  • I think the Clever Dripper makes a really good cup of coffee. Side-by-side comparison of a brewer, a standard pour over, and the Clever Dripper. In this video I will show you how to make a better cup using a coffee brewer. I will also show you how to make larger quantities of coffee using a standard Clever Dripper.

    I have used my Clever Dripper for 10 years, keep a spare if I have a guest, given one as a gift and have one to assigned to my camper minivan. Loved regaining space left by the coffee pot. The grinder and bean canister are more important. The only thing I missed, since I too have a special 20 oz mug, is not being able to fill it up! I was really tracking your instructions and love the precise methodology of your reviews.🧐

    Thanks for going through the process and measuring TDS. It makes sense that if you control all of the variables you’ll generally get very similar results. Personally, I’ve found the most interesting thing to be grind profile. Burr profile makes a substantial difference, even when particle size distribution looks similar when graphed.

      Absolutely! Yesterday I brewed a Brazilian that I roasted and I use a just slightly finer grind size than today and the difference was dramatic. Absolutely right! All the best and thanks for reaching out.

    Best of appreciation! I been sooo wondering about the clever dripper. Now I do have to purchase a cpl (so I can make a bigger batch in my large cup). However I do also wonder (reading other persons response) if pouring water first then adding the coffee will make thee difference. Dunno but sure am going to give each clever dropper purchased a test of my own. Thanks again sir and have a great day

    I have an very inexpensive Krups drip coffee maker. After watching some videos, I tried the 'removing the carafe' during the initial bloom. After about 1 minute, I stir the coffee a bit in the basket, re-insert the carafe and the coffee it MUCH better tasting. So basically, if you have a drip coffee maker, you can use it to make good coffee with a bit of 'fiddling'. Thanks for a good video!

    @AwareHouseChef : Could you provide some clarification for the method you used with the Breville brewer to simulate the Clever dripped. I was confused as you stated that you placed the carafe back in place just prior to the bloom being completed. You mentioned that you had the bloom phase programmed for 1 minute. By placing the carafe back in place, wouldn’t the valve stay open and the coffee start draining into the carafe immediately after the 1 minute bloom? If so, this isn’t really simulating your brew method used for the Clever dripper, or am I misunderstanding something?
    If the Breville brewer would start releasing coffee into the carafe immediately after the bloom, could you just take the bloom phase out of the programming and then would the valve stay closed until the time you want to release the coffee by placing the carafe in place?

    • @AwareHouseChef
      @AwareHouseChef  Рік тому +2

      No you got it right. Because the Breville opened the valve it really doesn’t fully simulate the clever dripper entirely. However, if you keep the carafe under the brew basket from the start, the water will drain out right away. I am basically trying to simulate the clever dripper for as long as I can without it draining into the carafe.
      I did not try to do it without a bloom so I am going to do that tomorrow morning and let you know what happens. Thank you so much for the idea!

    • @AwareHouseChef
      @AwareHouseChef  11 місяців тому +2

      So I just tried it. Even without the Bloom in the cycle it releases the lever unfortunately. So you really can’t simulate it entirely. But if you do put the canister under the brew basket after the bloom cycle is over or just before it is over, it really does make a better cup of coffee than if you would’ve left it under there the whole time. All the best!

      @@AwareHouseChef Thank you for the update. Sounds like with just the 1 minute immersion time that it provides a better extraction and overall better tasting cup. I use my French Press most of the time by adding a little water, then the grounds, then the rest of the water. After about three minutes I pour the coffee into a carafe. Do you have any information on how that would compare? I'll be doing that until I can swing a Brevel. When we travel I always have my French Press. It's very convenient to use hot water at a gas station and preground coffee I bring with. Hey, can you do a video on portable coffee grinders? I've been researching them for the past two years and still can't make a decision. It took me ten years to finally purchase the Norwalk juicer; it has been worth every penny going on 14 years now. All to say, I prefer to pay once for an item of quality than to be nickeled and dimed over the decades with inferior products, never mind the time in acquiring another whatever that has failed.

    • @AwareHouseChef
      @AwareHouseChef  Рік тому +1

      I know when you use a French press it’s best not to push the plunger down all the way just a couple of inches. Supposedly that makes a far better cup of coffee.

      The little bit of water that stays at the bottom of the Clever gives me weaker watery tasting coffee compared. So I have to dose up a few more grams when using Clever. I promise if you get it you won’t ever go back to Clever.

      Hi. Does the Switch not keep water at the bottom? I can't tell since the bottom isn't clear. It seems like any brewer similar to these would hold some water outside the filter since the filter isn't flat against all sides of the brewer as it's sitting.@@VinegarAndSaltedFries

      @TheLeanPocketMuncher the valve at the bottom when it is pressed up against the cup releases, all of the water. If I think I’m understanding you correctly.

    • @VinegarAndSaltedFries

      @@TheLeanPocketMuncher it has a small ball that when the switch is in it’s upward position blocks any flow so you can use it as a regular V60 or use it as an immersion brewer or like I do a little of both. You can start the brew like a V60 to add some acidity and then at 45seconds to a minute close and pour the rest of the water and wait 2 minutes.

    Do we really have to soak nuts? I heard about their anti-nutrient/phytate qualities. But I never soak the nuts because they get soggy and tasteless. Please shed some light on this topic. Thank you very much.

    • @AwareHouseChef
      @AwareHouseChef  11 місяців тому

      Coffee beans? No. Sprouting beans will eliminate phytates. If the nuts do not sprout I do not believe soaking them will eliminate the phytates. The sprouting process converts phytic acid to protein from what I understand.

    just take off the top of the carafe and then you can leave it under and hit bloom. When it automatically opens, the carafe is already there, but not pushing up because you removed the mound thing.

    You're free to like what you like, but all 3 brewers produced weaker, less extracted coffee than is typical for your brew ratio, whether with the Clever or drip/pour over. For what it's worth you can use the Clever either way, but a 3 and a half minute steep will always produce a low extraction with the Clever (but you can dial in drip to do the same).

    • @AwareHouseChef

      @@AwareHouseChef Personally, I like lighter roasts and I generally brew about 65-69g/L for 1.4-1.6% TDS, but I'm not saying that's right/better, more that it just seems that maybe your grind is a little coarse based on the strength you are getting at your ratio (for 8.5:150g, I'd expect 1.16 to 1.36%TDS?). For drip/pour over I focus on the pour timings, not the total brew time, because different coffees brew at different speeds. For (small) Clever steep I do 2 small blooms - For the big Clever try 60g of water at 0:00 & 0:45s, then at 1:30 add remaining water & steep for 5-6min?

    Way too much fiddling for a cup of coffee! This isn't brain surgery. It's a cup of coffee. It's not life changing. I like using a Moka Pot. Almost no labor. Add fresh ground coffee and water. Turn on the burner. Abra cadabra we have coffee! I've used a drip coffee maker, a french press, an Aeropress, and a Yama Pot. FOR ME, the Yama Pot makes the best coffee and it's fun to watch. But the cleanup is a b**ch. Overall, considering setup, brewing labor, and cleanup, the Moka wins FOR ME. Thanks for this video, but the pour over technique with or without a Cleaver Dripper isn't for me.
