Are Expensive Coffee Brewers Worth It?

  • This is an extensive review of three of the most popular coffee brewers on the market, but how do the compare to an inexpensive machine? I put these through their paces so that you can decide whether to stick with your reliable Cuisinart or upgrade to The Moccamaster, Breville, or Zwilling SCA certified brewers.
Here is my custom brew settings on the Breville:
    For City Roasts:
    Bloom Time: 1 min
    Water Temp: 196°F/91°C
    Flow Rate: SLOW
    Pour Over: OFF
For City + and Darker Roasts :
    Bloom Time: 45 sec
    Water Temp: 196°F/91°C
    Flow Rate: Medium
    Pour Over: OFF
Removing the carafe before the screen reads bloom and placing it back once bloom is over makes for a milder more flavorful cup of coffee. Just don't wait too long because the cone shaped filter can only handle 500ml of water or a little over three cups before spilling over.

I’ve had my Technivorm for I don’t even know how many years. I got used to the workflow. About filling the basket with grounds: there’s a cut out in the reservoir lid that allows you to push the brew wand to the side, which makes pouring the grinds into the basket as a last step easy. Thankfully mine can sit in a space in my kitchen where I don’t have to pull it out to fill with water.

I've used my Technivorm for over 10 years. Daily. Home roasting for over 15 years. Leave the brew lid off the brew basket. My model allows me to bloom the roast. I turn it on, let it bloom, give it a stir, then let it drip. May or may not stir again. Usually not. I brew 8-10 cups daily. I love the simplicity of the Technivorm. An automated pour over.

Nice! I never thought about stirring. My Moccamaster has been in service for over 15 years. They are definitely worth the money in terms of servicability and consistency. It sure makes a damn good cup of coffee!

I’ve used a number of brewers but have settled on the TechniVorm Moccamaster for my morning cup and the Bonavita when needing more than 4 cups. I use the 8 “cup” version of the Moccamaster with the adjustable flow rate basket half open. This gives proper extraction time and the correct percentage of TDS for light to fully city roasts.
Taste wise, this has consistently brewed the best cup out of the 6-7 brewers I’ve tried. Key to a good cup is great water, correctly, freshly roasted beans, and often overlooked, correct grind size with little fines or boulders.
You’d be astounded how much simply changing burrs will effect the taste.

    • @AwareHouseChef
      @AwareHouseChef  Рік тому +4

Believe me, I am not. I just changed my burrs and instantly noticed a difference. I want to swap out the motor on my grinder with a variable speed as I have heard that slower motors make sweeter brews. Thank you for sharing!

I immediately drink the coffee I brew and do not like metal carafes. So ease of use for the Moccamaster is just that, easy. I am not the type of person who drinks a couple of pots of coffee a day , I have one tall mug, ( line 4 on the Moccamaster carafe ) so I do not have a carafe sitting on a hot plate. Regarding cheaper coffee makers including Cuisinart, they genearlly last a couple of years for me, with a variety of problems. This includes the popular german coffee machines as well. Thanks for making the video, I really enjoyed it!

Another awesome video. I have the Breville brewer at my house and the Cuisinart at my office. The Breville is a fantastic brewer and has excellent features. Mine also has the Pour Over Adapter, a nice add-on, but it would have been nice if they also included a Pour Over Coffee Cone. Also, when cleaning the Breville, it is good to remove the silicone spray head and clean that too. I'm really looking forward to many more videos.

Try using 5 tablespoons of baking soda mixed with a half cup of Hydrogen Peroxide in your carafe. Close the carafe with the screw on cap, then shake it vigorously for a minute or less and leave it overnight. Then open the lid, shake it for a momnet and then rinse with water. The Carafe should be shiny clean inside. This also works well with stainless steel Thermoses.

I usually brew an Aeropress or V60 for a single cup of coffee. When I’m lazy or wanna brew more cups, I use my KBTS. It’s small enough to not be obnoxious on my counter while still brewing a large enough amount. I like the manual brew basket that eliminates some of the annoyances you had with the automatic brew basket.
I use a Wyze smart plug when I want to setup my brew at night and have fresh coffee in the morning. I just setup the brewer and turn the switch on. The Wyze plug will turn on after the timer finishes.

Hey, if you're trying to get into specialty coffee, roasting uour own beans is the last thing you should look into. Roasting is its own hobby as you'll never really roast better coffee than actual roasters, even with the most expensive home equipment.
I'd focus on getting a great grinder and on perfecting your brewing technique. You absolutely need a great grinder as coffee needs to be ground fresh and can't be gotten preground.

