    Sweet Potato Noods & Sun-choke Sauce
    Quick easy vegan dinner!
    1# sweet potato ( about 2-3 )
    1-2 cups flour*
    3 tbsp olive oil
    1/2 onion sm diced
    5-6 cloves garlic diced
    5-6 Sun-choke peeled
    Broccoli Rabe blanched garnish - optional
    Peel and chop sweet potatoes. Then steam them with the @cookanyday or on the stovetop. ( Trust once you get @cookanyday you will enjoy! Highly recommended!)
    Cool and mash the potatoes. Add to a mixing bowl and then pour in 1 cup of flour at a time. Work flour into the sweet potato until a dough ball forms that is not sticky or wet. Add as much flour until you get there.
    Knead the dough ball for about 3-5 minutes to develop a nice chew for the noodles. Divide the dough into 4 pieces, and roll each section out almost paper thin. (They will expand when cooking. ) Using a knife or pizza cutter cut the Noods into strips. Toss cut noods with flour and set aside. Bring 4qt of salted water to a boil and cook the noodles for about 3 -4 minutes.
    Peel and slice the sun chokes. Boil until tender then place in a blender. Sweat the onions and garlic with 1 - 2 tbsp olive oil. Once translucent and fragrant add to the blender. Season with salt and pepper as needed. Combine remaining oil and enough water until creamy.
    Toss sauce with the hot noods, and add a little sauce to the top for finishing. Sprinkle crushed red pepper and the broccoli rabe on top. Serve hot and as always, please enjoy.
