Lasagna Roll Ups - An Easy No Meat Meal - Make or Freeze Ahead for Faster Meals Later!

- Spinach Lasagna Roll Ups
1 package lasagna noodles (about 15 noodles)
15 ounces Ricotta Cheese
4 cups shredded mozzarella
1/2 cup grated Parmesan cheese
2 eggs
16 ounce package fresh spinach
2 (24 ounces) jars marinara sauce
1/4 teaspoon salt
1/4 tablespoon pepper
non-stick spray
Preheat your oven to 400°.  Generously spray a 9“ x 13“ baking dish with nonstick spray. Set aside.
Place the spinach in a large pot of boiling water for one to two minutes until it is wilted and cooked. Drain it thoroughly, squeezing out all of the water.
Place the wilted spinach, ricotta cheese, shredded mozzarella, Parmesan cheese, eggs, and salt & pepper in a large bowl. Stir well to combine. Set aside.
 Using a large pot of boiling water, cook the noodles according to the package directions. (I usually boil five or six at a time.) Lay the cooked noodles out on a clean surface and spread a few tablespoons of the cheese filling over each noodle, spreading it to cover the entire noodle. Roll up each noodle separately.
Place a generous amount of marinara sauce in the bottom of your prepared baking dish. Line up your rolled noodles in the baking dish. Continue filling the noodles, rolling them up, and placing them in the baking dish until all the noodles are used or the baking dish is full.  Pour the remaining marinara sauce over the noodles, covering the noodles completely. Cover the dish and bake for 30 minutes.

One of our favorites! My personal preference is to sauté the baby spinach in a little bit of olive oil & garlic in large nonstick pan. That keeps it from becoming wet and adds a bit of extra flavor.

I think your recipe is perfection as is! I can't wait for my husband and son to make it. I would've never thought of only cooking 5 noodles at a time. Pure genius!! The great thing about your recipes is that they're tried & true. I love that you always mention your children. You must miss them a lot.
When I make this, I add shredded carrots and onions to the spinach and ricotta mixture. I saute them with the spinach. And after I roll the noodles, instead of laying them on their side in the dish, I stand them on their ends. The ruffled edges make a pretty presentation. I also add extra mozzarella cheese on the top before baking. My husband doesn't like for me to make it quite as saucy and I add sweet Italian sausage to the sauce. It's a favorite with extended family at gatherings.
You can also wilt spinach in a warm frying pan without all that water.
I'm making this with the younger nephew and niece this weekend. We will have so much fun. They enjoy cooking projects and wear little chef hats. Thank you for this recipe. 🤗🤗😋😋

Rao’s is a famous NYC restaurant. His name is pronounced, “Ray-oh.” His sauce is an excellent choice. Looks so delicious, Dude! I’m hungry now!
You pronounced RAO’s correctly. Lots of people say RAY-OHs, but that is incorrect. I’ll make these. I love them. Mine have a layer of bechamel sauce on the bottom, but you can’t really taste it so I wouldn’t bother with it. I love these.
Dunking the spinach into cold water before draining would stop it cooking and make it safe to handle when wringing it out.
You could also use canned or (thawed) frozen spinach and skip that cooking step. This may affect your salt levels though.

Tom, you crack me up. You just love to eat every single thing that you make, you act like it was the best thing you ever ate. I think there’s a cooking show on called the best thing I ever ate I have seen this dish made, but it seems like they stood the roll ups up not laid them flat. I am going to try it, but I’m definitely going to put some ground meat or sausage in with it. Where can I go for a piece of that right this second.

I make spinach and ricotta cheese rolls kind of the same thing. I just mix the spinach and ricotta cheese together put some fried Italian sausage the mixture some mozzarella and sauce in a noodle roll it up and fill up a baking dish. Once it’s done I put more sauce and cheese on top with some parmigiana cheese. I make my sauce homemade so all the herds and spices are in that.

I make cheese manicotti using crepes that I make. My cheese mixture is very similar to yours except I haven’t added spinach. I’m going to try this recipe but instead of lasagna noodles, I will stuff my crepes with it.
This recipe sounds delicious and easy to make. I would change one thing: I would add at least 1- 1 1/2 lbs of browned ground beef to the recipe.

We really enjoy spinach lasagna so I made a double batch of these, packed in servings of 2 per pan and fried all but 1. That one we will have for dinner along with fresh broccoli, steamed, and a salad. I enjoy having freezer meals to make my work week a bit simpler. Thank you for sharing.

You should be par cooking your lasagna noodles while you start your filling. Taking some of that pasta water and putting it into your ricotta mixture helps to loosen the mixture. Taking the noodles off the stove and draining them in a colander and running cool water over them to stop the cooking process. This ensures that your noodles will not be overcooked when they go into the oven to finish cooking. Lasagna noodles and ricotta mixture are ready to go at the same time. ❤
Was copying the recipe for my recipe box, and noticed it said "1/4 TBSP of pepper", but in the video you used 1/4 tsp of pepper...........just wanted to clarify 😊. Thanks for all your great videos/recipes!

interesting. may i suggest you beat up your eggs before adding. also. please boil your noodles in the spinach water. will flavor and vitamins back into noodles.

I have super picky eaters here, and they won't eat spinach unless it's one of g'ma's powders. I wonder if it would be as good if I added the powder. Then, to add the bulk, the spinach would have provided add some sausage. These boys will almost starve instead of eating if they don't see meat in a dish, lol. I love them, but they are definitely meat eaters, and the youngest won't even eat potatoes unless they are chips or fries! Too say getting nutrients in them is a real challenge is an under statement.! I started dehydrating and powdering all kinds of veggies, then mixing the powders together, so it's a rounded conglomeration. We had Dr Seuss week a little while back with green eggs and ham. I mice the green powder in the scrambled eggs and in the white sauce I made for the ham. The boys helped and ate every bite, and it really was green with no food coloring involved.
I just recently found your channel, and I've really enjoyed watching several of your shows. Thank you for your easy to follow instructions and being able to get the recipe right under the video without having to click this link, then that one makes it sooooo much easier. I can do scrolling screen shots all day, but the back and forth on different links gets monotonous.

@@bowed305 No I personally don't like the stems on spinach, as for too drawn out all I mean is for the video, the same goes for watching him spread the cheese mix on every noodle, love their videos but sometimes they're too drawn out
@@malcolmhay722I watch almost all of their videos on 2X playback speed, and that resolves any issues like that. Also, if there's ever a part I don't want to see in a video, then I just slide that bar forward over it.

@@darb64 Sautéed shallot in EVOO, red pepper if you want it spicy, add in a few tablespoons of tomato paste and let it bubble, then a splash of vodka, simmer, then pumpkin, then cream

A must try for our family. We all love my homemade lasagna so this will be a good option. I do have a couple meat lovers. So I may have to add a little bit of cooked ground beef to part of the filling for maybe half of the rollups.

A new way to make lasagna! Going to try this. 😋 Sautéing the spinach in evoo is much easier and faster. The water in the spinach evaporates in the process. Also, finely diced and sautéed crimini mushrooms can mimic meat.