Thanks for the honest and great in-depth review. I'm about to switch back from my bean-to-cup to a regular drip coffee maker for my morning coffee (I just don't really like "regular" black coffee from a bean-to-cup machine, no matter the beans).
Seems like the Zwilling might be a good choice. Any chance you have tested it with smaller amounts than 4 cups (I only need 2 in the morning)?
My other alternative would be a wilfa machine that lets me manually adjust the flow rate in the brewing basket for smaller amounts of coffee, but I somehow like the Zwilling more.

There are many "Expired" SCA certified models. The manufacturers let their cert expire after 3 years, rather than paying SCA another $5000 per model to "stay on the list".
So there are LOTS of great coffee makers out there, other than "current SCA list". Like a Ninja or Bunn or Zojirushi for $70. Bonavita makes a great machine too.
Also, Zojirushi (Japanese) makes top notch gear and brewers for only $70 -150.

Thanks for the informative video. Have you tried a gold filter vs. paper? Sounds like may result in deeper richer flavor, maybe not good for city roast style though. A prior brewer we had would result in bitter brew, adding a small pinch of salt before brewing to the grounds or carafe helped reduce bitterness. Tried Bunn as well, one that kept the water hot all day so would brew really fast, machine didn't last and was an electricity hog. Currently have a Calphalon, the design makes it a little difficult to use but tastes decent.

    • @AwareHouseChef
      @AwareHouseChef  Рік тому +1

So my biggest problem with the gold filter is that the sediments that are so fine are in the cup and it makes for a very concentrated cup. I find that to be the case for light and darker roasts. I prefer not to use those filters. Thank you for letting me know what you use. I appreciate you reaching out all the best!

REALLY well made video! Nice work. I’m commenting only 10 minutes in but it’s because I’ve been dialing in our Technivorm Moccamaster. I have been drinking Chemex and Hario V60 coffee for 20 years. My wife has always loved the Moccamaster her and her roommate from college had but I never got a good cup out of it. A couple things i’ve noticed about this particular brewer that are different from my brewing style are that it starts at 195°F, hangs around 200°F and then ends around 205°F. When I do a pour over, I brew exactly the opposite; hot bloom and let the kettle cool naturally. I’ve also found that medium roasts do much better in the Mochamaster. It doesn’t get hot enough for light roasts and is much too hot for dark roasts even when adjust grind size to account for excessive extraction. I’ve also found that grinding a little courser than what the manufacturer recommends does better in the final cup.

I buy roasted beans at the grocery store and grind them at the store in batches. I boil the water in a pot on the stove, then let it cool for 30 seconds (for temperature control). KISS. Surprisingly, I have found that not all paper filters flow at the same rate. Melitta kraft paper filters flow far faster than other brands. I prefer them for this reason.

I think you made the Moccamaster more complicated than needed. You don’t need to swap the lids on the carafe unless you are traveling. I purchased a Breville Smart Grind Machine almost a year ago from Amazon. It has been inconsistent at its best. It produces a great cup of coffee but the problem is that 9 times out of 10 it fails to produce the correct amount of coffee (8oz, 10 oz or 12) unless the tank is full. I can use either whole bean or ground coffee with this machine but once again the machine fails to live up to its reputation. When switching brands of coffee I have noticed that for some reason or another this machine will go thru beans like a hot knife slicing thru butter and find myself going thru an entire bag of coffee beans in not time at all. Classic example of a machine being over engineered. I have sent one machine back for replacement and am on the verge of sending the second unit back.

The way you handle the Technivorm Moccamaster reminds me of he way OJ Simpson puts on a leather glove caked with dried blood. I have had mine for 13 years. In fact, the first time I ever heard of it I went to Williams-Sonoma and paid retail for it without hesitation. It’s one of those things that every day I think what a great investment it was. For years, I have known that the minute it gives problems I will go buy another one as close to identical as possible. I have never even replaced any of the plastic parts. I just descale it with Descal when I notice the slightest slowdown in brew time. I long ago removed the plastic slider for the thermal carafe and taped the carafe sensor switch closed. I brew directly into a Yeti insulated stainless tumbler which accommodates the funnel perfectly. So I am really brewing the equivalent of 4.25 cups which I consume. Also, I bring water to a boil and preheat my thermal tumbler and let it stand while I set it up. Also, I use Chemex filters which I had to order online for years, but Whole Foods intermittently stocks them. Finally, I filter my Houston, TX tap water through a Pur pitcher filter which removes a lot of minerals and that “bottom of the lake decaying leaves” taste (because our water comes from Lake Houston which is a big reservoir which is supplied by the San Jacinto River. I’ve been doing it this way so long I would change anything. Knowing that things manufactured in the Netherlands are done by people being paid a living wage and favorable working conditions using quality materials (copper heat exchanger) gives me satisfaction. Plastic parts are light weight and when manipulated harshly by a grown man will rattle. Mine have been used daily and through aggressive dishwashing cycles most days also, so the plastic parts certainly contain good plastic. I doubt any of the parts of the other machines could endure so many uses without failure.

