of lasagna. We could package a few at a time too.

I got the glass storage containers with the tight lids from Costco and I just store them in the freezer in those. That way I can either oven or microwave in the same dish. If you don’t put the sauce inside the roll up and put it over top in the glass container it works better IMO. Top with cheese and freeze.

I liked your idea of making and freezing lasagna rollups but I tweaked it a bit to fit my two-person home and our tastes. First, I used only half of a noodle and a 1/4 cup filling since we didn't want so much noodle. Then I froze the roll-ups before cooking then put 3 or 4 into a vacuum bag and vacuum sealed them in meal portions for us. Like you we have our own canned sauce to use. I can then defrost a package when we want a meal and cook it in the oven, slow cooker or on the stove. If I am doing anything unhealthy, please let me know. Love your show!! My granddaughters also enjoyed the show, we made baking powder after watching your show explaining it. They liked the science of it.
Actually most I’ve seen and when I make I stand up. I use aluminum loaf pans and put enough for a meal for two. Also the meals for storage I don’t cook, just put in freezer. Try it. You have a fresher taste if you don’t cook before hand.
I bought glass dishes with snap-on lids,I put film wrap on then the lid.Doesn't need to defrosted, 5 to 6 min in microwave, after lid off,poking holes in wrap.If doing in oven,You would probably want to defrost.So freeze,bake,and eat out of same dish.I'm 77 yrs old,and make full dinners and put in freezer.Everything is already cooked,delicious full meals at anytime. Cook it first,meat potatoes, vegetables ect.Bake cakes individually in these dishes,cobblers ect.I love to eat,but being ill alot,I do this all the time,as a single mom of 6,I have done this for a long time. I make grilled cheese,breakfast dishes and alot.

Thank you for teaching us how to rotate our long and short term food storage, by using it in recipes that are not only edible, but enjoyable as well. Food is too expensive to just store away & go bad before we get to it, or not know how to use when we do.

What you are doing is pure common sense. When I make lasagna I make 4 9x13 pans. Then I cut once cooled into meals. Cook once eat 12 times just add side or salad. Good job girl! My only suggestion would be put ingredients in zip locks clip corner and shoot down the middle then roll might work might make a mess?
My Mom started making those roll ups after us 5 kids moved out. Worked better for her and Dad. She froze them as well. Worked beautifully for them.

When I make lasagna, I make the equivalent of 3-4 9x13 pans. I now put it in small containers of 3-4 servings. It is as much work to make and clean up after 1 smallpan pan as several large pans.

Making meal prep meals like the lasagna or casseroles, like you and Jim, it's just my husband and I. I use the tin foil loaf pans whether the regular or small it makes the perfect amount for a meal for us. Been wanting to try the roll up version, it will go on my to do list for this fall to get ready for winter.
I found this technique a year or so ago from another UA-camr. I tried it but it was so time consuming and messy that I haven’t attempted it again. It could be that I’ve gotten lazy in the kitchen 😜😂. I baked mine in a metal loaf pan but as a few other commenters have stated using the aluminum foil pans is a better option. Tales From An Empty Nest (just found her channel a week or 2 ago) posted a meal prep video several months ago in which she made layered lasagna using the foil mini loaf pans. I have the mini loaf and the small meal prep pans so may give the roll-ups another try. I am so jealous of the way you can cook in your nice clothes and not get food all over you!