For me there is no comparison to the coffee that the Breville produces. Could it be that I received a bad machine? Maybe. I do know one thing: water temperature makes a difference. A better budget set up is a manual pour over system. This is what I use.
If you watch the coffee geek channels, you'll think pour overs are an arcane art, with weird precise pour amounts and timing. If you have a coffee expert's palate, you can get deep into the weeds, but you don't have to. A simple Melitta cone, a coffee scoop, and a more or less accurate water amount will produce good, if not amazing coffee. You can even get away with a cheap blade grinder, or fresh store-ground coffee.
This is how I made coffee for years, and it was good. I only got geeky in 2020 - and I'm still nowhere near the pros. I weigh my beans, use a modest burr grinder (Baratza Encore) a temperature controlled kettle, and weigh my water. I bloom for 30-60 seconds, then pour the rest of the water, no fuss. With this setup I make better coffee at home than most cafes, even the fancy ones.
I urge anyone looking for a better cup than their current machine makes to try pour over. A Melitta cone is not expensive; if it doesn't work for you you're not out much money. My entire setup, without the electric kettle and grinder, cost less than $30. [Aeropress is also good, but it's a different style of coffee.]
George, please *do not* enter me in the contest. I have no interest in any drip machines.

It does not have a drip lock, so there is a lot water over coffee when water tank is empty. Moving machine parts was annoying. I stopped use the filter cover. If You have problems with Moccamaster, then do not use water tank cover when using it, use cover when not use it. Turn the "water pipe" aside, put the filter in place and coffee, turn the "water pipe" over the coffee. When the coffee is ready, use a spoon when you turn the "water pipe" because it's hot.

I'm the only person in my house who drinks coffee. So my favorite Brewer is just making a v60 pour over, or using the Clever Dripper if I'm traveling and don't know what kind of kettle I'll have. And I have to add, having a nice grinder could be as much of a game changer for most people as having a nice coffee machine.

I don't know about America but here where I live in Algeria North Africa you can go to your convenient store and buy freshly roasted coffee and from there you go to the bakery and get you some fresh baked goods

Here, unfortunately it is difficult to get that level of freshness and if it is available in urban areas it is at a high cost. Thank you for sharing. All the best.

Love this analysis, but as a Mocha Master user for over 12 years I think the awkwardness of it is a little over blown. I do agree though that it can be a PITA sometimes and I wouldn't put up with it if the coffee were not so awesome.

This was really informative but I'm still not sure which brewer is right for me. The prices seem to be a bit much. I might have to resort to pour over. When my old Krups Moka Brew died in 2019 (loved that thing) I bought a Bonavita '5' cup but it holds only 29 ounces - so 6oz cups. It was $58 at the time and now is $150! Makes a tasty cup with Vienna-ish roasted beans but doesn't make enough coffee. The worst thermal carafe ever - the liquid doesn't all come out and it just doesn't keep the coffee hot. I boil water to heat it prior to brewing. The larger 8 cup model is $180, no thanks.
I loved Sweet Maria's for green beans. Sadly, I no longer have proper ventilation for regular roasting. This has me thinking of getting the roaster out for summer deck roasts. Thanks!

@ivyjules no bit Smeg is available here. I felt it to be a little bit like a gimmick. I’ll take a look. The Breville doll has temperature control so you can get it hotter, but that may make the coffee taste worse depending on the bean

Absolutely 💯. Really hard water makes the coffee taste terrible and no minerals kills it as well.

I have the Breville. Love the coffee, but the one thing I HATE about the machine is the lid to the carafe. You can’t get inside to clean it and coffee passes into the lid. It is impossible to thoroughly clean inside the lid where the coffee goes in. You can only force water through it. It also retains water/coffee inside that lid. Also, I had to replace it after a year because the spring mechanism broke and it seems like after six months, my replacement is getting loser, so we’ll see if it lasts.

    • @AwareHouseChef
      @AwareHouseChef  4 місяці тому +1

Yes. Add hot water and soap to the carafe and pass it through. Best I can do. I think they sell another different carafe.

@@AwareHouseChef I use the Dawn spray dish detergent and I spray the filter basket and fill it with hot water, then spray inside all the opening of the lid and drop it into the filter basket with water. I let it sit for 1-2 minutes then rinse it for about a minute. Not much else can be done. 🤷‍♀️
